1/4 teaspoon pepper
1 tablespoon canola oil
4 whole wheat hamburger buns, split
4 lettuce leaves
Sliced tomatoes and mayonnaise, optional

Steps:

  • In a large bowl, combine the first 9 ingredients. Shape into four 3/4-in.-thick patties., In a large cast-iron or other heavy skillet, heat oil over medium heat. Add burgers; cook until crisp and lightly browned, 3-4 minutes on each side. Serve on buns with lettuce and if desired, tomato and mayonnaise.

2 bacon strips, finely chopped
2 cups chopped fresh mushrooms
1/4 cup chopped onion
1/4 cup chopped sweet red pepper
1/4 cup chopped green pepper
2 pounds lean ground beef (90% lean)
2 tablespoons steak sauce
1/2 teaspoon seasoned salt
4 slices provolone cheese, halved
8 kaiser rolls, split

Steps:

  • In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Cook and stir mushrooms, onion and peppers in bacon drippings until tender. Using slotted spoon, remove to a small bowl; cool completely. Stir in bacon., In a large bowl, combine beef, steak sauce and seasoned salt, mixing lightly but thoroughly. Shape into 16 thin patties. Top eight of the patties with cheese, folding cheese to fit within 3/4 inch of edge. Spread with mushroom mixture. Top with remaining patties, pressing edges to enclose filling., Grill burgers, uncovered, over medium-high heat or broil 4 in. from heat 5-6 minutes on each side or until a thermometer inserted in meat portion reads 160°. 1 1/4 pounds ground beef (preferably chuck)
Kosher salt and freshly ground pepper
2 teaspoons extra-virgin olive oil, plus more for brushing
1 small red onion, halved and thinly sliced
1 8-ounce package sliced mixed mushrooms
1 tablespoon Worcestershire sauce
1/4 cup ketchup
2 teaspoons dijon mustard
4 thin slices gruyere cheese
4 sesame buns, split and toasted
Boston or Bibb lettuce, for topping
Potato chips and/or pickles, for serving (optional)

Steps:

  • Preheat the broiler and line the bottom of a broiler pan with foil. Lightly mix the beef with 1 teaspoon salt and 1/2 teaspoon pepper in a large bowl. Gently form into 4 patties, about 3/4 inch thick. Arrange on the prepared pan and brush both sides with olive oil. Broil until browned, about 4 minutes per side for medium rare.
  • Meanwhile, heat 2 teaspoons olive oil in a large skillet over medium-high heat. Add the onion and cook, stirring, 2 minutes. Add the mushrooms and cook 2 more minutes. Add the Worcestershire sauce and cook until the vegetables are tender, about 2 more minutes. Season with salt and pepper and remove from the heat. Combine the ketchup and mustard in a small bowl and set aside.
  • Top each patty with one-quarter of the mushroom mixture and 1 slice cheese. Return to the broiler to melt the cheese, about 1 minute.
  • Spread the buns with the ketchup mixture; sandwich with the patties and some lettuce. Serve with chips and/or pickles.

PORTOBELLO MUSHROOM CHEESEBURGERS



Portobello Mushroom Cheeseburgers image

Large portobello mushrooms are perfect burger material, just the right size for a meaty and satisfying meal. I like them best with Gruyère cheese on top.

1 tablespoon red wine vinegar or sherry vinegar
Salt
freshly ground pepper to taste
1 garlic clove, green shoot removed, minced or pureed
3 tablespoons extra virgin olive oil
4 large portobello mushrooms, stems removed
1 6-ounce bag baby spinach
4 1/2-ounce slices cheddar or Gruyère cheese
Whole grain hamburger buns and the condiments of your choice
condiments of your choice

Steps:

  • Whisk together the vinegar, salt, pepper, garlic and olive oil. Toss with the mushroom caps in a wide bowl. Rub the marinade over the tops of the mushroom caps and place them on a baking sheet, rounded side up. Let sit for 15 minutes. Don't rinse the bowl, because you'll use any oil and vinegar residue to dress the spinach.
  • Bring a large pot of water to a boil, salt generously and blanch the spinach for 20 seconds. Transfer to a bowl of ice water, drain and squeeze dry. Chop coarsely and toss in the bowl with the residue of the marinade. Set aside.
  • Prepare a medium-hot grill, heat a heavy skillet over medium-high heat, or preheat an electric grill or panini pan on medium-high. Season the mushrooms as desired with salt and pepper. Place the mushrooms on the hot grill or pan, rounded side down. Cook them for about 6 to 8 minutes, depending on the thickness, until lightly browned, and moist. Turn over and cook for another 6 minutes. Turn over for a minute to reheat the top, then flip back over and place the cheese on top. Continue to cook until the cheese melts. If using a panini grill, cook 6 to 8 minutes. Open the grill and place the cheese on top. Wait for it to melt. Place a mound of spinach on the bottom half of each hamburger bun and place the mushrooms, rounded side up, on top of the spinach. Top with your choice of condiments and serve.

2 to 3 tablespoons extra virgin olive oil, as needed
1/2 cup finely chopped onion
1 1/4 pounds mushrooms, sliced
Salt to taste
2 garlic cloves, minced
2 teaspoons chopped fresh sage
Freshly ground pepper
1 1/4 cups cooked brown rice or barley
1/4 cup chopped fresh parsley
1 egg
3/4 cup cooked chickpeas (1/2 can)
2 ounces Gruyère cheese, sliced very thin with a cheese slicer

Steps:

  • Preheat the oven to 375 degrees. Heat 1 tablespoon of the oil over medium heat in a heavy ovenproof skillet and add the onion. Cook, stirring, until it is tender, about 3 minutes. Turn the heat up to medium-high and add the mushrooms. Cook, stirring often, until the mushrooms have begun to sweat and soften, about 3 minutes. Turn the heat back down to medium, add a generous pinch of salt, the garlic and sage, and continue to cook until the mushrooms are tender, about 3 minutes. Taste, adjust seasoning and remove from the heat.
  • Place half the mushrooms in a food processor fitted with the steel blade and the other half in a large bowl, along with the rice or barley and the parsley.
  • Add the chickpeas and egg to the food processor and purée with the mushrooms. Stir into the rice and mushroom mixture and mix everything together. Season to taste with salt and pepper.
  • Begin heating a heavy ovenproof skillet over medium-high heat. Seasoned cast iron is good, and so is a heavy nonstick pan that can go into the oven. Moisten your hands lightly and shape 4 large or 6 smaller patties. Add the remaining tablespoon of oil to the pan and, working in batches if necessary, cook the burgers for 2 minutes on one side, until nicely browned. Carefully turn the patties over and place the pan in the oven. Bake 5 minutes. Remove the pan from the oven and lay thin slices of Gruyère on top of each burger. Return to the oven and bake for another 5 minutes, or the patties are lightly browned and the cheese has melted. Remove from the heat and serve, with or without buns, ketchup and the works.

¼ cup balsamic vinegar
2 tablespoons olive oil
1 teaspoon dried basil
1 teaspoon dried oregano
1 tablespoon minced garlic

Steps:

  • Place the mushroom caps, smooth side up, in a shallow dish. In a small bowl, whisk together vinegar, oil, basil, oregano, garlic, salt, and pepper. Pour over the mushrooms. Let stand at room temperature for 15 minutes or so, turning twice.
  • Preheat grill for medium-high heat.

1 large white onion, coarsely chopped
1 large red bell pepper, coarsely chopped
1 medium green bell pepper, coarsely chopped
2 cloves elephant garlic, chopped
4 ounces white Cheddar cheese
1 ounce Asiago cheese
2 pounds lean ground beef (90%)
1 teaspoon sea salt
½ cup panko bread crumbs
16 slices hickory-smoked bacon
1 (8 ounce) package shiitake mushrooms, sliced
8 slices American cheese
8 each Kaiser rolls, split

Steps:

  • Combine onion, bell peppers, and garlic in the bowl of a food processor; pulse until finely chopped but not quite pureed.
  • Transfer onion mixture to a saute pan over medium heat; cook until reduced to a moist paste, about 20 minutes. When done, set aside to cool.
  • Grate Cheddar and Asiago cheeses into a bowl using the finest teeth of a box grater.
  • Place ground beef in a large mixing bowl. Add onion mixture and salt; mix thoroughly by hand until evenly combined. Add grated cheese mixture, a bit at a time, and mix until thoroughly combined. Add panko and mix until evenly distributed. Form into 8 balls and press into patties, using a hamburger maker if you have one. Wrap patties in waxed paper and refrigerate for at least 4 hours, but preferably overnight.
  • Remove burgers from the refrigerator. Preheat an outdoor grill for 375 degrees F (190 degrees C) and lightly oil the grate.
  • While the grill is preheating, cook bacon in a large skillet and over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels.
  • Drain all but 1 tablespoon bacon grease from the skillet and add mushrooms. Saute over medium heat until soft, about 5 minutes. Set aside.
  • Cook burgers on the preheated grill until no longer pink in the center, about 6 minutes per side. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). During the last few minutes of cooling, add 2 slices bacon and 1 slice American cheese to each burger.
  • Remove burgers from the grill. Place on Kaiser rolls and add mushrooms.

8 ounces ground beef
4 ounces white button mushrooms, trimmed and finely chopped
4 ounces cremini mushrooms, trimmed and finely chopped
1 small onion, chopped
1 tablespoon all-purpose flour
2 teaspoons paprika
1 teaspoon mustard powder
1/2 teaspoon garlic powder
Kosher salt and freshly ground pepper
6 tablespoons ketchup
2 cups low-sodium beef broth
3/4 cup half-and-half
2 cups elbow macaroni (about 8 ounces)
4 ounces mild yellow cheddar cheese, shredded (about 1 cup)
Chopped fresh parsley and chopped dill pickles, for topping

Steps:

  • Heat the olive oil in a medium Dutch oven over medium-high heat until shimmering. Add the beef, mushrooms and onion and cook, stirring often, until the mushrooms release their liquid. Let simmer, undisturbed, until the liquid is cooked off, about 5 minutes. Continue to cook, stirring, until the mushrooms and beef are browned, 1 to 2 more minutes.
  • Add the flour, paprika, mustard powder, garlic powder, 1 teaspoon salt and a few grinds of pepper to the pot; stir to combine with the beef and mushrooms. Stir in 1/4 cup ketchup. Add the beef broth, half-and-half and 1 cup water. Bring to a simmer and add the macaroni. Adjust the heat so the sauce is simmering and cook, stirring occasionally, until the pasta is al dente, about 8 minutes.
  • Reduce the heat to low and stir in the cheese and the remaining 2 tablespoons ketchup. Remove from the heat and let sit for a few minutes so the sauce thickens slightly. Serve with chopped parsley and pickles.

Vegetable oil (for grill and drizzling)
1 small onion, trimmed, sliced crosswise into 4 rounds
Freshly ground black pepper
8 thin slices Muenster
4 potato buns
4 Tbsp. mayonnaise
4 Tbsp. curry mustard (such as Brooklyn Delhi) or other mustard
Bread-and-butter pickles and shredded iceberg lettuce (for serving)

Steps:

  • Pulse mushrooms with ½ tsp. Diamond Crystal or ¼ tsp. Morton kosher salt in a food processor until very finely chopped. (Alternatively, finely chop mushrooms by hand, then toss with salt in a medium bowl and let sit 2 minutes.) Transfer mushrooms to a clean kitchen towel, gather ends together, and wring over bowl to remove as much moisture as possible. Reserve liquid for another use.
