2 slices multigrain bread
1 pound ground turkey
6 white mushrooms, finely chopped
1 egg
2 green onions, finely chopped
3 slices cooked bacon, finely chopped, or more to taste
5 dashes hot sauce, or more to taste
½ teaspoon pureed garlic
salt and ground black pepper to taste

Steps:

  • Mince bread in a food processor and transfer crumbs to a bowl. Add turkey, mushrooms, egg, green onions, bacon, hot sauce, garlic, salt, and pepper. Mix well and divide into 4 portions. Form each portion into a patty.
  • Preheat a grill for medium heat and lightly oil the grate. Cook patties until no longer pink in the center, 12 to 14 minutes.

Let's face it: turkey burgers can be boring. I spiced these up with a Middle Eastern spice blend, called baharat, that is great to have on hand.

Yield Eight 4.5-ounce patties or six 6-ounce patties

Number Of Ingredients 20

1 pound ground turkey, preferably light meat
1 pound roasted mushroom base
1/2 medium onion, finely chopped
2 garlic cloves, minced or pureed
1/4 cup chopped fresh parsley
2 tablespoons chopped mint or dill
2 tablespoons chopped cilantro
Salt to taste
1 teaspoon baharat (see below)
1/8 to 1/4 teaspoon cayenne (more to taste)
1 egg
1 to 2 tablespoons canola or grapeseed oil for the pan
Hamburger buns (preferably whole wheat), lettuce, sliced tomatoes, and the usual burger fixings
Baharat
2 tablespoons black peppercorns
2 tablespoons allspice berries
1/2 teaspoon cumin seeds
1 teaspoon ground cinnamon
1/2 teaspoon freshly grated nutmeg
optional: paprika, coriander seeds, sumac, cardamom seeds

Steps:

  • To make the baharat, grind the peppercorns, allspice berries, and cumin seeds to a powder in an electric spice mill. Stir in the cinnamon and nutmeg. Store in a spice jar, away from light and heat.
  • In a large bowl, mix together the turkey, mushroom base, onion, garlic, chopped herbs, salt, baharat, cayenne and egg. Form 6 to 8 patties and place them on a plate or a lightly oiled sheet pan. Refrigerate for 30 minutes.
  • Preheat the oven to 425 degrees. Line a sheet pan with parchment. Heat 1 or 2 large, heavy skillets over medium-high heat and add enough oil to lightly coat the bottom (about 1 tablespoon). When the pans are hot, add the patties and cook for 4 minutes on each side. Transfer to the parchment-lined sheet pan and place in the oven for 7 to 8 minutes. Remove from the oven, let sit for a couple of minutes, and serve.

1 tablespoon Worcestershire sauce
1 teaspoon onion salt
pepper
1 tablespoon butter or 1 tablespoon margarine
1 cup sliced fresh mushrooms
4 hamburger buns

Steps:

  • Mix turkey, parsley, Worcestershire sauce and onion salt and pepper in large bowl.
  • Shape turkey mixture into 4 patties; set aside.
  • Melt butter in large skillet on medium heat.
  • Add mushrooms; cook and stir 2-3 minutes or until tender.
  • Remove mushrooms; cover to keep warm.
  • Add patties to skillet; cook on medium heat 12-14 minutes or until done, turning occasionally.
  • Place patty on bottom bun; add mushrooms on top of patty; add top bun.

1/4 cup chopped oregano
1 bay leaf
Salt

2 pounds ground turkey
8 hamburger buns
Romaine lettuce leaves
Thinly sliced red onion
Chunky Tomato Salsa Compote, recipe follows
1 cup chopped tomatoes
1/4 cup minced red onion
1/4 cup minced cilantro
1/4 cup minced green onions
2 tablespoons minced jalapeno
1 tablespoon honey
2 tablespoons vegetable oil
1/2 teaspoon salt
3 tablespoons lime juice

Steps:

  • To a hot saute pan over medium high heat, add the olive oil and butter and melt. Add garlic, onion, and bay leaf, and sweat for 1 minute. Add the mushrooms, season with salt and pepper, and cook until liquid is released and mushrooms are almost dry. Stir in the thyme and oregano. Remove from the heat and allow to cool. Remove the bay leaf.
  • Place the turkey in a large mixer and add the cooled mushroom mixture, mix well and season with salt and pepper. Form the mixture into 8-ounce patties. Pan fry or grill the burgers until cooked through. Serve on a bun with romaine lettuce, sliced red onions and Chunky Tomato Salsa Compote.
  • In a small saucepan, combine all of the ingredients and bring to a boil. Lower to a simmer and cook until most of the liquid has reduced.

CARAMELIZED ONION AND MUSHROOM TURKEY BURGER

4 small yellow onions ( peeled and sliced into half-moons)
2-3 tbsp olive oil
1 tbsp balsamic vinegar
1 lb cremini (baby bella) mushrooms ( cleaned and quartered)
2 tsp minced garlic
1 lb ground turkey
1 tsp Dijon mustard
1/2 tsp dried thyme
1/2 tsp dried sage
1/2 cup crumbled feta or blue cheese
Iceberg lettuce (for "lettuce bun")

Steps:

  • Start by caramelizing the onions, as this step can take up to half an hour. Heat 1 Tbs. olive oil in a large skillet over medium heat. Add onions, stir to coat with oil, and season with salt and pepper. Spread onions out evenly across the pan and let cook, stirring occasionally, until onions are soft and caramelized, about 25-30 minutes. Don't stir the onions too often so they can brown, but don't leave them alone long enough to burn or stick to the pan. You may need to reduce the heat or add a splash of water to deglaze the pan a few times to prevent onions from burning. Once they're done, set aside in a small bowl. This step can be done ahead of time and onions can be warmed up in the microwave before topping burger.
  • Prepare sautéed mushrooms. Stir in 1 tbs olive oil, balsamic vinegar, garlic, oregano, and mushrooms. Cook for 20 to 30 minutes, or until tender.
  • Prepare turkey burgers by gently mixing ground turkey, Dijon mustard, thyme, sage, and a sprinkle of salt and pepper in a bowl. Form into four patties, being careful not to overwork the mixture.
  • Heat a large skillet over medium-high heat and spray with cooking spray or drizzle with oil. Cook turkey burgers until cooked through (center no longer pink, juices run clear, internal temperature of 165°F), about 5 minutes per side. Add crumbled feta cheese to each burger about 1-2 minutes before it's done cooking so the cheese can melt slightly.
  • Top with caramelized onion and Mushrooms.
  • Serve in a lettuce bun or over a salad.

2 cups cremini mushrooms, finely chopped
1/4 cup finely chopped shallots
2 garlic cloves, chopped
1 1/4 pounds ground turkey (dark meat preferred)
1/2 cup Greek yogurt, plus extra for the buns
1/2 cup dry breadcrumbs
1 large egg, beaten
Kosher salt and freshly ground black pepper
4 brioche buns, split and toasted
4 slices ripe tomato
16 thin cucumber slices

Steps:

  • Add the oil to a medium skillet over medium-high heat. When the oil is hot, add the mushrooms and cook, without stirring, until the undersides are browned, 2 to 3 minutes. Stir and let brown on the other side, about 2 minutes, then reduce the heat to medium and add the shallots and garlic. Cook and stir until the shallots are softened, about 5 minutes. Remove from the heat, then cool the mixture.
  • Combine the turkey, yogurt, breadcrumbs, egg and cooled mushrooms in a large bowl. Season with salt and pepper. Mix together lightly with a wooden spoon just to combine; don't overmix. Form into four 1-inch-thick patties. Refrigerate for 2 to 3 hours and up to overnight.
  • Preheat a grill or grill pan to medium-high heat. Sprinkle the outsides of the patties with salt and pepper. Brush the grill grates with oil and grill the burgers until nicely marked, cooked through and the internal temperature reads 155 to 160 degrees F, about 6 minutes per side. Serve on the buns with additional yogurt, tomato and cucumber slices.
