Baked Cheesy Pasta With Wild Mushrooms image

A more sophisticated take on mac and cheese, this golden-topped casserole has roasted wild mushrooms for a deep, earthy character, and melted fontina for the gooey factor. You can use any kind of mushrooms here. If you can't get wild ones (also called exotic, and most of them are actually farmed), use whatever is available. The key is to roast them until they are well browned and crisp at the edges so the flavor intensifies. Serve this as a vegetarian main course or as a rich side dish to roast chicken or meats. You can assemble the casserole the day before. Just add a few minutes onto the baking time if it's cold from the fridge when you pop it into the oven.

1 pound mixed wild or cultivated mushrooms, such as oyster, maitake and shiitake
3 tablespoons extra-virgin olive oil
1/2 teaspoon kosher salt, more as needed
1/2 teaspoon black pepper, plus a few grinds
2 fresh rosemary branches
1/2 pound orecchiette, farfalle or other short pasta
3/4 cup heavy cream
1/2 cup fresh ricotta
5 ounces fontina cheese, grated (1 1/4 cups)
2 ounces Parmesan, grated (1/2 cup)
1 teaspoon finely chopped fresh sage
1 garlic clove, finely grated

Steps:

  • Heat the oven to 450 degrees. Trim the mushrooms and cut into 1-inch pieces. Toss with the olive oil, the salt, a few grinds of pepper and the rosemary. Spread on a large baking sheet and roast, tossing once or twice, until golden brown and crisped around the edges, 15 to 18 minutes. Discard rosemary.
  • Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook for at least a few minutes less than the package directs. (You want the pasta very al dente; it will finish softening in the sauce.) Drain well.
  • Turn oven up to 500 degrees. In a large bowl, stir together the cream, ricotta, fontina, Parmesan, sage, pepper, garlic and a pinch of salt. Stir in the pasta and mushrooms. Arrange in a shallow 2-quart gratin dish or 9- by 13-inch pan. Bake until cheese is melted and bubbly and browned in spots, 10 to 15 minutes.

2 small shallots, finely diced
2 cloves garlic, finely chopped to a paste
1 1/4 pounds cremini mushrooms, thinly sliced
1/2 cup dry white wine

1 pound cavatappi pasta (or other curly pasta)
5 to 6 cups whole milk
3 tablespoons canola oil
1 small head cauliflower, cut into florets
6 tablespoons unsalted butter, plus more for buttering dish
1/4 cup all-purpose flour
8 ounces fontina cheese, grated
8 ounces Monterey Jack cheese, grated
1/4 cup grated asiago cheese
1/4 cup grated Parmigiano-Reggiano
Pinch of grated nutmeg
1 stick (8 tablespoons) unsalted butter, cut into pieces
2 teaspoons anchovy paste
1/4 cup Calabrian chiles in oil, patted dry and chopped
1 clove garlic, finely chopped
1 1/2 cups panko breadcrumbs
1/4 cup chopped fresh flat-leaf parsley
Kosher salt and freshly ground black pepper
White truffle oil, for drizzling
Fresh parsley leaves, for garnish

Steps:

  • For the mushrooms: Heat 1 tablespoon of the oil in a large saute pan over medium heat. Add the shallots and cook until soft, about 4 minutes. Add the garlic and cook for 30 seconds.
  • Increase the heat to high, add the remaining 2 tablespoons of oil and heat until it begins to shimmer. Add the mushrooms and cook until golden brown and soft, stirring occasionally, about 8 minutes. Add the wine and cook until reduced; season with salt and pepper. Set aside.
  • For the mac and cheese: Preheat the oven to 350 degrees F.
  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until al dente, about 9 minutes. Drain and rinse with cold water to stop cooking. Transfer to a large bowl.
  • Put the milk into a medium saucepan and bring to a simmer over low heat.
  • Heat the oil in a large ovenproof saute pan over medium heat until it begins to shimmer. Add the cauliflower, season with salt and pepper and toss to coat. Cook until slightly soft, about 5 minutes. Add 1 cup of water, cover loosely with foil and cook in the oven until soft.
  • To make the bechamel, melt the butter in a large saucepan over medium heat. Whisk in the flour and cook for 1 minute. Slowly whisk in 4 cups of the milk and cook, whisking constantly, until thickened and the flour taste has been cooked out, about 7 minutes, adding more milk if the sauce is too thick.
  • Remove the cauliflower from the oven and transfer to a blender with 1 cup of the milk and blend until smooth. Add the cauliflower puree to the bechamel and stir until combined. Slowly whisk in the fontina, Monterey Jack, asiago and Parmigiano-Reggiano until smooth, adding more hot milk if too thick. Mix in the nutmeg. Pour the sauce over the pasta, add the mushrooms and stir well to combine.
  • Butter a 10-inch baking dish, transfer the pasta mixture to it and bake until bubbly and the top is lightly golden brown, about 30 minutes.
  • For the breadcrumb topping: While the mac and cheese is baking, melt the butter in a large saute pan over medium heat. Add the anchovy paste and cook for 1 minute. Add the chiles and garlic and cook for 30 seconds. Add the breadcrumbs and cook until lightly toasted, about 5 minutes. Stir in the parsley and season with salt and pepper.
  • Serve the mac and cheese topped with some of the breadcrumbs and a drizzle of white truffle oil. Garnish with parsley leaves.

10 ounces dried wide pasta (I used mafalda)
½ cup unsalted butter (divided)
20 ounces cremini mushrooms (sliced)
½ cup finely chopped shallots (about 2 large shallots)
⅓ cup dry white wine
1 teaspoon salt
8 ounces Fontina cheese (diced small)
½ cup chopped parsley
Salt and freshly ground pepper (to taste)

Steps:

  • Cook the pasta until al dente, according to the package directions. Drain and reserve ¾ cup of the cooking water.
  • Meanwhile, heat 2 tablespoons of the butter in a large skillet over medium-high heat. Sauté half of the mushrooms, stirring occasionally, for 7 minutes; transfer to a plate. Repeat with 2 tablespoons butter and the remaining mushrooms, transferring them to the plate with the rest of the mushrooms.
  • Add the shallots to skillet and cook until tender, about 5 minutes. Add the mushrooms back to the skillet, along with the wine; cook until the wine is reduced by half, about 3 minutes. Add the reserved cooking liquid and bring to a boil. Stir in the remaining 4 tablespoons butter and season with 1 teaspoon salt.
  • Reduce the heat to low and add the cooked pasta, cheese and parsley, tossing with the sauce until the pasta is coated and the cheese starts melting. Season with salt and pepper to taste. Serve immediately.

4 cups whole milk, at room temperature

  • For the topping: Mix the panko, Parmesan, salt and pepper together in a small bowl. Set aside.
  • For the pasta: In a large pot of boiling salted water, cook the pasta for 10 minutes (it should still be firm as it will continue to cook in the sauce). Drain and set aside, reserving about 1 cup of the pasta-cooking water.

8 ounces macaroni (uncooked)
3 tablespoons butter
1 medium onion (chopped, I use a large onion)
2 tablespoons flour
1/2 teaspoon salt
2 1/2-3 cups 1% low-fat milk
1/2 lb Fontina cheese (shredded)
1/2 cup parmesan cheese (freshly grated)

Steps:

  • Butter 2 quart casserole dish.
  • Cook macaroni, drain, rinse under cold water, and drain again.
  • Add macaroni to casserole dish.
  • Sauté onions in butter, over medium heat, until translucent and tender.
  • Stir in flour and salt, stirring constantly.
  • Slowly add milk stirring constantly to blend.
  • Remove from heat.
  • Add Fontina cheese, and 1/4 cup of the Parmesan cheese.
  • Mix together gently, and pour into casserole dish, and mix with macaroni.
  • Top with remaining 1/4 cup Parmesan cheese.
  • Bake at 350° F 30-35 minutes, or until heated through and golden on the top.

This mushroom macaroni and cheese is the ultimate comfort food dish.

1 pound cavatappi pasta
4 slices thick-cut bacon
16 ounces cremini mushrooms, finely chopped
1 teaspoon kosher salt, divided
1/4 cup dry white wine (I used Chardonnay)
2 tablespoons flour
2 tablespoons unsalted butter
2 cups 2% milk
1/2 cup heavy cream
16 ounces gruyere cheese, grated
1 tablespoon chopped fresh parsley

Steps:

  • Preheat the oven to 375 degrees. Bring a pot of water to a boil and cook the pasta for approximately half the time as indicated on the box. Drain and return to the pot.
  • In a large pan, cook the bacon over medium-low heat until it's crispy and has released its fat. Remove the bacon, leaving the fat in the pan, and set aside. Adjust the heat to medium and add the mushrooms to the pan and stir them around to coat them in the bacon fat. Season them with a 1/2 teaspoon of salt and cook them for about 10-12 minutes, or until they are nicely golden brown and have released their moisture. Add the wine to the hot pan and, using a spatula or wooden spoon, scrape up all the browned bits off the bottom of the pan. Let the wine cook off and then transfer the mushrooms to a plate.
  • In the same pan, melt the butter over medium heat. Add the flour and whisk until there are no lumps. Add the milk and cream, whisking continuously, and warm it slowly without letting it boil (lower the heat if necessary). Once the milk and cream are warmed through and the sauce has started to thicken, add the cheese (reserve 1 cup of cheese for the topping) and stir well until it's completely melted into the sauce. Add the mushrooms and stir to combine.
  • Add the pasta to the mushrooms and cheese sauce either by transferring the pasta from the pot to the skillet or, in case your skillet isn't big enough to hold all the pasta, transfer the sauce to the pot with the pasta. Stir to coat the pasta in the sauce. Transfer the pasta and cheese sauce to a baking dish.
  • Chop the crispy bacon and scatter it over the top of the macaroni and cheese. Sprinkle the remaining one cup of cheese over the top. Cover the dish with tin foil and bake at 375 degrees for 20 minutes. Remove the foil and bake another 10 minutes. Garnish with the fresh parsley and serve.

1/2 small onion (, finely diced)
8 oz sliced fresh mushrooms
3 cloves garlic (, minced or pressed)
3 Tablespoons unsalted butter
Juice of 1 lemon
1/3 cup reduced-sodium chicken broth
1 teaspoon salt
Black pepper
Basil leaves (, sliced)
4 boneless skinless chicken breasts
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/4 teaspoon black pepper
4 thin slices Prosciutto ((1 per chicken breast))
4 thin slices Fontina cheese ((about 1 ounce per chicken breast))

Steps:

  • Using a large non-stick skillet, heat the 2 Tablespoons of olive oil over medium high heat. Saute the onions until they begin to soften (about 3 minutes). Stir in the mushrooms and continue to cook over medium-high heat until mushrooms are soft, about 7-8 minutes. Add the garlic and cook until fragrant, about 30 seconds.
  • Add the butter and pour in the lemon juice. Stir well, until the butter is completely melted. Add the chicken broth, salt and pepper. Let the sauce simmer until slightly thickened (about 8-10 minutes). Cover and keep warm until ready to use.
  • In a small bowl, combine the salt, oregano and black pepper. Sprinkle over both sides of the chicken breasts, to coat. Grill the chicken over medium high heat until cooked through (about 8-10 minutes per side, depending on the thickness of the chicken.)
  • Preheat the broiler (if your oven requires preheating) and adjust oven rack to the center position. Transfer the cooked chicken breasts to a sheet pan. Place one slice of prosciutto on top of each chicken breast, then follow up with a slice (or 1 ounce) of fontina cheese. Broil until the cheese is melted (only a few minutes).
  • To serve, place the chicken on a large serving platter and spoon the mushroom sauce evenly over top. Garnish with the sliced basil leaves.
