2 cups julienned vegetables (leeks and/or celery and/or onions and/or carrots)
8 fluid ounces heavy cream
8 fluid ounces fish stock
10 ounces crumbled blue cheese
4 fluid ounces white wine

Steps:

  • Combine all ingredients in a covered pot.
  • Cook until all mussels open, then enjoy!

1 tablespoon unsalted butter
2 ounces slab bacon, cut into 1/3-inch dice
4 tablespoons minced shallot
2 pounds mussels, well scrubbed and debearded
1 cup hard apple cider
2 to 3 tablespoons crumbled blue cheese
1 tablespoon chopped fresh parsley

Steps:

  • In a medium saucepan, heat butter until melted over medium-high heat. Add bacon and cook for 2 minutes. Stir in shallots and cook for 1 minute. Add mussels and cider and bring to a boil. Cook, covered, for 2 minutes. Stir in cheese, reduce heat to medium and cook until mussels are open, about 2 minutes more. Stir in parsley. Serve immediately.

1/2 cupshallots; thinly sliced
1 tomato; diced
2/3 cupblue cheese
1/2 cupwhite wine
Juice of 1 lemon
1 Salt
1 tsphot pepper flakes
Parsley; to decorate

Steps:

  • Clean and de-beard your mussels if necessary Heat the oil and butter in a saute pan (with preferably heavy bottom) over high heat. Add the shallots and pepper flakes. Cook around 5 minutes until they appear soft but not translucent. Add the diced tomato and cook for another couple of minutes. Add the mussels. Toss Add wine and lemon juice. When mussels start to open, add the blue cheese and melt into the sauce. When all your mussels are open transfer to a bowl with tongs then add the juices over it. Serve with diced parsley sprinkled on top. (don't forget to add a large enough empty bowl on the table fo

Turn the heat of the pot back up, add the heavy cream, and the roquefort blue cheese. You can also add black pepper here if you wish. Stir until everything is reduced just slightly. While you are doing this you can pan sear some thick sliced bread in olive oil.
  • Pour the sauce over the mussels in either the main bowl or on peoples individual bowls. Serve with the bread and of course a glass of wine.
