CHEESY MUSHROOM CASSEROLE
This deliciously cheesy mushroom casserole is wonderfully flavored with onions, thyme, and melted gruyere.

Steps:
- Preheat your oven to 400 degrees F. Grease a 2-quart baking dish with olive oil.
- Heat the olive oil in a large, deep skillet over medium-high heat. Add the mushrooms, onions, and kosher salt. Cook, stirring occasionally, until the mushrooms have released their liquid and the liquids have mostly evaporated, about 10 minutes.
- Add the garlic, black pepper, and thyme. Cook, stirring, for one more minute. Remove from heat.
- Transfer the mixture to the prepared baking dish. Sprinkle it with the shredded cheese.
- Bake the casserole until hot and bubbly, about 15 minutes. Sprinkle with parsley and serve.

MUSHROOM AND FETA BREAKFAST CASSEROLE
I love the flavor of feta and mushrooms so when I found this recipe on the internet I thought it sounded so good. My only problem was that it served 8 and I needed to scale it down to serve 2, not a problem, just adjusted the ingredients and the size of the pan and of course the cooking time. I used low fat feta and it was delicious. This also freezes well. I just reheat gently in the microwave.

Steps:
- Preheat oven to 375.
- Spray 9 X 13 glass casserole dish with nonstick spray.
- Saute mushrooms in olive oil until they are softened but not completely cooked, about 5 minutes.
- Drain mushrooms if there is liquid in the pan, then spread evenly over bottom of casserole dish.
- Crumble feta over mushrooms.
- Beat eggs with cream, salt and pepper.
- Pour over mushrooms, then stir gently with a fork so that mushrooms and cheese are evenly distributed in the egg mixture.
- Bake 45 minutes, or until eggs are set and top is starting to brown.

- Preheat oven to 350°F (177°C).Line a microwave-safe plate with a paper towel. Place strips of bacon side-by-side on the plate. Cover with another paper towel. Microwave on high for 3-4 minutes. - Meanwhile, crack eggs into a medium mixing bowl and whisk vigorously for 30 seconds to 1 minute. Add ricotta and stir until well combined. Coarsely chop bacon and add to egg mixture. Add cheese, mushroom/onion mixture, jalapeños, herbes de Provence, and salt. Stir until well combined.
- Grease baking dish. Cooking spray is fine. Pour egg mixture into dish and bake for 50-55 minutes, or until mixture is mostly set. The residual heat from the oven will continue cooking the casserole for a while after it is removed from the oven.
