MY "BASE FOR EVERYTHING" ZIPPY MARINARA SAUCE

I use this sauce for lasagne, manicotti, eggplant parmesan, and plain ole spaghetti and meatballs. In other words, it lends itself to all those dishes yet stands up well on its own. Recipe can easily be halved (which is usually enough for one large pan of the above) but also freezes nicely. Can be pureed with a hand blender if you so choose, but I like it a bit chunky. Peperoncino piccante concentrate is a blend of hot red peppers and olive oil, available at Italian groceries. If not locally available, substitute 1 tsp red pepper flakes. With these amounts, this is a rather spicy sauce . . . so adjust as necessary to your tastes !

2/3 cup extra virgin olive oil (use the good stuff)
2 onions, minced
4 cloves garlic, minced
6 (14 ounce) cans diced Italian tomatoes, with juices ((imported))
1 1/2 tablespoons dried oregano
2 tablespoons dried basil
1/8 teaspoon sugar
1 1/2 teaspoons concentrated peperoncino picante sauce (OR 1 tsp red pepper flakes, to taste)
salt and pepper

Steps:

  • Heat the olive oil in a large pot over medium heat.
  • Add the onions and cook for five minutes or until they become translucent.
  • Add the garlic (and the red pepper flakes, if using) and cook for one minute.
  • Add the canned tomatoes and stir well.
  • Add the oregano, basil, sugar, peperoncino (if using), salt and pepper.
  • Make sure you crumble the dried spices in your hand when you add them to release the essential oils.
  • Stir well again.
  • Bring to a simmer and cook, uncovered, for one hour.
  • Sauce will cook down a bit and thicken.

For those of us who don't like sauces laden with tomato chunks (much as I like tomato-based foods, tomato chunks just gross me out!) and also happen to be way too lazy to peel and cut tomatoes (that's what cans are for.) For some variation ideas try replacing one of the cans of tomato sauce with tomato paste if you like it thicker. Like it really spicy? Replace one plain can with one can of pre-seasoned tomato sauce. Yummy dipping sauce for mozzarella sticks, serve 1/4 cup in a ramekin. Recommended dishes to have with this sauce: Recipe #394477, Recipe #30977, and Recipe #91274 if making pretzel cheese logs!

2 (8 ounce) cans tomato sauce
1 1/2 teaspoons olive oil
3/4 teaspoon basil
3/4 teaspoon oregano
1 teaspoon onion powder
1 garlic clove, minced (1/2 tsp liquid garlic)
1 tablespoon sugar
1/4 teaspoon salt
1 dash white pepper

Steps:

  • Blend all the ingredients together in a food processor or blender.
  • To gently heat, pour 1/4 cup (or the desired amount) into a microwave-safe ramekin or container, and put a paper plate over it so tomato splats won't get all over the microwave. Nuke for 30 seconds on 50% power. You may have to adjust up or downward depending on microwave strength.

We love shrimp, we love pasta . . . this recipe combines the best of both! While these are perfectly delicious reheated the next day, I would advise baking any leftovers only when needed as the pasta does tend to soften after reheating, making removal from the baking dish (and therefore a pretty presentation) more difficult. Preparation time does not include time to make the marinara sauce or the home-made manicotti.

1/2 tablespoon olive oil
1 lb raw shrimp, peeled and cut into thirds
1 garlic clove, finely minced
1/8 cup fresh parsley, chopped
fresh ground black pepper
8 ounces mozzarella cheese (fresh or otherwise, but NOT grated)
2 cups marinara sauce (I use my My "base for Everything" Zippy Marinara Sauce)
9 fresh manicotti crepes (I use my Fresh-Made Manicotti or Cannelloni Crepes Shells)

Steps:

  • Pre-heat oven to 400°F.
  • Heat the oil in a non-stick frying pan over medium heat (TIP: you can probably use the same pan as you made your manicotti in if you followed my recipe).
  • Add the shrimp pieces and the garlic, and cook quickly, stirring, until the shrimp just turns pick; remove from heat.
  • Stir in the parsley and season to taste with pepper; set aside.
  • Divide the mozzarella in half; cut one of the halves in nine equally-sized strips and cut the other half in small cubes.
  • Using a small amount of the marinara sauce, coat the bottom of as many oven-proof baking dishes as needed--manicotti expand during cooking, so don't overcrowd and also bear in mind whether you'll be eating them all at one meal or will have leftovers (see comment in description about re-heating).
  • Divide the shrimp mixture equally between the 9 manicotti shells, placing it in a vertical strip on each.
  • Lay one strip of mozzarella on each over the shrimp mixture.
  • With the vertical strip facing you, bring the left and right sides of the crepe towards the center, folding one over the other and using your hands to make a nice compact tube.
  • Place seam-side down in your baking dish and repeat with remaining.
  • Top manicottis with the marinara sauce and sprinkle mozzarella cubes over all.
  • Bake for 25-35 minutes, or until the cheese has melted and the marinara is bubbly.
  • Allow to rest 5 minutes before serving.
