My grandmother often made this for my family at holidays and also just with good homemade meals. I hope you enjoy it as much as I have!

1 (16 ounce) package dry corn bread mix
2 tablespoons butter
½ cup chopped celery
1 small onion
2 eggs, beaten
2 cups chicken stock
2 tablespoons dried sage
salt and pepper to taste

Steps:

  • Prepare the dry corn bread mix according to package directions. Cool and crumble.
  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13 inch baking dish.
  • In a large skillet over medium heat, melt the butter and saute the celery and onion until soft.
  • In a large bowl, combine the celery, onions, 3 cups crumbled corn bread, eggs, chicken stock, sage and salt and pepper to taste; mix well.
  • Place into prepared dish and bake at 350 degrees F (175 degrees C) for 30 minutes.

4 cups 1-inch cubed cornbread
4 cups 1-inch cubed French bread
4 cups 1-inch cubed artisan/crusty bread such as ciabatta
2 pounds white button or cremini mushrooms
4 tablespoons olive oil
Kosher salt
1 pound Italian sausage
1 onion, large dice
5 Granny Smith apples, large dice
3 tablespoons brown sugar
1 cup white wine
32 ounces, low sodium chicken broth
2 teaspoons fresh rosemary leaves, minced
1/2 teaspoon ground sage
1/2 teaspoon ground thyme
1/4 teaspoon ground turmeric, plus more
Black pepper
Fresh parsley, minced

Steps:

  • Allow the cornbread, French bread and crusty bread to sit out on cookie sheets for several hours or overnight, until completely dried out.
  • Preheat the oven to 500 degrees F.
  • Wash the mushrooms thoroughly and pat dry with paper towels. Toss in a bowl with the olive oil and sprinkle with salt. Mushrooms will be very coated, but that's good! Divide the mushrooms between two sheet pans and roast in the upper half of the oven for at least 20 minutes, stirring once halfway through roasting. Remove from the oven when the mushrooms are deep brown. Set aside.
  • Turn the oven down to 375 degrees F.
  • In a large skillet, crumble and the brown sausage over medium-high heat. Remove the sausage from the skillet and set aside. Pour off any excess grease, and without cleaning the skillet, add in the onions and brown for 5 minutes. Increase the heat to high and add the diced apples, brown sugar and 1/2 teaspoon salt. Cook for 3 to 4 minutes, or until deep golden brown.
  • Decrease the heat to medium and pour in the wine (be careful if you're using an open flame). Stir and cook to reduce the liquid by half, 2 to 3 minutes. Pour the apple/onion mixture into a bowl and set aside.
  • Return the skillet to medium heat (again, without washing) and add the chicken broth, rosemary, sage, thyme, turmeric, 1/2 teaspoon salt and some pepper. Heat for a few minutes, then set aside.
  • Add the bread to a large bowl, then add the browned sausage, mushrooms and apple/onion mixture (and any juice that might have accumulated). Next, add the broth mixture gradually as you toss the ingredients, being prepared not to use all of the liquid according to your taste.
  • Check the seasonings at the end and add in minced parsley. Pour into a large baking dish (I used an iron skillet) and bake until golden brown on top, 20 to 25 minutes. (Or you can stuff the turkey if you're into that kind of thing.)

Southern Cornbread Dressing Recipe (2 batches)
1 sleeve of saltine crackers (crumbled)
2 stalks of celery (chopped)
1 medium sized green bell pepper (diced)
1 medium sized red bell pepper (diced1 large red onion, diced)
4 tbsp salted butter
1 lb cooked chicken (shredded)
3 fresh sage leaves (chopped)
1/2 tsp fresh thyme leaves (chopped)
1/2 tsp fresh rosemary leaves
1 tbsp minced garlic
2 tsp kosher salt
1 1/2 tsp ground black pepper
4 cups chicken broth
14.5 oz condensed cream of mushroom soup
1 large egg (lightly beaten)

Steps:

  • Preheat the oven to 350 F.
  • Remember to make the cornbread a day in advance ( to dry it out!).
  • The next day, crumble the cornbread into a large bowl, along with the crackers.
  • Pour in the chicken broth, and let sit for 10 minutes.
  • Meanwhile, toss the butter into a medium sized pan, and melt over medium heat.
  • Once the butter is melted, add in the onions, celery, and bell peppers.
  • Cook the vegetables until they soften, then add in the garlic, seasonings, and chopped herbs.
  • Turn the heat off, and stir the ingredients.
  • Add the cooked vegetables, chicken, and herb mixture into the large bowl with crumbled cornbread and crackers.
  • Add in the cream of mushroom soup, and the egg then fold the ingredients.
  • Add the mixture into a lightly greased or buttered 9 x 13 bake dish, and cover.
  • Let bake for 1 hour.
  • Remove from the oven, uncover, and bake for 30 minutes.
  • Let cool.
  • Serve & enjoy!

1/2 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda

1/4 cup plus 1 tablespoon olive oil, divided
1 tablespoon honey
1 tablespoon cider vinegar
CORN BREAD DRESSING:
1/2 pound bulk pork sausage
8 ounces sliced fresh mushrooms
3 celery ribs, chopped
1 large onion, chopped
1-1/2 cups soft whole wheat bread crumbs (3-4 slices)
3 large eggs, beaten
1 carton (32 ounces) reduced-sodium chicken broth
1 tablespoon minced fresh rosemary
1 teaspoon pepper

Steps:

  • Place a 10-in. cast-iron skillet in the oven; preheat to 425°. Whisk together first 5 ingredients. In another bowl, whisk milk, eggs, 1/4 cup olive oil, honey and vinegar; whisk into dry ingredients. Remove skillet from oven; lightly grease with remaining olive oil. Pour in batter. Bake until golden brown, about 15 minutes. Cool 10 minutes; remove from pan to a wire rack to cool completely. , Meanwhile, in a large cast-iron skillet, cook sausage over medium-high heat, crumbling meat, until no longer pink. Remove and drain. In same skillet, cook mushrooms, celery and onion until onion is tender, about 5 minutes. Not only that, but we completely eliminated the step of having to make cornbread first!

½ cup dried porcini mushrooms
1 cup hot tap water
¾ cup all-purpose flour
¾ cup yellow cornmeal
¼ cup white sugar
1 teaspoon fine salt
½ teaspoon baking soda
¼ teaspoon freshly ground black pepper
1 pinch cayenne pepper, or to taste
½ cup unsalted butter
2 large eggs
1 cup buttermilk
¼ cup milk
1 (16 ounce) package frozen corn, thawed and drained
¼ cup chopped green onions

Steps:

  • Place mushrooms in a small bowl, cover with hot water, and allow to soak until mushrooms have softened, about 30 minutes. Remove mushrooms from the bowl, squeeze to drain, and chop finely.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish with cooking spray.
  • Whisk together flour, cornmeal, sugar, salt, baking soda, black pepper, and cayenne pepper in a large bowl.
  • Melt butter in a large skillet over medium heat. Add chopped mushrooms and stir until lightly cooked and softened, 3 to 4 minutes. Remove from heat and allow to cool for 10 minutes.
  • Stir eggs, buttermilk, and milk into flour mixture. Add mushroom mixture and corn; stir until well mixed. Fold in green onions. Transfer batter to the prepared baking dish and tap on a flat work surface 2 to 3 times to remove any air bubbles.

6 tablespoons unsalted butter
5 cups crumbled Cornbread
5 shallots, finely chopped
1 rib celery, diced into 1/4-inch pieces
10 ounces wild mushrooms (chanterelles, oyster, and shiitake)
1 teaspoon fresh thyme, chopped
1 teaspoon fresh rosemary, chopped
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup dry white wine
1/3 cup heavy cream
1/3 cup Homemade Chicken Stock

Steps:

  • Heat oven to 425 degrees. Spread pecans on a baking sheet. Place in oven to toast until fragrant, about 6 minutes. Set aside.
  • Melt 2 tablespoons butter in a small skillet. Cut cornbread into 2-inch-thick slices. Place, cut side down, on a 17-by-12-inch baking sheet. Brush tops with melted butter. Toast cornbread until golden brown, 10 minutes. Transfer to a wire rack to cool.
  • Heat remaining 4 tablespoons butter in a medium skillet on medium high. Add shallots and celery. Cook, stirring occasionally, until softened, about 3 minutes. Add mushrooms, thyme, rosemary, salt, and pepper; cook until slightly softened, about 3 minutes. Add white wine; continue cooking until absorbed, about 1 minute. Add cream. 1/2 pound ground Italian sausage, casing removed, crumbled into small pieces
8 ounces white button mushrooms, thinly sliced

  • In a large bowl mix the cornbread and biscuit crumbs, add onion, celery, salt, pepper, sage, and mix well with a spoon. Melt butter and pour over mixture. Add broth and soup and continue mixing. Spray or grease a 2 quart casserole dish. Add stuffing and bake at 400 degrees for 35 minutes or until brown around the edges.
  • Note: Some people like to cook the onion and celery in butter before adding to the cornbread mix. I have tried it both ways and don’t see a lot of difference since you are going to bake it anyway. My family never noticed if I did this or not. You can do it whichever way you like.
  • Whisk together and heat in microwave about five minutes. (This gravy is great over mashed potatoes, dressing and any kind of meat and great if you need a quick gravy) Makes about 4 cups.
  • Boil giblets in water or broth until cooked. Remove and chop. I remove the skin from the neck and pull any meat off the bone. Discard neck bone. Put meat and giblets back in water or broth and add salt and pepper, flour and drippings. Continue cooking while stirring continuously with wire whisk until thickens. Serve over stuffing or dressing. Makes about 5 cups.
