MUSHROOM AND PROVOLONE MEATLOAF

Finely chopped mushrooms and shredded provolone add moisture and flavor to this glazed meatloaf.

1 1/2 pounds ground meatloaf mix (equal parts ground beef, pork and veal or turkey)
1 1/2 cups finely chopped button mushrooms
1 cup dried breadcrumbs
1 cup shredded provolone
2 tablespoons chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/2 cup ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
  • Combine the meatloaf mix, mushrooms, breadcrumbs, provolone, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf, about 9 inches by 5 inches. Bake for 30 minutes.
  • Stir together the brown sugar, remaining 1/4 cup ketchup and remaining 1 teaspoon Worcestershire in a small bowl for the glaze. Remove the meatloaf from the oven and brush the top and sides all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

2/3 cup(s) butter crakers, crushed
1/2 cup(s) mushrooms (shiitake,oyster,or cremini)minced
FOR THE GLAZE
1/2 cup(s) ketchup
4 tablespoon(s) brown sugar
4 teaspoon(s) apple cider vinegar

Steps:

  • Mix all the ingredients for the glaze in a small bowl and set aside. Pre heat oven to 350f. in a skille cook bacon till chrisp. Remove from skillet and let cool,then crumble, set a side
  • Add a little oil to bacon oil,Saute onion,and garlic until soften,abought 5 min, set a side to cool
  • in a large bowl mix ground chuck, sausage and bacon,set a side. in a med bowl mix eggs, pepper, thyme,mustard,worcestershire sauce,milk,salt,and hot sauce. Add this mixture to the meat. Also add crackers,parsley,chives,mushrooms,and oinoin,and garlic. mix well with your hands untill well blended. If the mixture sticks add a little milk.
  • With wet hands,pat into two 9x5 inch loaf pans. Brush with 1/2 of the glaze and bake abought 1 hour let cook for 20 min and serve with remaing glaze.

2 cups breadcrumbs
1 lb. portobello mushrooms
1/2 yellow onion, diced
2 tablespoons garlic, minced
2 large eggs, beaten
4 teaspoons Worcestershire sauce
1 tablespoon Italian seasoning
Salt and pepper to taste

Steps:

  • Pulse the onions, garlic and mushrooms in a food processor until finely chopped.
  • Combine ground beef, breadcrumbs, mushroom mixture, eggs and seasonings and mix thoroughly.
  • Shape it into a loaf with your hands and place it on a greased baking sheet.
  • Bake at 350°F for 45 minutes or until a meat thermometer reads 160°F in the center of the meatloaf.
  • Let it stand for 10 minutes before slicing.
  • Dish and serve hot with gravy of your choice.
  • Enjoy!

1 teaspoon kosher salt, divided
1/2 teaspoon black pepper, divided
1 1/2 pounds extra-lean ground beef
1/2 cup whole-wheat panko
2 large eggs
1/4 cup unsalted ketchup
1/2 tablespoon light brown sugar
1/2 tablespoon apple cider vinegar

Steps:

  • Preheat oven to 350°F. Place a pan of water on bottom rack.
  • Heat oil in a large skillet over medium-high. Add onion; sauté 3 minutes. Add mushrooms; sauté 3 minutes. Add Worcestershire, thyme, garlic, 1/2 teaspoon salt, and 1/4 teaspoon pepper; sauté 1 minute.
  • Gently combine beef, panko, eggs, mushroom mixture, remaining 1/2 teaspoon salt, and remaining 1/4 teaspoon pepper in a large bowl. For easy cleanup, line an 8 1/2- x 4 1/2-inch loaf pan with foil; let foil overhang edges. Add meat mixture; lightly press into edges. Bake at 350°F on middle rack until loaf center is 160°F, about 1 hour.
  • Combine ketchup, sugar, and vinegar; brush over loaf top. Increase heat to broil. Broil loaf 10 minutes or until glaze bubbles. Remove from oven; cool 10 minutes. Lift or remove loaf from pan. Cut into 6 slices.

3 tablespoons ketchup
2 teaspoons light brown sugar
1 teaspoon cider vinegar
[b]Ingredients for meatloaf[/b]
10 saltine crackers
1/3 cup whole milk
4 ounces fresh mushrooms
1 small onion
1 tablespoon vegetable oil
¼ teaspoon dried thyme
1 garlic clove minced
1 large egg
2 teaspoons Dijon mustard
¾ teaspoons salt
½ teaspoon black pepper
1 pound 90 percent lean ground beef

Steps:

  • In a small bowl mix all the glaze ingredient together; set aside.
  • Preheat oven to 350F with rack in the middle position.
  • Process crackers in a food processor until finely ground and place them in the bottom of a large bowl; stir in milk and set aside.
  • Place the onion and mushrooms in the now empty food processor and process until finely chopped.
  • Add the garlic and thyme to the onion and mushroom mixture. Using the oil in a 10-inch nonstick skillet over medium-high heat cook the mixture until moisture is evaporated and mixture starts to brown; set aside to cool for about 5 minutes.
  • Whisk the egg, mustard, mushroom mixture, salt, and pepper into the cracker mixture and then work in the meat using your hands. Form into 2 equally sized meatloaves and place them in the now empty skillet; bake for 20 minutes.
  • Remove meatloaf from the oven, spread the glaze over the tops, and continue baking until meatloaves are done. (160F)
  • Let rest for 5 minutes and serve hot.

1 cup finely chopped mushroom
¾ cup milk
⅔ cup seasoned bread crumbs
2 eggs, beaten
1 teaspoon salt
1 ½ pounds ground beef
½ cup ketchup
¼ cup brown sugar
2 teaspoons ground mustard
1 teaspoon Worcestershire sauce

Steps:

  • Mix onion, mushroom, milk, bread crumbs, eggs, and salt together in a large bowl. Break ground beef into small pieces and add to onion mixture; stir. Shape the beef mixture into a round loaf and place into a 5-quart slow cooker.
  • Cook on Low until no longer pink in the center, 5 to 6 hours. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
  • Whisk ketchup, brown sugar, mustard, and Worcestershire sauce together in a small bowl; spoon over the meatloaf.
  • Continue cooking glazed meatloaf until the glaze is warmed, about 15 minutes.
  • Remove meatloaf to a cutting board and let rest 10 minutes before slicing.

4 cups mushrooms 1/2" dice ,
2 tbsp oil
1/2 cup diced carrots
1/2 cup diced onion
3 cloves garlic, minced
1/2 cup diced celery
2 1/2 tbsp ground flax seeds
5 tbsp aquafaba (the liquid left over form cooking legumes)
3 1/2 cups cooked chickpeas (drained)
2 cups GF Panko
2 tbsp herbes de Provence
3 tbsp tomato paste
1/2 tsp liquid smoke
salt and pepper to taste
1/3 cup hoisin sauce (gluten free!!!!)
2 tbsp ketchup

Steps:

  • Heat your oven to 400 degrees Fahrenheit and prepare your loaf pan or what ever pan you are using. I use a bread pan and line it with foil or parchment for easy removal of the loaf. If you allow the foil to come up on either side an extra 2-3 inches then you have a good handle for removing the loaf later.
  • In a small bowl stir together your flax and aquafaba, and set aside to thicken.
  • In a large sauté pan heat your oil over medium heat and sauté your onions, celery, carrots, mushrooms and garlic. Stir frequently and cook until the mushrooms are cooked down and the carrots begins to soften, about 15 minutes.
  • While the veggies are cooking give your chickpeas a good mash with a potato masher or your hands. I suppose a food processor would work well here on and off with buses. The chickpeas are going to help work like a glue, a tasty glue, to hold your loaf together.
  • When your veggies are ready add them to a large bowl with the chickpeas and for in the flax mixture. Add the rest of your loaf ingredients and mix well. I think this is best done with your hands. really get n there and massage the ingredients together.
  • Press the mushroom mixture into your desired pan. Really press it into the corners and give the top a good press, if you know what I mean. I think it improves the structural integrity of the loaf.
  • Mix together your glaze ingredients and spread over the top. Cover with foil and bake for 25 minutes covered. Remove the foil and bake another 25 minutes uncovered.
  • Remove form the oven and allow to cool 15 minutes on a rack. Remove from the loaf pan carefully by pulling up on the overhanging foil. Allow to rest another 10 minutes and slice with a serrated knife.

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large mixing bowl, combine ground meat, minced mushrooms, bread crumbs, onion, ketchup, eggs, and salt and pepper. Mix well. Spread 1/2 of the mixture into the bottom of a loaf pan. Arrange 6 whole mushrooms stem down into meat. Top with rest of meat, patting to combine both halves.
  • Bake for 1 hour and 45 minutes, or until done. Internal temperature should measure 160 degrees F (70 degrees C) when done.
