SPICY MUSTARD HAM GLAZE (NOT SWEET AT ALL)



Spicy Mustard Ham Glaze (Not Sweet at All) image

I couldn't find a true savory ham glaze, so I made up my own. It turned out so well, I just had to share! I bought a large ham (bone-in of course!) that I wanted to use the left overs, for other yummies later in the week. I don't necessarily like the sweet ham glazes, as it seems to linger with the leftovers. This will be great in scalloped ham and potatoes, ham and beans, omlets, sandwiches.. you name it! Hope you enjoy!! :)

2 tablespoons spicy brown mustard
2 teaspoons Worcestershire sauce (or my original thought was liquid smoke, but then learned I didn't have any)
2 teaspoons ground cumin
2 teaspoons fresh ground black pepper
1 1/2 teaspoons garlic powder
1 1/2 teaspoons mustard powder
8 1/2 lbs bone-in ham

Steps:

  • 1. In a small bowl, wisk all ingredients together.
  • 2. Pat ham dry with papertowel.
  • 3. Schmear all over ham.
  • I put mine in the slow cooker for 8 hours on low, or you could bake, roast, smoke, or grill the ham, depending on your preference. You could also marinate the ham before cooking, but I just didn't think about this until the morning of.
  • I made a double batch of this to use as a dipping sauce as well. Delish!

This sauce works with pork chops too. We like ham steaks on the grill and this recipe is wonderful.

1 lb ham steak, 1/2 inch thick
1 tablespoon Dijon mustard
1 tablespoon honey
1 tablespoon apricot preserves

Steps:

  • Mix mustard, honey and preserves.
  • Heat grill.
  • Grill ham uncovered for 4 minutes.
  • Turn ham and brush mustard mixture on.
  • Grill 4 minutes longer.
  • Turn ham and brush remaining mixture
  • Grill 2 minutes longer.
  • Serve.

SPAETZLE WITH SMOKED HAM AND POACHED CELERY HEARTS



Spaetzle with Smoked Ham and Poached Celery Hearts image

3 cups flour
1 teaspoon salt
2 eggs beaten
1 cup milk
1 tablespoon butter
1 pound smoked ham, diced
Poached celery, recipe follows
6 celery hearts
2 tablespoons butter
1 cup white wine
Salt and pepper

Steps:

  • Sift the flour and salt into a bowl. Make a well and mix in eggs and milk.
  • Bring a saucepan of water to a boil. Dampen a plastic cutting board and place dough mixture on it. Cut off strips of dough into water and cook for 3 minutes.
  • Drain spaetzle, rinse under cold water, and set aside.
  • In a large skillet heat up butter and saute spaetzle until lightly brown. Toss with smoked ham and garnish with poached celery.
  • Cut hearts in half lengthwise. Boil celery in salted water until fork tender, about 5 minutes and shock in cold water. Warm up butter in saute pan and saute celery until golden brown, about 2 minutes over low heat. Add white wine, salt, and pepper and simmer for 5 minutes. Serve alongside spaetzle.

1/4 cup water
1/4 cup honey mustard
1/2 cup sour cream

Steps:

  • Place ham steaks in a large skillet. In a small bowl, combine water and mustard; pour over ham. Bring to a boil. Reduce heat; cover and simmer for 3-4 minutes on each side or until heated through. Remove from the heat; stir in sour cream and onions.

1 (9 to 10-pound) bone-in smoked ham
20 cloves
1 cup Steen's cane syrup
1/2 teaspoon ground cloves
1/2 cup Dijon mustard
1 cup dry white wine
Kosher salt and freshly ground black pepper

Steps:

  • Preheat oven to 325 degrees F and lower oven shelf to the bottom level.
  • Using a sharp knife, cut several slits into the ham. Stick the cloves in the slits. Place in a roasting pan with a rack, and put into the oven. Bake for 2 hours and tent with aluminum foil if the outside gets too browned during the cook time.
  • Meanwhile, prepare the glaze:
  • Combine all the ingredients in a medium bowl and set aside. Periodically throughout the baking, baste ham with the glaze, using a pastry brush.
