1 (12 ounce) bag Birds Eye® Recipe Ready Mushroom Blend
1 tablespoon all-purpose flour

Steps:

  • Season steak, if desired, with salt and black pepper. Heat oil in large nonstick skillet over medium-high heat and cook steak, turning once, until desired doneness.* Remove steak and thinly slice.
  • In same skillet cook Recipe Ready Mushroom Blend, stirring occasionally, 6 minutes or until tender. Sprinkle with flour and continue cooking, stirring occasionally, until flour and mushrooms are starting to brown. Season with additional salt and black pepper. Steps:

  • Add sliced white mushrooms, chopped onions, butter and minced garlic to a large cast iron skillet.
  • Heat mushrooms over medium heat, stirring ingredients frequently until onions and mushrooms are soft and tender, which takes about 6-8 minutes.
  • Add 1 tablespoon of cooking sherry and 1 tablespoon soy sauce and mix well.

It is a variation of the dish which my mother made all my life and which I have continued to make my entire marriage. Since there are so few Swiss Steak recipes here with gravy I decided to share this one.

1 large round steak, about 1/2 inch thick
1 (2 ounce) can mushrooms, with liquid
1 large onion, sliced
water, as indicated in instructions
1 1/2 cups flour
1 1/2 teaspoons salt
1/2-1 teaspoon black pepper (according to taste desired)
1/4-1/2 cup vegetable oil, for browning the meat

Steps:

  • Cut meat into 6-8 large sized pieces (meat will shrink).
  • Mix the flour, salt, and pepper in a medium sized dish.
  • In a 12 inch skillet heat the vegetable oil until medium hot over medium high heat.
  • Dredge meat in the flour mixture well on both sides.
  • Brown the meat in the oil well on both sides.
  • There should be enough room in the skillet to brown all the meat at once.
  • Turn the heat down to medium low.
  • Pour the mushrooms and liquid over the meat.
  • Top the mushrooms with the sliced onions.
  • Cover and simmer 1 to 1 1/2 hours until the meat is tender.
  • NOTE**** add water 1/2 cup at a time about every 15 minutes to keep the meat cooking with moist heat.
  • When meat is tender turn off heat and remove meat from pan.
  • Add 3-3 1/2 cups of cold water to the remaining flour which wasn't using with dredging.
  • Stir well to remove lumps.
  • Slowly add to the drippings in the pan.
  • Stir constantly over medium heat until thickened.
  • If gravy is too thick add more water-- if too thin add more flour mixed with cold water.
  • Taste and add more salt, pepper/and or beef flavoring as desired.
  • Turn heat down to low and gently slide the meat back into the gravy.
  • Heat until the meat is hot again and serve.
  • Great with mashed potatoes or steamed rice.
  • OPTIONAL Hint: I often add a couple teaspoons of Kitchen Bouquet to the finished gravy to give it more color. I decided I should add a note about this in case others would like this helpful hint.

1 1/4 lbs cube steaks (may sub. round steak, pounded thin)
1/4 cup flour
salt and pepper
3 tablespoons olive oil
1/2 onion, sliced thinly
6 ounces button mushrooms, sliced

16 ounces chicken broth
1/4 cup red wine (optional)
2 garlic cloves, crushed
1 tablespoon dried parsley

Steps:

  • Combine flour, salt and pepper; dredge cube steaks. Heat oil in skillet and brown steaks on each side. Set aside and keep warm.

A classic Smothered Steak with Mushroom Gravy. You'll need mashed potatoes with this recipe.

2 1/4 pounds round steak (about 3/4″ thick)
heaping 1/2 cup flour
3/4 teaspoon seasoning salt; Try this home-made Seasoning Salt
1/2 teaspoon salt
1/4 teaspoon pepper
oil as needed (3 to 5 tablespoons)
1 large yellow onion, vertically sliced, about 3/8ths to 1/2 inch thick
1/4 cup Sherry or Red Wine
8 to 16 ounces mushrooms, sliced thickly
1 3/4 cups beef broth
1 tablespoon tomato paste
1 tablespoon Dijon mustard
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon thyme
3 tablespoons minced parsley (2 for the gravy, 1 for garnish)
1 tablespoon cornstarch mixed with 1 1/2 tablespoons water

Steps:

  • Mix together flour, seasoning salt, salt, and pepper on large plate and set aside. Cut round steak into serving pieces. Dredge steak in flour mixture (really press in well), then use the edge of a sturdy plate to pound the meat. Repeat this pounding process on both sides until the steak is about 1/2 inch thick and noticeably more tender. Sprinkle on a bit more flour if the beef becomes sticky and the coating of flour disappears. A meat mallet may be used to pound, instead, the large pointed side.
  • Set the Instant Pot to Saute. Once hot, add a tablespoon or two of oil. Add meat, working in batches, adding oil as necessary, browning each side until golden, removing and setting on a large plate or platter. (If, as you are browning, the fond begins to get dark, see note.)
  • Add the mushrooms, onions, and wine and cook for several minutes, scraping up the fond on the bottom, until the wine has nearly evaporated. Add the broth, tomato paste, Dijon, salt, pepper, thyme and two tablespoons of the parsley & gently whisk to mix together.
  • Nestle the meat back into the Instant Pot, along with any juices, turning and covering as needed so as much meat as possible is submerged and all has some sauce on top.
  • Hit the Cancel button on the Instant Pot. Add lid and move valve to sealed position. Press the Meat function (35 minutes on medium pressure.) When the 35 minutes are up, allow the Instant Pot to go to the Warm function and leave for 10 minutes. Release any remaining pressure by turning the valve to the open setting. Remove meat to a platter.
  • Set Instant Pot back to the Saute function, Normal setting. Mix the cornstarch with the tablespoon and a half of cold water. When the gravy comes to a boil in the Instant Pot, stir in the cornstarch mixture and continue to cook, stirring, for a minute or so until thickened.
  • Using a large slotted spoon, remove some of the mushrooms and onions and place over the steak on the platter. Pour some of the gravy over the meat, sprinkle with parsley and serve the remaining gravy on the side.

3 lbs beef round steak (cut 1 - 2 inches thick)
2 tablespoons butter or 2 tablespoons bacon fat (I often sub olive oil)
1 medium yellow onion, chopped
3/4 lb mushroom, thinly sliced
1/3 cup flour
1 cup beef stock
1 cup milk
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Preheat oven to 350 F (180 C).
  • In a large, heavy oven-proof skillet over moderately high heat, brown the steak on both sides in the fat.
  • Transfer to a plate and keep warm.
  • In the drippings in the skillet, saute the onion and mushrooms over moderate heat for about 5- 8 minutes, until limp and lightly browned.
  • Blend in the flour, add the stock, milk, salt and pepper, and heat, stirring constantly, until thickened and smooth- about 3 minutes.
  • Place the steak back in the skillet.

This is one of the first recipes I learned to cook when I was a teenager. Mom taught me to cook over the phone, after I got home from school every day. She was working and I didn't think about it at the time, but later I realized my calls were reassuring to her, since she knew I was safely home. Even when Mom told me how to do it, I nearly always tweaked it! Most of the time, it turned out okay. Mashed potatoes and biscuits are perfect with this, along with a vegetable.

1 (2 1/2 pound) tenderized round steak, cut into 6 pieces
salt and ground black pepper to taste
1 cup all-purpose flour, divided
1 teaspoon garlic powder, or to taste
½ cup cooking oil, divided
1 large onion, sliced
1 cup water
1 teaspoon beef base (such as Better than Bouillon®)
1 teaspoon Worcestershire sauce
2 cups milk

Steps:

  • Sprinkle each side of the round steak pieces with salt and pepper, rubbing seasoning into the meat.
  • Combine 1/2 cup flour and garlic powder in a 1-gallon resealable bag. Add steak pieces, seal bag, and shake to evenly coat all the pieces.
  • Heat 1/3 cup of oil in a large skillet over medium heat until hot. Add seasoned and floured steak pieces to the skillet in a single layer in batches and cook until browned, 4 to 5 minutes per side. Remove from the skillet and keep warm. Repeat with remaining pieces, adding more oil, if necessary, until all are browned.

2 tablespoons butter
6 to 8 ounces mushrooms (sliced)
2 tablespoons onion (finely chopped)
1/3 cup flour

Steps:

  • In a large heavy skillet over medium heat, heat olive oil, and butter. Saute the chopped onions and sliced mushrooms for about 5 minutes, until onions are tender. Remove onions and mushrooms; set aside.

This amazing entree amps up beef patties and smothers them in a wonderful gravy with mushrooms, onions, garlic and leeks. It's seasoned with Montreal Steak Seasoning, Worcestershire sauce and Kitchen Bouquet browning and seasoning sauce which make it so spectacular. Gluten free.

2 lbs. 93% or 96% lean ground beef (or ground sirloin)
2 large eggs
1/2 cup 4C Gluten Free Italian bread crumbs
1/2 cup grated parmesan cheese
1 tbsp. worcestershire sauce
2 tbsp. ketchup
1 tsp. sea salt
1 tsp. pepper
1/2 tsp. crushed red pepper flakes
1/2 tsp. thyme
1/2 tsp. marjoram
1/2 tsp. garlic powder
1 tsp. Montreal steak seasoning
butter or olive oil (for frying)
8 oz. mushrooms (sliced)
2 large white onions (sliced and separated into rings)
2 leeks (green top removed, sliced or diced)
3-4 cloves garlic (minced)
32 oz. beef stock
1/4 cup unsalted butter or olive oil ((1/2 stick butter))
2/3 cup gluten free flour
1 tbsp. worcestershire sauce
1/4 tsp. Montreal steak seasoning
1/2 tsp. sea salt
1/2 tsp. pepper
1/2 tsp. Kitchen Bouquet browning seasoning
fresh parsley (for garnish)

Steps:

  • Combine ingredients.
  • Form into 8 large oblong thin patties.
  • In a large 12" skillet brown patties over medium-high heat about 1-2 minutes per side.
  • Patties will not be cooked all the way through.
  • Remove patties to a greased 9x13" or 10x15" glass baking dish.
  • Allow steaks to rest while making gravy.
  • Preheat oven to 350°.
  • Pour gravy over top of steaks heaping mushrooms, leeks and onions over top of each steak.
  • Bake at 350° for about 20-30 minutes or until heated through.
  • Serve over mashed potatoes, cooked noodles or rice, as desired.
  • After removing browned patties to the baking dish, add ¼ cup butter or olive oil to skillet and reduce heat to medium or low-medium.
  • With a wooden spoon, scrape any bits of beef into the oil.
  • Add onions and cook about 8-10 minutes until they brown slightly but not caramelize.
  • Add garlic, leeks and mushrooms and sauté an additional 5-10 minutes until softened.
  • Stir in flour, Worcestershire sauce, Montreal Steak Seasoning and salt and pepper.
  • Begin adding beef stock slowly until worked into the gravy.
  • Continue cooking a few minutes until gravy thickens.
  • Remove from heat.
  • Pour gravy over top of Salisbury Steak patties being sure to heap the mushrooms, leeks and onions over top.
  • There should be enough to almost submerge the steak patties.
  • Bake at 350° for 20-30 minutes or until heated through.
  • Garnish with fresh parsley before serving over mashed potatoes.

  • Combine the flour and garlic powder together in a pie plate or large bowl. Generously season the steaks on both sides with salt and pepper. Dredge the steaks in the flour then place on a cutting board.
