An old fashioned recipe that is different from most pickles. Cucumbers and onions are pickled in a mustard sauce made with turmeric and celery seed.

8 large cucumbers, sliced
4 cups sliced onion
2 tablespoons pickling salt
2 cups white sugar
2 tablespoons all-purpose flour
2 cups white vinegar
1 tablespoon ground dried turmeric
1 tablespoon dry mustard powder
½ teaspoon celery seed
2 quarts cold water, or as needed

Steps:

  • Place the sliced cucumbers and onions into a large bowl and sprinkle the salt over the top. Fill the bowl with enough water to cover the cucumbers. Let stand for 8 to 10 hours.
  • Drain and rinse the cucumbers and onion with fresh water. Sterilize 4 (1 quart) jars and lids.
  • In a 6 quart pot, stir together the sugar and flour. Whisk in the vinegar, turmeric, mustard powder and celery seed to make a smooth paste. Add the cucumbers and onions and fill with enough water to cover. Stir, and bring to a boil. Cook until thickened, about 10 minutes, stirring frequently.
  • Pour into hot sterilized jars filling to within 1/2 inch of the top. Seal with lids and rings. Process for 10 minutes in a simmering water bath. Refrigerate any jars that fail to seal properly.

I love these yellow bean pickles that were my Mum's recipe :) They are tart and tasty, and hope you'll enjoy them! They are wonderful with baked ham.

4 qt yellow beans
2 c white vinegar
4 c white sugar
1 Tbsp tumeric
3 Tbsp all purpose flour
3 Tbsp dry mustard
1 tsp celery seed

Steps:

  • 1. Boil beans in salted water until tender, strain, put back into pot and set off to side.
  • 2. Mix all dry ingredients together in a saucepan. Add vinegar and stir well to remove any lumps. Heat and boil until thickened reduce heat to low.
  • 3. Put pot with beans on burner and add the mixture to the beans. Just heat through thoroughly (about 5 mins - don't let boil).
  • 4. Put into sterilized jars and seal.

How to Make Mustard Pickles - Great-Grandma's Recipe image

This old-fashioned mustard pickle recipe is straight from Great-Grandma's kitchen and is delicious on sandwiches, hot dogs, hamburgers and in salads. A must make when the summer bounty is on!

6 cups washed and diced pickling cucumbers
2 cups diced onion
1 cup canning/pickling salt
8 cups water (or enough to cover the cucumbers and onions for the salt water soak)
4 cups vinegar (you can use apple cider or white vinegar but make sure it's 5% acidity)
4 Tablespoons sugar (You can increase to 1 cup sugar if you prefer a sweeter flavor)
2 Tablespoons ClearJel® (optional, but produces a thicker relish)
6 Tablespoons dry mustard
2 Tablespoons dry turmeric
2 teaspoons celery salt (you can use regular salt, but the celery salt adds to the flavor)
½ cup water

Steps:

  • Place cucumbers and onions in a large stainless steel or glass bowl.
  • Mix 1 cup of pickling/canning salt with 8 cups of cold water (double this as needed if doing a larger batch of pickles). Pour over top of cucumbers and onions, add more cold water if necessary to cover the tops of the cucumbers. Use a clean plate and place on top of the cucumbers to keep them under the surface of the ice salt water.
  • Fill a pint sized Mason jar with water (use a lid) and set it on top of the plate to act as a weight. Let soak for 1 to 2 hours on the counter or put the bowl in the fridge overnight or for 12 hours.
  • After soaking cucumbers and onions, pour out salt water and rinse thoroughly with cold water and allow cucumbers to drain.
  • Prepare water bath canner and begin warming the water.
  • In a large stainless steel pot, combine sugar, dry mustard and turmeric, celery salt, and ClearJel®, then pour in a ½ cup of water, whisking until combined and smooth. Pour in vinegar and bring to a full boil while stirring.
  • Once it's reached a full boil, lower heat to a simmer and stir until it thickens up, then add the cucumbers and the onions and bring to a boil. When it reaches a boil with the vegetables added, keep at a low boil and cook for 5 minutes, stir as needed.
  • In jars just washed in hot soapy water and rinsed, pack the relish/pickle mixture to a ½ inch headspace. Remove air bubbles and add more product if needed to keep the ½ inch headspace. Clean the rim, put on lid and bands, and screw down to finger tip tight. Place filled jar into your water bath canner. Make sure at least 1 inch of water covers the top of the jars.
  • Bring water to a full boil, once water is boiling, process pints for 10 minutes.
  • Turn off heat, remove lid, and let jars sit in canner for 5 minutes. Then remove from canner and let cool and seal on a folded towel.

GREEN BEAN & MUSTARD PICKLE

600g onions , chopped
850ml /1½ pts pickling vinegar
1kg runner beans
40g /1½ oz plain flour
57g tin English mustard powder
2 tbsp ground turmeric
2 tbsp celery salt
2 tbsp black mustard seeds
225g light muscovado sugar
450g golden granulated sugar

Steps:

  • Put the onions in a preserving pan with 500ml of the vinegar. Cover and cook gently for 20 mins until soft. Meanwhile, blanch the beans for 5 mins, then drain.
  • Mix the flour, mustard powder, turmeric and celery salt. Heat the mustard seeds in a small lidded pan until you hear them popping, then tip them into the flour mixture. Gradually stir in remaining vinegar until smooth.
  • When the onions are ready, tip in the spice vinegar mixture and stir continuously over the heat until thickened. Add the blanched beans and cook, uncovered, for 10 mins, stirring occasionally. Add both the sugars and cook, stirring frequently, for 15 mins more until thick. Spoon into sterilised jars (see tip) and seal while hot. This will keep in a cool place for a year, but the colour will fade over time. Once opened, store in the fridge.

750 g pickling cucumbers ((or unwaxed cucumbers. Cut into 1 cm / 1/2 inch slices. 1 1/2 lbs))
750 g tomatoes ((green or barely-ripe .About 6 medium / 4 cups chopped very coarsely))
900 g cauliflower ((florets. 2 lbs / 3 cups / about 1 medium head))
750 g bell peppers ((chopped. Varied colours: green, red, etc. About 6 medium / 6 cups.))
250 g pearl onions ((peeled. 2 cups / 10 oz ))
375 g pickling salt ((1 cup / 13 oz) )
1 tablespoon turmeric
125 ml prepared mustard ((1/2 cup / 4 oz))
75 g flour ((1/2 cup / 2.5 oz ))
1.25 litres white vinegar ((5% acidity or higher (5 cups / 40 oz))
125 ml water ((1/2 cup / 4 oz))
350 g sugar ((white. 1 1/2 cups /12 oz))
4 cloves garlic ((minced))

Steps:

  • Prep the veg from the cucumber down to the onions.
  • Put in a large bowl or pot, that you will have room for in fridge, several if needed.
  • Mix vegetables well with the salt.
  • Put vegetables in fridge for 12 hours. Stir or toss occasionally if desired.
  • Drain, rinse and drain again.
  • Mix everything from the turmeric down to the flour in a large pot. Whisk in the vinegar 250 ml (1 cup) at a time, then add the water, sugar and the garlic.
  • Bring to a boil while stirring frequently, then reduce to a simmer until it's thick enough to start coating a spoon -- about 5 minutes. Whisk or stir frequently to avoid burning at the bottom.
  • Add the drained veg to the mustard sauce in the pot, and simmer for 20 minutes counting from the time you added the veg to the sauce.
  • Put in your choice of the following jar sizes: quarter-litre (1/2 US pint), half-litre (1 US pint), or litre (1 US quart.)
  • Leave 2 cm (1/2 inch) headspace regardless of jar size.
  • Debubble, adjust headspace with sauce mixture.
  • Wipe jar rims.
  • Put lids on.
  • Process in a water bath or steam canner.
  • Process all jar sizes for 10 minutes; increase time as needed for your altitude.
  • Best after at least a month of jar time.

3 ¾ quarts water
1 cup salt
1 large head cauliflower, chopped into bite size pieces
6 ½ pounds onions, diced
2 cucumbers, diced
1 ⅔ quarts cider vinegar
1 cup flour
4 cups white sugar
2 tablespoons mustard powder
1 tablespoon curry powder
1 tablespoon ground turmeric

Steps:

  • Combine the water and salt in a large pot. Add the cauliflower, onion, and cucumber to the pot and allow to soak overnight.
  • Bring the mixture to a boil over medium-high heat; simmer until the vegetables are tender; drain. Add the vinegar, flour, sugar, mustard powder, curry powder, and turmeric to the vegetables and bring to a boil; reduce heat to medium-low and simmer until the mixture thickens, stirring occasionally.
  • Ladle into sterilized jars; seal. Process in a boiling-water canner for 5 minutes.

These are tasty and especially nice served with ham or coldcuts. I misplaced my recipe and searched all over Zaar and didn't find one. I obtained it from a friend and here it is! This is for 2 pints but can be easily multiplied.

1 lb yellow beans
1 1/2 cups white vinegar
1/2 cup brown sugar
2/3 cup white sugar
2 tablespoons Clear Jel
1 tablespoon mustard powder
1 teaspoon turmeric
1/2 teaspoon celery seed
1/2 teaspoon mustard seeds
1/2 teaspoon table salt
1 cup white vinegar

Steps:

  • Cut beans into 1" pieces.
  • Cook beans in boiling water just until tender. Drain well.
  • In a saucepan large enough to hold everything heat the first amount of vinegar (1 1/2 cups) until it boils.
  • In a bowl mix sugars, ClearJel, spices and stir to blend well. Stir in remaining vinegar (1 cup) and mix until smooth. Add to boiling vinegar and stir constantly until mixture returns to a boil and thickens. Add the drained beans. Continue stirring gently until it returns to a boil. Fill hot sterilized jars, leaving 1/4 to 1/2 inch headspace. Seal.
  • It is recommended to process all pickles in a hot water bath for 10 minutes to ensure a good seal.
  • Do not reduce or weaken the vinegar in this recipe or alter proportions of beans to sauce. The acidity is necessary for safety.

  • Make a brine of pickling salt and water using 1/2 cup coarse pickling salt to 4 cups of water. (I use apx. 6 cups water and 3/4 cup pickling salt for this recipe. The salt will dissolve better if it is mixed with 2 cups of boiling water and stirred. Then, when dissolved, add remaining 4 cups of cold water to cool the mixture down.)
