- Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water until al dente; drain.
- Meanwhile, heat olive oil in a large skillet over medium-high heat; add onion and garlic, and cook until golden brown. Mix in tomatoes, mushrooms, and spinach. Season with salt, pepper, and red pepper flakes. Cook 2 minutes more, until tomatoes are heated through and spinach is wilted. Reduce heat to medium, stir in pasta and feta cheese, and cook until heated through.

- Cook pasta according to package directions. Meanwhile, in a large skillet, saute the mushrooms, onion and garlic in butter until tender. Add the wine or broth, salt and pepper. Bring to a boil; cook, uncovered, over medium heat for 5-7 minutes or until liquid is evaporated. , Drain pasta. Stir into mushroom mixture; sprinkle with feta. Toss to coat.

MEATLESS BOWTIE PASTA WITH MUSHROOMS & FETA CHEESE
Great meatless meal or cut up and saute a chicken breast or two to switch it up. I created this recipe myself tonight. Sounded like a good blend so decided to try it. Putting it down to save , but thought I would share as well. I served this with garlic bread . It would be good with a green salad as well. I like to season with Mrs. Dash low sodium seasoning as we are trying to watch our sodium. I also use Smart balance Buttery Spread in place of the butter. Amounts are just estimates. You can add more or less of what you like for your own taste.

Steps:
- Cook pasta according to package directions.
- meanwhile, slice onion and saute in olive oil , season with pepper and salt.
- when onions are soft and carmelized remove from frying pan to bowl.
- saute washed mushrooms in 1 tablespoon butter or buttery spread.
- when mushrooms are sauted ,add onions back to pan and add sun dried tomatoes , feta cheese , olives , and garlic.
- mix well and keep warm while pasta finishes cooking.
- when pasta is finished , drain and put in large bowl.
- add 1 tablespoon butter to pasta and toss , add contents of frying pan.
- mix well.
- Sprinkle with parmesan cheese.
- serve.

- Heat oil in a small saucepan to 375 degrees F (190 degrees C).
- Spread bread crumbs into a shallow dish. Dip mushroom slices in beaten egg, dredge them in bread crumbs to coat, and cook them in hot oil until golden brown, about 5 to 6 minutes. Repeat until all mushrooms are cooked; drain on a plate lined with paper towels.
- Blend feta cheese and lemon juice in a blender. Stream water into feta mixture as it blends until you get a desirable consistency. Serve with mushrooms.

Steps:
- Heat oven to 180 degrees.
- Wipe mushrooms with a damp cloth and carefully scoop out the stems.
- Finely chop the mushroom stems.
- Heat butter in a frying pan over a medium heat and fry the garlic, shallot, mushroom stems and chillies until all juice has evaporated. About 7 minutes.
- Transfer to a medium sized bowl and let cool for a few minutes.
- Mix in feta, then add Parmesan, pepper and cayenne pepper, stirring well to combine.
- Fill each mushroom cap with the stuffing and place on a baking tray lined with baking paper.
- Bake 20 minutes.

- Clean the mushrooms. I avoid using water for this. Instead, use a clean kitchen towel to gently rub away any dirt. If there are any stubborn dirt bits then you can dampen the kitchen towel while rubbing but don't soak the mushrooms.
- Add the mushrooms, onion, garlic, and olive oil to the pan and toss well to coat everything well. Then add the fresh thyme to the center of the dish.I threw my garlic in as whole cloves that I 'smashed' once roasted.
