CREAMY MUSHROOM AND LEEK PASTA



Creamy Mushroom and Leek Pasta image

If you haven't tried leeks, they have the texture of artichoke when cooked and a hint of sweet onion flavor. They add color, a healthy boost, and fantastic flavor to this pasta.

2 Tbsp olive oil
2 large leeks (stems removed, thinly sliced)
1/2 lb mushrooms (white or brown will do just fine)
3 garlic cloves (pressed)
1/2 cup reduced sodium chicken broth
1 1/2 cups heavy whipping cream
2 Tbsp chopped Dill (fresh or frozen (use parsley if you don't have access to dill))
1/2 tsp salt (or to taste)
1/8 tsp pepper (or to taste)
Parmesan to serve
12 oz of your favorite pasta (cooked in salted water according to package instructions, drained & rinsed.)

Steps:

  • Cut off the root hairs and most of your green stems. Keep the stems for making stock. This part is edible when you cook it for longer periods of time.
  • Cut your leeks in half lengthwise and then half each stock again so you have 4 long quarters. Finley slice the leeks and rinse in cold water to get rid of any dirt in the leek (leeks hide dirt very well). Drain well.
  • Heat a large pan over medium/high heat. Add 2 Tbsp olive oil and the finely chopped leeks. Saute 2 minutes.
  • Cut mushrooms in half if they are small and into quarters if they are larger. Add halved/sliced mushrooms and 3 pressed garlic cloves. Saute uncovered, stirring often for 8 minutes or until mushrooms are soft.
  • Stir in 1/2 cup chicken broth and 1 1/2 cups heavy whipping cream.
  • Add 2 Tbsp chopped dill, 1/2 tsp salt (or to taste) and 1/8 tsp pepper. Simmer uncovered another 5 minutes for the sauce to thicken up a little.
  • Pour over your favorite cooked pasta. This would work over just about any noodles. I served it over angel hair pasta (my favorite). Sprinkle with parmesan if you like :)

12 ounces mezzi rigatoni (or other short pasta)
4 slices bacon, cut into 1/2-inch pieces
1 bunch leeks (white and light green parts only), halved lengthwise, thinly sliced and rinsed well
Freshly ground pepper
3/4 cup heavy cream
1/3 cup grated parmesan cheese, plus more for topping
Chopped fresh parsley, for topping

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1 cup of the cooking water; drain the pasta.
  • Meanwhile, cook the bacon in a large skillet over medium heat, stirring occasionally, until crisp, about 8 minutes. Remove with a slotted spoon and drain on paper towels; pour off all but 1 tablespoon of the drippings from the skillet.
  • Add the leeks to the drippings in the skillet. Season with 1/2 teaspoon each salt and pepper and cook, stirring occasionally, until soft, about 3 minutes. Add the heavy cream and cook until it begins to thicken, about 2 minutes.
  • Add the pasta to the skillet along with the parmesan, half of the bacon and 1/2 teaspoon pepper; toss to coat, adding enough of the reserved pasta cooking water to loosen. To serve, top with the remaining bacon, more parmesan and parsley.

1/2 lb spaghetti (or linguini)
1/4 cup extra virgin olive oil
2 ounces diced bacon
2 cups sliced mushrooms (see first line of directions)
2 teaspoons capers, drained
2 cloves garlic, minced
1/4 teaspoon salt
1/4 teaspoon hot pepper flakes
2 tablespoons chopped fresh basil

Steps:

  • Note: use any type of mushrooms you like, or a combination; try button, cremini or shiitake.
  • Cook pasta according to package directions in a large pot of boiling salted water; cook until al dente then drain well; place in a serving bowl and reserve.
  • Meanwhile, in a large skillet over low heat, heat one tbsp of the olive oil.
  • Add bacon and mushrooms to skillet and cook, stirring, until browned.
  • Add remaining oil to skillet, then the capers, garlic, salt and hot pepper flakes.
  • Cook, stirring, for about 10 minutes or until garlic is just slightly golden.
  • Stir in basil (you can also substitute fresh parsley, for a different taste) and toss with cooked pasta.
  • Serve with parmesan cheese on the side.

300g leek, halved and finely sliced
8 rashers smoked streaky bacon, sliced
400g pasta shapes (we used penne)
100g herb & garlic soft cheese (we used Boursin)

Steps:

  • Heat the oil in a large non-stick frying pan. Add the leeks and 2 tbsp water, and cook for about 10 mins until very soft. Add the bacon, turn up the heat and fry until cooked.
  • Meanwhile, cook the pasta following pack instructions. Drain and reserve a mug of the cooking water.
  • Spoon cheese into the leek and bacon mix, adding some of the reserved cooking water. Season and stir gently over a low heat until melted. Toss through the cooked pasta, adding a little more cooking water, if needed, to help the sauce coat the pasta.

1 pound pappardelle or fettuccine
1 cup finely grated Parmesan or Grana Padano

Steps:

  • Heat oil and butter in a large heavy pot over medium heat. Add bacon and cook, stirring often, until fat is rendered and bacon is crisp, 5-8 minutes. Add leeks and season with salt. Increase heat to medium-high and cook, stirring often, until leeks begin to brown, 5-8 minutes. Add cream, thyme, and 1/2 cup water. Bring to a boil, reduce heat, and simmer, stirring occasionally, until sauce is thickened and coats the back of a spoon, 5-8 minutes.
  • Meanwhile, cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente. Drain pasta, reserving 2 cups pasta cooking liquid.
  • Add pasta, Parmesan, and 1 cup pasta cooking liquid to sauce and stir to coat. Increase heat to medium and continue stirring, adding more cooking liquid as needed, until sauce coats pasta.

3 leeks, trimmed
2 tbsp olive oil
400g mushrooms sliced
1 clove garlic, chopped
350g penne pasta
4 rashers Asda Back Bacon
200g pot Asda 50% Less Fat Soft Cheese
Dash of Tabasco (optional)
Garlic bread to serve

Steps:

  • Halve the leeks lengthways and rinse under cold water. Pat dry with kitchen paper then slice thinly.
  • Heat the oil in a large frying pan; add the leeks and stir to coat in oil. Cover and cook over a low heat for 5 minutes, stirring occasionally.
  • Add the mushrooms and garlic. Cook uncovered for 10-12 minutes stirring until the mushrooms are cooked and the liquid has evaporated.
  • Meanwhile, add the pasta to a pan of boiling water. Bring back to the boil, stir once and then boil gently uncovered for 10-12 minutes. Drain.
  • Grill the bacon until the fat is crisp, and then chop roughly.
  • Stir in the soft cheese into the vegetables. Add Tabasco (optional). Heat through, stirring gently. Add the pasta, toss to mix and sprinkle with the bacon. Serve with garlic bread.

This deeply satisfying pasta, brimming with rich umami, is made in just one pot, an approach that bolsters its flavors. Once the leek and mushrooms are caramelized and sticking to the pot, they're deglazed to lift all the extra depth from the bottom of the pan. (Use any liquid for deglazing, whether water, wine, stock, vinegar or tomato juice.) This recipe leaves the choice of mushrooms up to you: Cremini and shiitake are a good combination, but you could even use rehydrated porcinis. If you are craving greens to cut through the richness, stir a few handfuls of baby spinach into the pasta just before you turn off the heat.

1 leek, white part only, finely sliced (about 5 ounces)
2 garlic cloves, finely chopped
3 cups mixed mushrooms, such as cremini, shiitake or oyster, torn or sliced (about 6 ounces)
1 lemon, halved
1 pound short pasta, such as orecchiette, cavatappi, gemelli or penne
4 cups vegetable stock
2 tablespoons unsalted butter
1/2 cup chopped fresh parsley, plus more for garnish
Kosher salt and black pepper
1 cup whole-milk ricotta
1/2 to 1 teaspoon red-pepper flakes

Steps:

  • Heat a wide, deep 12-inch skillet or Dutch oven over medium-high. When hot, add the olive oil and leeks, reduce heat to medium and cook, stirring constantly, until softened and lightly golden, 5 minutes.
  • Stir in the garlic and mushrooms. Cook, undisturbed, for 2 minutes, then stir and cook, undisturbed, until the mushrooms start to caramelize and stick to the bottom of the pan, another 2 to 3 minutes. (This allows the water from the mushrooms to evaporate, encouraging caramelization.) Add the juice of one lemon half to deglaze the pan and stir to combine.
  • Add the pasta and stock; stir well. Cover with lid and cook on medium heat. Begin tasting pasta 10 minutes after you add it. (All pasta shapes and brands will have different cooking times. You want the pasta to be just tender.)
  • Once the pasta is cooked, turn off the heat and add the butter and parsley. Squeeze in the juice from the remaining lemon half and stir until butter is melted and dispersed. Season with salt and pepper.
  • To serve, top with ricotta, red-pepper flakes (to taste) and more chopped parsley.

LEEK, BACON AND MUSHROOM CARBONARA (NO CREAM)

Adapted from a Jamie Oliver recipe, adding bacon and mushrooms. Original recipe used spaghetti, but I prefer fettuccini. It doesn't really matter what you use, it's still delicious!

6 slices shortcut bacon
300 g mushrooms
2 large leeks
4 garlic cloves
30 g butter
1 1/2 tablespoons olive oil
4 sprigs fresh thyme (or 1/4 tsp dried thyme)
500 dried fettuccine pasta
60 g grated parmesan cheese or 60 g pecorino cheese, plus extra to serve
2 large eggs

Steps:

  • Cut the bacon into 1cm squares, and cut the mushrooms into 1.5 to 2 cm chunks. Trim, wash and finely slice the leeks, Peel and mince the garlic (or use 4 tsps. of pre-minced garlic from a jar). Pick the thyme leaves from the stalks, if using fresh. Trim, wash and finely slice the leeks.
  • In a large casserole dish or saucepan, fry the bacon over medium/low heat with a 1/2 tablespoon of oil for a few minutes. Then turn the heat up to medium/high and add the rest of the oil (1 tblsp). Once the oil has heated, add the mushrooms and sauté for 5 minutes or so. Remove the bacon and mushrooms and set aside.
  • Add the butter to the pan and when melted, add the leeks, garlic and thyme. Stir around, (wiping up any bits of bacon and mushroom stuck to the pan) and sauté for a few minutes. Add 400ml of hot water, cover, bring to boil and then turn the heat to low. Simmer gently for 30 mins, stirring occasionally to prevent sticking. (Add more water if it gets dry and sticks.).
  • After 30 minutes of simmering the leeks, stir in the bacon and mushrooms, cover again and continue to simmer on low for another 10 mins while you cook the pasta, stirring occasionally to prevent sticking. (Remove the lid to reduce the mixture if it looks too wet, and add more water if it gets dry and sticks.).
  • While the leek, bacon and mushrooms continue to simmer, cook the pasta in a large pan according to the packet instructions, then drain, reserving a half a cup or so of the starchy cooking water.
  • Season the leeks, bacon and mushrooms with sea salt and cracked black pepper and toss the drained pasta into the pan with the leeks etc. Stir thoroughly and set aside for 2 minutes, off the heat, to cool slightly, while you grate the cheese and lightly beat the eggs in a large mug (if the pan's too hot, it'll scramble the eggs; get it right and it'll be smooth, silky and deliciously elegant).
  • Stir the cheese into the beaten egg mixture and add a splash of reserved cooking water to loosen the mixture. Pour the mixture over the pasta, tossing vigorously (the egg will cook in the residual heat). Adjust the consistency with extra cooking water, if needed.
  • Serve in bowls with extra parmesan (and cracked black pepper, if you like).
