An egg dip is a quick and easy idea for any occasion. Simply purée eggs with yogurt and mayonnaise seasoned with green onions, garlic, dill and cayenne pepper for a smooth and delicious dip that's great with pita, crackers, vegetables and more!

4 hard boiled eggs, peeled and chopped
⅓ cup ( 75 mL ) low fat plain yogurt
2 tbsp ( 30 mL ) light mayonnaise or salad dressing
2 tbsp ( 30 mL ) chopped green onion
1 tbsp ( 15 mL ) chopped fresh dill (or 1 tsp/5 mL dried dill)
1 tbsp ( 15 mL ) chopped fresh basil (or 1 tsp/5 mL dried)
1 tsp ( 5 mL ) Dijon mustard
¼ tsp ( 1.25 mL ) salt
¼ tsp ( 1.25 mL ) garlic powder
1/8 tsp ( 0.5 mL ) cayenne pepper

Steps:

  • Purée eggs in food processor or blender. Add yogurt, mayonnaise, green onion, dill, basil, Dijon mustard, salt, garlic powder and cayenne pepper; process until smooth. Cover and refrigerate until serving time.
  • Serve with vegetables (e.g. sweet pepper strips, celery or carrot sticks, cucumber slices, broccoli or cauliflower florets, cherry tomatoes and mushrooms), pita bread wedges or bread sticks.
  • Dip can be refrigerated for up to 3 days.

8 large eggs
2 tablespoons distilled white vinegar
1 pound bulk pork sausage
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh tarragon
Grapeseed or vegetable oil, for frying (about 4 cups)
1 cup all-purpose flour
Kosher salt and freshly ground pepper
1/4 cup milk
1 cup panko breadcrumbs
1/2 cup low-fat mayonnaise
3 tablespoons stone-ground mustard
Juice of 1 lemon

Steps:

  • Place 6 eggs in a medium saucepan and cover with cold water. Add the vinegar and bring to a boil, then remove from the heat, cover and set aside 4 minutes. Meanwhile, fill a bowl with ice water. Using a slotted spoon, remove the eggs and immediately plunge into the ice water to stop the cooking; let sit 2 minutes. Gently peel the eggs and set aside.
  • Combine the sausage, herbs and one of the remaining eggs in a stand mixer fitted with the paddle attachment. Mix on medium speed until combined, about 3 minutes. With moistened hands, mold the sausage mixture around the cooked eggs to completely cover.
  • Preheat the oven to 350 degrees F. Heat about 3 inches of grapeseed oil in a small high-sided saucepan over medium-high heat until a deep-fry thermometer reads 325 degrees F (or until a pinch of panko sizzles in the oil). Season the flour with 1/2 teaspoon each salt and pepper in a shallow dish. Beat the remaining egg with the milk in another shallow dish. Put the panko in a third shallow dish.
  • Roll the sausage-covered eggs in the seasoned flour, shaking off the excess. Transfer to the egg-milk mixture and turn to completely coat. Let the excess egg drip off, then roll in the panko.
  • Fry the eggs until golden brown, about 3 minutes. Remove to a baking sheet, transfer to the oven and bake until the sausage is cooked through, 10 to 12 minutes. Mix the mayonnaise, mustard and lemon juice in a small bowl. Serve with the Scotch eggs.

  • Place water in a medium saucepan, and mix in cornstarch to dissolve. Stir in honey. Heat to boiling, stirring constantly. Reduce heat and simmer until sauce thickens, about 15 minutes.

1 egg
1 cup mayonnaise
¼ cup yellow mustard
2 tablespoons white sugar
6 eggs
2 quarts oil for deep frying
12 ounces ground pork sausage
1 tablespoon dried parsley, crushed
2 teaspoons grated lemon zest
¼ teaspoon ground nutmeg
¼ teaspoon dried marjoram
salt and pepper to taste
1 egg, beaten
4 ounces dry bread crumbs

Steps:

  • To make the mustard sauce: Crack 1 egg into a small saucepan. With the heat on low, stir in mayonnaise, mustard and sugar. When it just starts to boil, it's done. Remove and let sit until cool, then chill for at least 10 minutes.
  • Place 6 whole eggs in a saucepan and cover with cold water. Bring water to a boil and cook eggs for 10 to 12 minutes. Remove from hot water, cool, peel.
  • Heat oil in deep-fryer to 375 degrees F (190 degrees C).
  • Put the sausage into a bowl with the finely parsley, lemon rind, nutmeg, marjoram, salt and pepper. Work all the ingredients well into the sausage with your hands. Make a coating for each hand boiled egg out of the sausage, working it round the eggs with wet hands to form an even layer. Roll the covered eggs in beaten egg, and then in dried breadcrumbs.
  • Carefully slide in 3 eggs and fry for 4 to 5 minutes, until they turn deep golden brown. Turn them as they cook so that they brown evenly. Remove with a slotted spoon, drain on paper towel, and repeat with the remaining 3 eggs. Serve eggs with mustard sauce.

This is from a South African recipe book. I have used it as a sauce for roast or boiled meats, as a dip for vegetables, on hot dogs, on pasta or on just about anything. The recipe says 50ml mustard powder but I always add more as my family likes it a little hotter.

3 extra large eggs
50 ml mustard powder
100 ml white vinegar
1 pinch salt

Steps:

  • Put the ingredients in the order listed into the top pot of a double boiler and whisk with a wire whisk to break the eggs.
  • Set the bottom pot of the double boiler with water on stove to boil. When water is boiling turn down the heat a little and put the top pot into the water.
  • Cook the mustard over the boiling water for about 5-8 minutes stirring occasionally until the mixture coats the back of spoon.
  • Pour into glass jar and keep in the fridge.
