MUSHROOM ORZO
After eating at an 'Italian' chain restaurant and loving this side dish, I went home and tried to recreate it. This is the recipe I finally came up with.

Steps:
- Melt 1/2 the butter in a skillet over medium heat. Stir in the onions, and cook until golden brown. Mix in orzo, mushrooms, and remaining butter. Cook and stir 5 minutes, until butter is melted and mushrooms are tender.
- Pour water and wine into the skillet, and bring to a boil. Reduce heat to low. Season with garlic powder, salt, and pepper. Cook 7 to 10 minutes, until orzo is al dente. Stir in the Parmesan cheese and parsley to serve.

Steps:
- Heat oil in a large heavy saucepan over medium-high heat.
- Saute onion and mushrooms until tender and golden brown.
- Pour in broth, and bring to a boil.
- Stir in orzo, reduce heat to low, and cover.
- Simmer until orzo is tender and liquid is absorbed, about 15 minutes.
- If after 15 minutes there is still liquid, remove cover, and cook until liquid is gone.
- Season with salt and pepper to taste.

- In a Dutch oven, heat butter over medium-high heat. Add mushrooms and celery; cook and stir 6-7 minutes or until tender. Add broth and bouillon; bring to a boil. Stir in orzo; return to a boil. Cook, uncovered, 7-9 minutes or until orzo is al dente, stirring occasionally. Remove from heat; let stand 5 minutes., Meanwhile, in a large bowl, whisk eggs, lemon juice and pepper. Gradually whisk in 1-1/2 cups of the hot broth; return all to pan, stirring constantly. Cook over medium heat until broth is slightly thickened, stirring occasionally. (Do not allow to boil.) Top servings with parsley.

- Heat the oil in a soup pot. Add the onions and mushrooms, and cook over medium heat 10-12 minutes until the vegetables are soft, stirring occasionally.
- Reduce the heat to low and stir in the flour.
- Add the diluted Glace de Viande® (or Essence de Champignon Gold®) in a steady stream, stirring continuously, so the stock absorbs the flour.
- Add the bay leaf. Bring the soup to a boil, stirring occasionally; then reduce the heat and simmer, covered, for 15 minutes.
- Add the orzo and simmer 6-8 minutes more, until the pasta is tender. Discard the bay leaf and season to taste with salt and pepper.

- SAUTE: Melt butter in a large stockpot or a 6-quart dutch oven. Add the mushrooms and sauté them for 3 minutes over medium-high heat before adding the onions, carrots, and celery. Then add 1 cup of water. Add the sour cream mixture to the soup, along with the half and half, and allow the soup to heat through gently; about 5 minutes. Taste and make sure the orzo is cooked all the way through, adjust with salt and pepper as needed. It’ll really depend on how salty your chicken stock was. If at any point the soup gets too thick, you can thin it out with additional stock, water, or half and half. Serve warm with bread on the side.
