Garlic Butter Soy-Glazed Mushrooms is the easiest, most mouthwatering gluten-free side dish recipe I know! Serve with chicken, burgers, steak, or baked potatoes.

4 Tablespoons butter or vegan butter
16oz mushrooms, sliced
3 large cloves garlic, pressed or minced
1 - 3 teaspoons gluten-free Tamari or soy sauce (dish will not be GF if using traditional soy sauce)

Steps:

  • Heat butter in a large, 12" skillet over medium-high heat until sizzling. Add mushrooms then stir to coat. Saute until the mushrooms release their liquid then add garlic and continue to saute until the liquid has evaporated and the mushrooms are golden brown, 10-12 minutes. Stir occasionally and monitor temperature to ensure mushrooms are lightly sizzling and garlic doesn't burn.
  • Drizzle on desired amount of tamari or soy sauce then stir to combine. Taste then add salt if necessary, and then serve.

Steps:

  • Preheat the oven to 400 degrees F. Clean the mushrooms and trim the edges off the stem. Add them to a large bowl.
  • Add the garlic, vegetable oil, dark soy sauce, and balsamic vinegar to the mushrooms and toss to combine until the mushrooms are well coated.
  • Transfer the mushrooms to a baking sheet and bake at 400 degrees F for 15 minutes or until they turn golden brown.
  • Season with salt and pepper to taste and garnish with fresh herbs. Serve immediately or store for later.

Steps:

  • In a large frying pan or skillet, melt the butter over medium heat. Add the mushrooms. Stir the contents of the pan constantly for about 5 minutes until the mushrooms soften and their juices mingle with the butter.
  • Add the garlic to the pan and cook for a further 1 minute. Stir constantly while the garlic is cooking.
  • Add the soy sauce to the mushrooms and cook them for about 4 minutes until all the liquid has evaporated and you are left with golden, silky mushrooms.

1 onion, sliced
1 tablespoon garlic, minced
1 tablespoon ginger, minced
3 tablespoons soy sauce
3 tablespoons olive or another vegetable oil (more or less as required)
1-2 teaspoons sugar - (more or less to taste)

Steps:

  • In a small bowl or cup combine the soy sauce and sugar. Set aside.
  • Heat your oil in a skillet over medium heat until it shimmers or a drop of water flicked in it dances.
  • Add the onion, garlic and ginger and cook until the onion is tender, about 3 minutes.
  • Increase heat to medium high and add your mushrooms. Cook for 3 or 4 minutes.
  • Add soy sauce and sugar to the skillet.

1/2 teaspoon thyme, ((or rosemary))
1/2 teaspoon brown sugar, ((omit for low carb or KETO))

Steps:

  • Preheat oven to 400°F (200°C).
  • Lightly grease a large baking sheet/pan with nonstick cooking oil spray.
  • Wipe mushrooms over with a damp sheet of paper towel to clean off dirt and debris.
  • In a large bowl, combine the mushrooms with the melted butter, oil, balsamic vinegar, soy sauce, garlic, parsley, thyme, brown sugar, salt and pepper. Toss to evenly coat.
