My family really looks forward to supper when these tasty beef patties are on the menu. I served this effortless entree to our preacher when he came to dinner, and I often bring it to covered-dish gatherings. - In a large bowl, combine the cornstarch and consomme until smooth. Stir in mushrooms, Worcestershire sauce and basil; set aside. , In another large bowl, combine egg, bread crumbs, onion, seasoned salt and pepper if desired. Crumble beef over mixture and mix well. Shape into six oval patties; place in a shallow 1-1/2-qt. microwave-safe dish. , Cover and microwave on high for 3-5 minutes; drain. Turn patties, moving the ones in the center to the outside of dish. Pour consomme mixture over patties. Cover and microwave on high for 6-8 minutes or until a thermometer reads 160°. Let stand for 5 minutes. Serve with potatoes or noodles.

SALISBURY STEAK WITH MUSHROOM GRAVY

- Place breadcrumbs in a bowl. Use a box grater and grate the onion over the breadcrumbs. Mix with fingers, leave to soak for a few minutes.
- Add remaining Salisbury Steak ingredients into the large bowl. Use your hands to mix until just combined. Mix well for a couple of minutes until the mixture becomes a bit "pasty" which will ensure your patties hold together well.
- Divide into 5 and pat firmly into oval patties around 3/4" / 1 2/3 cm thick.
- Heat oil in a skillet over high heat. Add the steaks and cook the first side for 1 minute or until browned, then flip and brown the other side (they will still be raw inside). Remove onto plate.
- If skillet is looking dry, add a touch more oil. Add chopped onion and garlic and cook for 2 minute until onions are a bit translucent.
- Add the mushrooms into the skillet and cook for 2 - 3 minutes until golden.
- Turn heat down to medium. Add butter. Once melted, add flour and cook for 30 seconds, stirring constantly.
- Gradually add in beef broth, stirring as you go. Once mostly lump free, whisk in remaining Gravy ingredients.
- Add steaks along with the juices on the plate. Cook for 5 - 7 minutes, or until gravy is thickened, stirring occasionally around the steaks. If the gravy thickens too quickly, add more water.
- Remove steaks onto a plate. Taste gravy and adjust salt and pepper to taste.
- Serve salisbury steaks topped with the mushroom gravy - over mashed potato is ideal! Sprinkle with a bit of parsley if desired.

- Add the ground beef, breadcrumbs, dry mustard, onion powder, garlic powder, salt, pepper, ketchup, and egg to a large bowl and mix until well combined.
- Divide the mixture into 4 evenly sized patties around ¾ inch thick.
- Heat the olive oil in a large pan or cast iron skillet over medium-high heat. Add the patties to the pan and cook, undisturbed, for 2-3 minutes per side until they are browned. Transfer to a plate and set aside.
- After searing your patties do not wipe the pan! We want all of the brown bits to help flavor the gravy. Reserve around 1 tablespoon of the beef fat and drain off any excess
- Reduce the heat to medium then add the sliced onions and mushrooms and cook for 5-6 minutes, stirring occasionally, until all of the liquids from the mushrooms have cooked off and they are lightly browned. Add the minced garlic and cook for around 30 to 45 seconds until fragrant, stirring constantly to avoid burning.
- Add the butter and let melt, then add in the flour and cook for around 2 minutes, stirring frequently, until the flour is golden brown. Slowly add the beef stock while whisking. Continue whisking for about 45 seconds to avoid clumps and scrape up any brown bits on the bottom of the pan. Stir in the Worcestershire sauce and dried thyme.
- Add the hamburger steaks back to the pan. Cover and cook for 5 to 10 minutes until the patties are cooked through and the gravy is thickened. Top with fresh chopped parsley before serving.

- In a bowl combine all of the ingredients for the beef patties (except the oil). Mix until well incorporated and shape into 4 oval or round patties flattening the center for even thickness throughout.
- Heat 1 Tbsp oil in a non-stick pan, once hot, add patties to the skillet and cook until patties are golden brown on both sides and fully cooked. Remove the patties from the skillet and cover to keep warm.
- Sauté ½ onion (you can also slice onion into thin slices, whatever your personal preference is) in the same skillet. Once the onion starts to become tender, add the garlic and butter and mix.
- Add the mushrooms and sauté until browned, mixing frequently. Lightly season with salt and pepper.
- In a bowl, whisk together all of the remaining gravy ingredients: 2 Tbsp flour, 1 1/2 cups broth, 1/2 cup water, 1/2 tsp Worcestershire, 1/2 tsp dijon, 2 tsp ketchup, 1/4 tsp salt, and 1/8 tsp pepper. Pour into the mushrooms and cook until the gravy thickens.
- Add the patties back to the pan and completely cover with the gravy and mushrooms and cook just until patties are heated through.

- Combine soup, mustard, Worcestershire and horseradish in a bowl and set aside.
- In another bowl, mix together egg, bread crumbs, onion, salt, pepper, 1/4 cup soup mixture and the ground beef.
- Form mixture into 4-6 patties.
- Brown patties in oil and drain off excess fat.
- Combine rest of the soup mixture with the 1/2 cup water and pour over the patties.
- Cover and cook for 10-15 minutes (or until done) Remove patties and spoon remaining sauce over top.
- This is great over hot cooked noodles!

- Gently mix the beef, egg, onion, cracker crumbs, sage, 1/2 teaspoon salt and a few grinds of pepper in a large bowl using your hands. Divide into 4 equal portions and shape into oval patties, about 1/2 inch thick.
- Heat 1 tablespoon butter in a large skillet over medium-high heat. Brown the patties, about 4 minutes per side. Transfer to a plate.
- Add 1 tablespoon butter to the skillet and cook the mushrooms, stirring occasionally, until slightly browned, about 2 minutes. I got the orginal recipe from Taste of Home's Fast Family Favorites but modified it just a bit. This is one of my family's favorite meals and it freezes nicely also.

SALISBURY STEAK WITH MUSHROOM GRAVY

- In a large bowl, combine beef, 1/4 can mushroom soup, bread crumbs, egg, onions, and steak seasoning. Mix thoroughly and shape into 4 oval patties.
- Heat oil and 1 tablespoon butter in large skillet over medium-high heat. Brown patties on both sides and transfer to a plate.
- Add remaining butter and cognac (remove pan from heat when adding cognac.) Saute mushrooms for 7 to 8 minutes. Add beef stock and whisk in gravy mix until smooth. Stir in remaining mushroom soup.
- Return patties to skillet and spoon gravy over top. Cover pan and simmer for 20 to 25 minutes.
- Serve Salisbury Steaks and Mushroom Gravy over hot cooked rice.
