TILAPIA ROLL WITH SAUTE MUSHROOM STUFFING #RSC
"Ready, Set, Cook! Reynolds Wrap Contest Entry'' This recipe is very different from any over fish roll recipes. The best part of this dish is its versatility. On one hand you could use any other fish and any other stuffing ingredients ( like spinach, sun-dried tomatoes, etc.) On another it is very light and could be served with any side dish ( mashed potatoes, mix salad). This dish goes good with any dressings like tartar sauce or a spicy sreracha or a fresh slices of lemon would go very well with it. I hope people will enjoy this recipe as much as my family.

Steps:
- 1. For stuffing in a hot pan put a tablespoon of butter. Add mushrooms, onions, 1 garlic clove, heavy cream and cream cheese. Cook on the medium high heat for 5 min or until the mixture is smooth but not runny. Salt and pepper for taste.
- 2.Grind the tilapia fillets in the blender or meat grinder until smooth. Transfer into the bowl and add an egg, 2 garlic cloves, green onions, parsley, cilantro, mustard, salt, pepper and the panko crumbs. Mix by hand.
- 3. Lair the tilapia mixture on the greased Reynolds Wrap Foil and spread it out, it should be 1 inch thick.
- 4. Place the tomato slices in the middle of the tilapia mixture. Put the mushroom stuffing on the top of the tomatoes.
- 5. Lift the corner of the foil and roll the the tilapia. Gently place the roll in the middle of the foil. Wrap it in foil and twist the ends.
- 6. Place the roll on the baking tray and bake in the 400 degree F oven for 20 minute Then take the foil off and put some more cream cheese on top and bake for 15 more min until the top is browned.
- 7. Slice and serve along with some sriracha sauce or fresh lemon slices.

- In a 12-in. skillet, heat butter over medium heat. Add mushrooms and 1/4 teaspoon lemon pepper; cook and stir 3-5 minutes or until tender. Add garlic; cook 30 seconds longer., Place fillets over mushrooms; sprinkle with paprika, cayenne and remaining lemon pepper. Cook, covered, 5-7 minutes or until fish just begins to flake easily with a fork. Top with tomato and green onions.

Steps:
- Stew chopped onion and garlic in butter in a large skillet for 3-5 minutes.
- Add rice, meat, salt, and pepper.
- Stir just to mix well.
- Remove from heat.
- Remove core from cabbage.
- Place whole head in a large kettle filled with boiling water.
- Cover and cook for 3 minutes.
- Remove softened outer leaves.
- Take out all large leaves
- Cut thick center stem from each leaf.
- Take one large cabbage leaf at a time, put 1 rounded tablespoonful of meat mixture in center of a leaf. Roll leaves.
- Put stuffed cabbage leaves with seam down close to each other on a frying pan.
- Do not make more than 2 layers.
- Combine beef broth and mushroom soup; Pour over cabbage rolls.
- Bake in a well heated (350 degree) oven for 1 1/2 hours.
STUFFED TILAPIA
This is a meal that when you do some for the house, you can make more, because you have a the clean up only onr time for 3 sets of meals. And they do freeze very well.

- 1. By cleaning the blood line, is to cut on a buyass the dark red line in the center of the fish. Mix the stuffing by adding the cream Cheese ,Pimiento, Mushrooms, tarragon, Cayenne pepper, together. Place 4 pieces of fish on a sheet pan, top each fish with some stuffing and place a second piece of fish on toppress firmly to allow the stuffing to settle on the fish. Place the fish in the freezer uptil it becomes firm not frozen. Goll the fish in the seasoned flour, then in the Chefs special egg wash, making sure the flour has all the wash covering it.Then place the wet fish in to the Panko pressing firmly si the Panko sticks. Place them on a sheet pan, and spray the pam well on both sides. Place the sheet pan in a pre set ovenat 350 degrease until the fish turns a light golden brown. Enjoy.
