MUSHROOM BACON

Mushroom Bacon image

Caramelized, crispy mushrooms take on the meaty flavor of bacon in this recipe. Put a few slices on toasted bread with sliced tomato and crisp lettuce for a vegetarian BLT. Or serve alongside a bowl of oatmeal for a great breakfast to jumpstart your day.

Provided by Food Network Kitchen

Categories     side-dish

Time 1h55m

Yield Eight 1/4-cup servings

Number Of Ingredients 8

6 tablespoons vegetable oil
1 pound portobello mushrooms, cleaned and thinly sliced (about 1/8-inch thick)
2 tablespoons molasses
2 tablespoons low-sodium soy sauce
2 tablespoons brown sugar
1/2 teaspoon garlic powder
3/4 teaspoon smoked paprika
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 300 degrees F, line 2 baking sheets with parchment paper and line a third baking sheet or pan with paper towels. Brush each parchment-lined baking sheet with about 1 tablespoon of vegetable oil. Place the mushroom slices in a single layer, very close together, on the parchment and brush lightly with the remaining vegetable oil.
  • Bake the mushrooms until slightly softened and brown, 25 to 30 minutes, then flip the mushrooms over, rotate the pans in the oven and bake until the mushrooms are well-browned and the edges are crispy, another 30 to 35 minutes. Remove from the oven and transfer to the paper-towel lined baking sheet to dry for a few minutes. (Leave the oven on.)
  • In a large bowl, whisk together the molasses, soy sauce, brown sugar, garlic powder and paprika. Carefully toss the baked mushrooms in the marinade until evenly coated. Place half the marinated mushroom strips in a single layer (it's ok of they overlap) into a large metal steamer basket or colander that fits snugly into a large, heavy metal pot.
  • Prepare a stovetop smoker: Line the bottom of a large, heavy metal pot with foil. Place two large handfuls of applewood chips in the bottom of the pot. Place the pot over medium heat and use a lighter to light a few of the wood chips. Once the chips are smoking, place the mushroom-filled steamer basket or colander inside the pot, then place a tight-fitting lid on top. Allow the mushrooms to smoke for 5 to 10 minutes, depending on how strong of a smoky flavor you want. Repeat with the second batch.
  • After the mushrooms are smoked, return them to the baking sheets in a single layer. Sprinkle with salt and a few grinds of pepper and return to the oven until crisp, 3 to 5 minutes. Refrigerate in an airtight container for up to 5 days. Reheat in a low oven before serving.

Provided by souchefdozer

Categories     Meat and Poultry Recipes     Pork

Time 57m

Yield 8

Number Of Ingredients 10

7 strips thick-cut bacon
1 onion, chopped
1 (8 ounce) package baby bella mushrooms, sliced
3 tablespoons red wine
8 bakery-style hamburger buns, split
2 pounds ground beef
1 tablespoon sea salt
1 tablespoon garlic powder
1 tablespoon ground black pepper
8 slices pepper jack cheese

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon strips on paper towels, reserving 1 tablespoon of grease in the skillet. Chop bacon into large chunks.
  • Saute onion and mushrooms over medium-high heat in the same skillet until golden brown, about 8 minutes. Add wine and reduce heat to medium, stirring frequently, until wine reduces by half, about 5 minutes. Remove onion mixture from heat.
  • Preheat an outdoor grill for medium heat and lightly oil the grate. Place hamburger buns on grill until lightly toasted, 2 to 3 minutes.
  • Shape ground beef into 8 patties. Sprinkle salt, garlic powder, and ground black pepper over patties.
  • Cook patties on the preheated grill until browned on one side, about 6 minutes. Flip patties, top each with one slice of cheese and continue grilling until no longer pink in the center, about 6 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C).
  • Transfer burgers to toasted buns. Place some of the onion mixture on top using a slotted spoon. Add chunks of bacon.

  • In a medium bowl, mix together the olive oil, soy sauce, maple syrup, and liquid smoke. Add the sliced mushrooms to the bowl and gently toss to evenly coat the mushrooms.
  • Heat a large skillet or non-stick frying pan over medium-high heat. When the pan is hot add the mushrooms and any leftover marinade. Tip: If your pan is not that large, you may want to work in batches as you will get the best results if the mushrooms are in a single layer on the bottom of the pan. Fry 5 - 10 minutes letting them get golden on one side before flipping. Try not to stir the mushrooms too much as letting them rest will allow them to really brown up. It may get a little smoky, so be sure to turn on your hood fan. Remove from the pan and enjoy!

  • For the bacon jam: In a frying pan over medium heat, fry bacon until the fat has rendered off and it is starting to brown. Remove the bacon to a bowl, then remove all but 1 Tbsp. of bacon fat from the frying pan. Add the onion and shallot to the pan and cook until they are softened and translucent. Add to the pan the coffee, cider vinegar, brown sugar and maple syrup. Bring mixture to a boil, then reduce heat to medium-low. Add bacon back to the pan and stir to coat. Simmer, stirring regularly, on medium low until most of the liquid has evaporated and it is thick and syrupy, 5-10 minutes. Use immediately or remove to a bowl and allow to cool slightly, then cover and refrigerate until needed.
  • For the Herb Mayo: Combine all ingredients in a small bowl. Allow to stand at room temperature while you prepare the burgers or cover and refrigerate if making ahead.
  • For the burgers: Heat grill to medium-high. Brush portobello mushrooms with olive oil and season with salt and pepper. Place mushrooms on grill with the round top side up. Grill for a couple of minutes, then flip. Fill mushroom with bacon jam and continue grilling a couple of minutes more. Move mushrooms to top tray. Top with one or two slices of provolone cheese. • To serve: Spread some of the herb mayo on both top and bottom of burger bun. Place some leaf lettuce on the bottom piece of bun. Top with mushroom. Place top of bun on. Enjoy!

  • In a bowl or shallow dish, mix the buttermilk with the hot sauce well. Should be a lovely shade of pink. Place the onions into the buttermilk mixture and make sure they’re submerged. Cover tightly and place in the fridge to get happy for at least 3 hours, longer is better.
  • Mix the flour, cornmeal, panko together well. Add a tbsp of dried parsley. Liberally season the flour with your seasoning of choice.
  • When you’re ready to batter up your onion rings: lift them out with a fork and toss into the flour mixture. Make sure they’re evenly coated. Do this with every ring, then place into the refrigerator for about 20 minutes (no longer than 10 minutes in the freezer) to help them set up and prevent your flour mixture from floating off into the oil.
  • When ready to fry, heat your oil to 375 degrees. Remove the onion rings from the freezer and gently place into the oil and fry until golden brown. Immediately season with salt when you take them out of the oil.
