MUSSELS IN WHITE WINE AND GARLIC

Mussels in White Wine and Garlic image

Be sure to buy live mussels. Any open mussels that do not close when you press their shells a few times are dead, and you should discard them.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers

Number Of Ingredients 7

2 cups dry white wine
4 large shallots, finely chopped
4 garlic cloves, finely chopped
1/2 teaspoon salt
4 pounds live mussels
1/3 cup mixed fresh herbs, such as flat-leaf parsley, chervil, or basil, chopped
6 tablespoons butter, cut into pieces

Steps:

  • Rinse and scrub mussels under cold running water. Using your fingers or a paring knife, remove beards (strings that hang from the mussels' shells), and discard.
  • In a large stockpot set over medium heat, combine wine, shallots, garlic, and salt. Simmer 5 minutes. Add mussels.
  • Cover, and increase heat to high. Cook until all mussels are open, about 5 minutes. Stir in herbs and butter. Remove from heat. Divide mussels and broth among four bowls. Serve immediately.

MOULES MARINIèRE WITH CREAM, GARLIC AND PARSLEY

Moules marinière with cream, garlic and parsley image

Cook yourself a restaurant-style moules marinière in six simple steps - a splash of white wine, cider or beer gives an extra kick.

Provided by Rick Stein

Categories     Main course

Yield Serves 4-6

Number Of Ingredients 9

1.75kg/4lb mussels
1 garlic clove, finely chopped
2 shallots, finely chopped
15g/½oz butter
a bouquet garni of parsley, thyme and bay leaves
100ml/3½fl oz dry white wine or cider
120ml/4fl oz double cream
handful of parsley leaves, coarsley chopped
crusty bread, to serve

Steps:

  • Wash the mussels under plenty of cold, running water. Discard any open ones that won't close when lightly squeezed.
  • Pull out the tough, fibrous beards protruding from between the tightly closed shells and then knock off any barnacles with a large knife. Give the mussels another quick rinse to remove any little pieces of shell.
  • Soften the garlic and shallots in the butter with the bouquet garni, in a large pan big enough to take all the mussels - it should only be half full.
  • Add the mussels and wine or cider, turn up the heat, then cover and steam them open in their own juices for 3-4 minutes. Give the pan a good shake every now and then.
  • Remove the bouquet garni, add the cream and chopped parsley and remove from the heat.
  • Spoon into four large warmed bowls and serve with lots of crusty bread.

Mussels with white wine, garlic & cream image

A delicious and easy classic recipe for mussels cooked in white wine, garlic, and cream

Provided by Sam Linsell

Categories     Seafood

Time 20m

Number Of Ingredients 9

2 Tbsp butter
1 Tbsp oil
2 shallots very finely chopped
2 cloves of garlic, crushed
6 - 8 thyme stalks
200ml De Wetshof Estate Chardonnay
1 kg fresh mussels

1 Tbsp chopped parsley

Steps:

  • In a medium-sized heavy-based pot, add the butter and olive oil and sauté the shallots until soft, about 3 minutes.
  • Add the garlic and thyme stalks and cook for about another minute but keep stirring to prevent the garlic from going brown.Add the white wine and then the mussels. Put the lid on the pot and steam for about 3 minutes until the shells are open.
  • Scoop the mussels and thyme stalks out the pot with a slotted spoon and set aside. Discard the thyme and any mussels that have not opened. Add the cream to the pan liquid and allow this to bubble over low heat until the sauce has reduced slightly, and the cream starts to thicken. Add half the parsley and then add the cooked mussels back in and toss around to reheat for a minute or 2.
  • Sprinkle over the remaining parsley and serve immediately with the crusty bread and a glass of Chardonnay.

MUSSELS WITH BACON AND WHITE WINE

Mussels With Bacon and White Wine image

This dish of plump and juicy mussels in a fragrant broth comes from Kevin Dundon's program "Modern Irish Food".

Provided by Laura2of7

Categories     Mussels

Time 35m

Yield 4-6 serving(s)

Number Of Ingredients 9

3 lbs mussels, scrubbed
1 cup white wine
4 tablespoons butter
2 shallots, chopped
2 garlic cloves, finely chopped
8 slices bacon, chopped
2 large tomatoes, deseeded and chopped
1 tablespoon all-purpose flour
2 tablespoons chopped flat leaf parsley

Steps:

  • Clean the mussels and discard any that don't close when sharply tapped.
  • Place the mussels in a large saucepan and cover with the wine. Cook for 3-4 minutes, shaking the pan once or twice, until the mussels are open. Transfer them to a bowl and discard any that do not open. Strain the cooking liquid into a separate bowl to remove any grit or impurities and set this and the mussels aside.
  • Melt half the butter in a pan over a low heat and add the shallots and garlic.
  • Add the bacon, increase the heat to medium and cook for a few minutes until the bacon is crisp.
  • Now add the tomatoes and cook until softened.
  • Mash the flour and the remaining butter in a bowl, then add this mixture to the pan, piece by piece. At the same time, slowly add the mussel cooking liquid. If you find that the sauce is too thick, add a little water to loosen the mixture.
  • Reheat the mussels in the sauce, then sprinkle with the parsley. Serve immediately with some crusty bread.
