CRACKED PEPPERCORN MARINATED STEAKS



Cracked Peppercorn Marinated Steaks image

This robust marinade produces a wonderfully complex flavor for steak that's sure to have everyone clamoring for more!

1 package McCormick® Grill Mates® Peppercorn & Garlic Marinade
1/4 cup red wine
1/4 cup olive oil
2 tsps French's® Dijon Mustard
2 pounds New York strip, rib-eye or sirloin steaks (about 1-inch thick)

Steps:

  • Mix Marinade Mix, wine, oil and mustard in small bowl. Place steaks in large resealable plastic bag or glass dish. Add marinade; turn to coat well.
  • Refrigerate 15 minutes or longer for extra flavor. Remove steaks from marinade. Discard and remaining marinade.
  • Grill over medium-high heat 6 to 8 minutes per side or until desired doneness.

Steps:

  • Combine all ingredients.
  • Use to brush on chicken while grilling, to marinate chicken in refrigerator 2 to 8 hours before grilling, or to marinate pork tenderloin in refrigerator 8 hours before grilling.

Pork Tenderloin with Mustard-Peppercorn Crust image

This recipe, which comes from Canadian Living magazine, is very easy to prepare and is ready in under an hour. Serve with rice pilaf.

3/4 lb pork tenderloin, trimmed
1 tablespoon Dijon mustard
1/2 teaspoon dried thyme
2 teaspoons crushed black peppercorns

Steps:

  • Pat the tenderloin dry.
  • Mix together the mustard and thyme; spread all over the tenderloin.
  • Sprinkle all over with the peppercorns.
  • Place on a rack in a roasting pan and roast in a 400 degree F oven for 30 to 40 minutes or until a meat thermometer inserted into the thickest part registers 160-170 degrees F and juices run clear.
  • To serve, cut into 3/4-inch thick slices.

2 garlic cloves, finely chopped
1 tablespoon onion, finely chopped
2 tablespoons balsamic vinegar
1 tablespoon vegetable oil
1 tablespoon white vinegar
1 tablespoon dark brown sugar
1/2 teaspoon kosher salt
1 1/2 teaspoons fresh coarse ground black pepper

Steps:

  • Mix all ingredients except the pepper in a blender or food processor.
  • Add pepper and stir do not blend.
  • Pour into a ziploc bag or glass dish for marinating.
  • Do not make ahead. Make fresh as you need it. Meat is ready to grill in 20 minutes.
  • Enough for 4-6 breasts or chops, 1-2 steaks.

  • Blend in mustard, stir in wine and oil.
