1 well-trimmed 6-pound boneless leg of lamb, butterflied to even 2-inch thickness
8 garlic cloves, peeled, divided
1/2 cup whole grain Dijon mustard
1/2 cup extra-virgin olive oil
1/4 cup dry white wine
2 tablespoons finely chopped fresh rosemary
2 tablespoons fresh lemon juice
Nonstick vegetable oil spray
Fresh rosemary sprigs and fresh Italian parsley sprigs

Steps:

  • Open lamb like book on work surface. Using tip of small knife, make 1/2-inch-deep slits all over lamb. Thinly slice 4 garlic cloves. Insert garlic slices into slits in lamb. Combine remaining 4 garlic cloves, mustard, olive oil, white wine, rosemary, and lemon juice in processor. Blend until coarse puree forms. Spread underside of lamb with half of puree. Place lamb, seasoned side down, in 15 x 10 x 2-inch glass baking dish. Spread remaining puree over top of lamb. Cover lamb with plastic wrap and chill overnight.
  • Let lamb stand at room temperature 2 hours. Coat grill rack with nonstick spray and prepare barbecue (medium-high heat). Sprinkle lamb generously with salt and pepper on both sides. Grill lamb to desired doneness, about 17 minutes per side for medium-rare. Transfer lamb to cutting board; let rest 10 to 20 minutes.
  • Thinly slice lamb against grain. Overlap slices on platter. Sprinkle with salt and pepper. Garnish with fresh herb sprigs.
  • What to drink:
  • Syrah would be delicious with the grilled lamb. Mix things up by skipping California and Australian Syrahs and going with an Italian Syrah instead. One to try: the velvety, full-bodied 2006 Villa Pillo Syrah Toscana ($16, Italy).

1 Leg of lamb (about 1.2 kg / 3 lb)
4 Tbsps olive oil
4 sprigs rosemary
8 cloves garlic cloves (peeled and thickly sliced)
2 Tbsps Dijon mustard
2 Tbsps clear honey
rosemary (to garnish)

Steps:

  • Heat the oven to 200ºC (180º fan) 400ºF, gas 6.
  • Rub the lamb all over with the oil and sprinkle with salt and pepper.
  • Using a sharp knife cut short incisions 2 cm / 3/4 " deep all over the skin of the meat and insert sprigs of garlic or slices of garlic into each one.
  • Put the meat in a roasting pan, pour in 1 cup water and roast in the oven for 20 minutes. Baste the meat and turn the oven down to 180ºC.
  • Roast for another 20 minutes, then mix together the mustard and honey and brush it over the meat.
  • Roast for another 20 minutes or until the meat juices run clear. Let the meat rest for 15 minutes before serving. Serve garnished with rosemary.

1 -2 garlic clove, minced
2 tablespoons olive oil
2 tablespoons lemon juice

5 -5 1/2 lbs leg of lamb, boned & butterflied

Steps:

  • Combine mustard, garlic, oil, lemon juice, rosemary, salt, pepper in shallow glass or ceramic dish. Mix well.
  • Add leg of lamb, secured with skewers, and rub mustard mixture all over it.
  • Cover the dish & let marinate 3+ hours (if marinating in refrigerator, return lamb to room temperature before cooking).
  • BROILER:.
  • Preheat broiler.
  • Place lamb flat on a rack in foil-lined broiler pan.
  • Spread with any remaining mustard mixture.
  • Cook under broiler until lamb is crusty & golden brown on the outside--10-15 min on each side for rare, 20 min on each side for medium, 25 min for well done.
  • Transfer lamb to a carving board & let it rest for at least 10 minutes before carving into slices (not too thin) for serving.

  • Place lamb flat on a rack over grill; spread with any remaining mustard mixture.
  • Cook until lamb is crusty & golden brown on the outside--10-15 min on each side for rare, 20 min on each side for medium, 25 min for well done.

Make a lovely maple and chilli glaze to brush over a leg of lamb, ready for barbecuing - a great choice when you haven't got time for marinating

2.5kg leg of lamb, butterflied (ask your butcher to do this)
1 bunch of rosemary, snipped into 2cm lengths
100ml maple syrup
50g Dijon mustard
2 tbsp yeast extract
1 tbsp smoked paprika
3 medium green chillies, sliced

Steps:

  • Lay the butterflied lamb leg on a board and use a sharp knife to prick about 20 holes all over the skin side. Press the rosemary sprigs deep into the holes, then season all over.
  • To make the glaze, tip all of the ingredients into a small saucepan, reserving a few sliced chillies, and bring to the boil. Stir to combine, then remove from the heat and set aside. Light the barbecue. It's ready when the coals are ashen and you can hold your hand 5cm above the grill for at least 5 seconds.
  • Lay the lamb skin-side down on the grill and cook for 10 mins. Turn over using tongs and cook for 10 mins more. Repeat this two more times for 5 mins on each side so the lamb cooks for a total of 30 mins. Baste with the glaze, turn the lamb again and keep basting for another 10 mins until deep brown and sticky. Remove to a board, cover loosely and leave to rest for 20 mins. Carve into thin slices to serve, then scatter over the reserved sliced chillies.

Roasted butterflied leg of lamb is an easy and delicious main dish recipe that uses garlic and thyme to flavor the meat.

2 teaspoons fresh thyme leaves (stem removed, minced)
2 teaspoons fresh rosemary leaves (minced)
3 garlic cloves (minced)
1 small onion (chopped)
1/4 cup olive oil
1/4 cup red wine vinegar
2 tablespoons orange juice
3 tablespoons Dijon mustard
1 4 to 5-pound boneless leg of lamb (butterflied)
1 teaspoon salt
Freshly ground black pepper (to taste)

Steps:

  • Gather the ingredients.
  • In a heavy-duty zipper storage bag, combine the onion, garlic, olive oil, vinegar, mustard, orange juice, thyme, and rosemary and mix well.
  • Place the leg of lamb in the marinade, seal the bag, and turn to coat. Massage the meat through the bag for a bit to help the marinade penetrate and coat all the meat evenly. Put the storage bag into a large roasting pan and marinate for 24 hours in the refrigerator.
  • Preheat the oven to 350 F. Remove the lamb from the marinade and place it in a shallow roasting pan. Season with salt and pepper.
  • Roast the lamb, uncovered, for 50 to 70 minutes, basting it with the marinade several times during the process. Cook until an instant-read meat thermometer registers 145 F (for medium-rare) or 150 F (for medium) when inserted in the thickest part of the meat. For safety reasons, the lamb needs to be cooked to a minimum of 145 F.
  • Remove the lamb from the oven, cover with foil, and let stand for 15 minutes before serving.
  • Carve the lamb into slices against the grain. Plate, drizzle with the juices from the pan, and serve.

  • Mix mustard, soy sauce, garlic, rosemary, thyme and ginger together in a bowl. In a steady, slow stream, whisk in olive oil until well-combined and emulsified, like a mayonnaise-like cream.
  • Paint the lamb all over with the mustard mixture and set it on rack, fat side up, in roasting pan. Let sit at room temperature for 2 hours before roasting.

Pour wine into pan and deglaze, scraping up any browned bits, and reduce by half. Pour reserved pan juices into pan and whisk to combine. Slowly pour slurry into pan while whisking constantly until pan sauce starts to thicken; cook at a steady simmer until thickened and flour taste is cooked off, about 5 to 10 minutes. Taste for salt and pepper.
