1/4 lb mushroom, sliced
1 (8 1/2 ounce) can crushed pineapple, and its liquid
1 teaspoon salt
1 cup uncooked rice
3 tablespoons butter
1/4 cup green onions or 1/4 cup white onion, minced
2 teaspoons soy sauce
1/2 teaspoon ginger
1/4 cup cashews

Steps:

  • Combine pineapple liquid with water to make 2 1/2 cups.
  • In medium sauce pan, bring to boil with salt.
  • Stir in rice.
  • Cover, simmer 20 to 25 minutes or until rice is tender.
  • Meanwhile, melt butter in skillet.
  • Saute onion and mushrooms 5 minutes.
  • Stir in soy sauce, ginger and pineapple; blend well.
  • Add mushroom mixture to rice along with nuts.

Mushroom Pineapple Fried Brown Rice With Tempeh image

This was made entirely from leftovers I had in the fridge last night. I'm a sucker for NEVER letting anything go bad in the fridge, especially yummy leftover veggies like mushrooms, red peppers, scallion and juicy pineapple! Simmering the tempeh cubes in some tamari or soy sauce gives the cubes a real rich flavor. I might add a drop or two of liquid smoke next time.

1 1/2-2 cups cooked brown rice
1 cup mushroom, chopped
1 cup red bell pepper, chopped
4 scallions, sliced (some of the green reserved for topping)
1 cup pineapple, chopped
1 teaspoon canola oil
1 teaspoon sesame oil
1 (8 ounce) package tempeh
1/4 cup soy sauce
water
white pepper, to taste

Steps:

  • Cut the block of tempeh into 1/2 " cubes.
  • In a small sauce pan add soy sauce, tempeh cubes and enough water or broth to cover the cubes.
  • Simmer for about 10 minutes.
  • In the meantime, heat the canola oil over medium heat, add mushrooms, red pepper, and white parts of scallion, and saute until mushrooms shrink a bit.
  • Toss in the pineapple and simmered tempeh cubes.
  • Finally add cooked riced, sesame oil (to taste) and either add a splash of tamari, or the extra liquid and broth from the simmered tempeh.
  • Check for seasoning and add white pepper if desired, top with green parts of scallion and serve.

1 tablespoon vegetable oil
1 tablespoon soy sauce or 1 tablespoon tamari
1 (8 ounce) package tempeh
chili powder
8 ounces udon noodles or 8 ounces linguine
1/2 cup natural-style peanut butter
2 tablespoons lime juice
2 tablespoons light brown sugar or 2 tablespoons sucanat
1/4 teaspoon red pepper flakes or 1/4 teaspoon cayenne, to taste
1/4 cup hot water
8 ounces mung bean sprouts
3 scallions, white and light green parts thinly sliced
1/4 cup chopped fresh cilantro or 1/4 cup parsley
2 -3 tablespoons finely chopped peanuts (optional)

Steps:

  • Make croutons: In a large skillet, heat oil and 1 tbs soy sauce over medium heat.
  • Break tempeh into small cubes and add to skillet.
  • Cook, stirring often, until nicely browned and crisp.
  • Sprinkly lightly with chili powder to taste and remove pan from heat.
  • Drain on paper if you prefer.
  • Bring a large pot of lightly salted water to a boil.
  • Add noodles, stirring to prevent sticking.
  • Cook according to package directions, until al dente.
  • Meanwhile, in a small bowl, whisk together peanut butter, lime juice, sugar, pepper flakes,, 2 tbs soy sauce, and water.
  • Set aside.
  • Drain noodles, rinse under cold water and drain again.
  • In a large bowl, combine noodles, bean sprouts, tempeh, scallions, cilantro, and peanuts.
  • Whisk dressing and pour over salad; toss to coat.
  • Serve at room temp.
  • Makes lovely leftovers.
  • ***note:this peanut sauce recipe is excellent.
  • If you don’t have the tempeh, just eat it with noodles, or vice versa.
  • If you can’t get mung bean sprouts just skip them.
  • You could add cucumber or sliced carrots.
  • I eat the peanut sauce over a broccoli stir fry, it is so easy to whip up.

BROWN MUSHROOM RICE

250 g tempeh
1 cup vegetable stock
3 tablespoons tamari
2 tablespoons canola oil
1 can pineapple chunk
2 green peppers
1 onion
1 tablespoon maple syrup (or honey)
2 tablespoons cornstarch
1/4 cup vinegar

Steps:

  • Cut tempeh into thin cubes of 2 cm.
  • Add the vegetable stock and tamari and let it cook for 10 minutes.
  • Drain tempeh, reserving liquid for sauce.
  • Heat a skillet and bake tempeh in the oil until lightly browned.
  • Drain the pineapple chunks, adding the liquid to the sauce.
  • Add sliced pepper and onion and bring to boiling point and let it cook for one minute.
  • Drain.
  • Put liquid from tempeh and pineapple juice into a measuring cup and add enough water to make 2 cups.
  • Bring to a boil.
  • Stir in the honey or syrup.
  • Dissolve the maizena in the vinegar and pour it into the sauce while stirring vigorously.
  • Cook until thickened and bubbly.
  • Then add peppers, onion, pineapple and tempeh.
  • Serve with hot rice.

8 ounces tempeh, plain
1/2 cup soy sauce
1/4 cup grapeseed oil (for frying)
4 ounces mayonnaise (Vegitarian)
1 teaspoon black pepper
1 teaspoon red pepper powder
1 teaspoon salt
1 tablespoon garlic

Steps:

  • Cut Tempeh into strips approximately 1 to 1 1/2 inches thick. Place in plastic covered container with soy sauce and garlic powder for 2 hours in refrigerator.
  • After 2 hours drain soy sauce and discard. Heat Grape seed oil to medium in a large frying pan with lid. Place Tempeh strips in Oil and brown on each side, remove from oil, sprinkle with salt and drain on towels to remove extra oil. (Note you want these crisp and medium brown.).
  • Sauce: Mix Veginase and black pepper, red pepper in small container, mix well use for dipping.

2 (3 ounce) bags brown rice (10 min.'Success' is what I used)
2 tablespoons oil
1/2 cup chopped onion
2 eggs, beaten
1 cup cooked shrimp (or chicken, ham, etc.)
1 cup frozen peas
1 teaspoon garlic powder
3 tablespoons soy sauce
1 teaspoon sesame oil (optional)

Steps:

  • Prepare rice according to directions and drain.
  • Heat oil in large skillet.
  • Add onion, saute a few minutes (5) and add eggs. Scramble.
  • Stir in shrimp and rest of ingredients.
  • Heat through.
  • Enjoy!
