"I make this meal on a monthly basis," writes Barbara Keith from Faucett, MIssouri. "The fish is so delicious and flaky, and it's easy to prepare, too." If you can't find catfish, purchase orange roughy or cod instead.

2/3 cup yellow cornmeal
1/3 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon pepper
1/8 teaspoon cayenne pepper
1/2 cup prepared mustard
4 catfish fillets (6 ounces each)
Oil for frying

Steps:

  • In a shallow bowl, combine the first six ingredients. Spread mustard over both sides of fillets; coat with cornmeal mixture., In an electric skillet or deep-fat fryer, heat oil to 375°. Fry fillets, a few at a time, for 2-3 minutes on each side or until fish flakes easily with a fork. Drain on paper towels.

1 lb catfish fillet, thawed if frozen
3/4 teaspoon lemon pepper
1 tablespoon butter or 1 tablespoon margarine
1 medium shallot, sliced
2 teaspoons mustard seeds
2/3 cup chicken broth
1 teaspoon Dijon mustard
3 1/2 teaspoons cornstarch
1 tablespoon chopped fresh dill
1 tablespoon lemon juice

Steps:

  • Preheat oven to 400 degrees. Coat shallow baking dish with nonstick cooking spray. Pat fish dry with paper towels. Sprinkle fillets with lemon pepper; place in shallow baking dish. Bake 8-10 minutes or until fish flakes easily with a fork.
  • Meanwhile, melt butter in medium skillet over medium heat. Add shallot and mustard seed; cook and stir 2 minutes. In small bowl, stir mustard and cornstarch into broth. Add broth mixture to skillet; cook and stir until thickened. Stir in dill. Drizzle sauce over fillets and serve.

4 catfish fillets (about 1 1/2 lb. total)
Salt and ground black pepper
1/4 cup Dijon-style mustard
3 tablespoons snipped fresh dill
2 tablespoons olive oil
4 medium tomatoes, chopped
2 cloves garlic, chopped

Steps:

  • 1. Rinse fish; pat dry. Season fish with salt and pepper. In bowl combine Dijon mustard, 2 tablespoons dill and 1 tablespoon olive oil. Spread mustard mixture over both sides of fish. 2. In bowl combine tomatoes, garlic and remaining dill and olive oil; season to taste with salt and pepper. 3. Heat a cast-iron or nonstick skillet over medium-high heat. Add fish to skillet. Cook 8-10 minutes or until fish flakes easily, turning once. Transfer to serving plate. Add tomato mixture to skillet. Cook and stir 1 minute. Serve tomato mixture with fish.

4 catfish fillets
1/4 cup butter, melted
1/4 cup extra virgin olive oil
1 lb mushroom, sliced
2 garlic cloves, minced
1/2 cup brandy or 1/2 cup Bourbon
1 cup crushed tomatoes
1 cup heavy cream
1 teaspoon dried thyme
1 1/4 cups gruyere or 1 1/4 cups swiss cheese, grated

Steps:

  • Set oven to broil.
  • Salt and pepper fish on both sides. Set aside.
  • Combine butter, oil and garlic in small saucepan over low heat until butter is melted.
  • Saute the mushroom in medium size skillet in 1/2 of the butter/oil mix.
  • Remove from heat and add the Booze. :-) Return to heat and cook until it becomes a glaze.Add the tomatoes, Thyme and cream. Simmer for 10 minutes until it thickens.
  • Add salt and pepper to taste. (remember the fish is already salted and peppered).
  • In another skillet heat the remaining butter/oil mixture.
  • Saute the fish in it for 3-4 minute on each side. Just until cooked through. (thicker fillet will take longer).
  • Transfer the fish to broiler proof dish and spoon the sauce over it. Sprinkle with the cheese and broil until cheese melts.Yum! :-).
