3 slices slab or regular bacon, cut into 1/4-inch pieces (1/2 cup)
2 garlic cloves, minced (2 teaspoons)
1 medium onion, thinly sliced (1 cup)
1 tablespoon unsalted butter
3 cups thinly sliced white or cremini mushrooms (10 ounces)
Coarse salt and freshly ground pepper
2 tablespoons heavy cream
1 teaspoon Dijon mustard
Pate Brisee for Mushroom-and-Bacon Tart
All-purpose flour, for surface
2 plum tomatoes, sliced 1/4 inch thick
3 ounces sharp cheddar cheese, coarsely grated (3/4 cup)
1 large egg, lightly beaten, for egg wash

Steps:

  • Preheat oven to 375 degrees. Cook bacon in a skillet over medium heat until crisp, about 8 minutes. Using a slotted spoon, transfer to a bowl. Add garlic and onion to skillet. Cook until onion is translucent, about 5 minutes. Add to bacon.
  • Return skillet to heat, and melt 1/2 tablespoon butter. Add 1 1/2 cups mushrooms and 1/4 teaspoon salt, and cook until golden on edges and softened, about 5 minutes. Transfer to a plate. Repeat with remaining 1/2 tablespoon butter and 1 1/2 cups mushrooms. Stir cream and mustard into last batch in skillet, and cook for 30 seconds. Add to bacon-onion mixture, along with first batch of mushrooms. Let cool.
  • Roll out pate brisee to a 12-by-18-inch rectangle (about 1/8 inch thick) on a lightly floured surface. Transfer to a parchment-lined baking sheet. Spread mushroom-bacon mixture over dough, leaving a 3-inch border. Tuck tomatoes into filling, leaving some poking out. Sprinkle with cheddar. Fold in edges to form a 6-inch-wide open-topped crust; brush crust with egg wash. Bake until golden brown and center is bubbling, about 55 minutes. Serve warm or at room temperature.

BRIE TARTS WITH BACON & CARAMELIZED ONIONS



Brie Tarts with Bacon & Caramelized Onions image

1 box puff pastry
Half sweet onion
6 slices bacon
3 sprigs of thyme
10 ounces double cream brie cheese
8 ounces mushrooms
2 tablespoons extra virgin olive oil
1 tablespoon butter
1 tablespoon brown sugar
1 teaspoon salt
1/2 teaspoom freshly ground black pepper

Steps:

  • Allow the puff pastry to defrost, about 45 minutes.
  • Preheat the oven to 375 degrees.
  • With a damp paper towel, clean the mushrooms and remove the stems.
  • Chop the mushrooms and thyme.
  • Slice the onion into 1/4 inch thick slices.
  • Heat 1 tablespoon olive oil and butter in a medium fry pan.
  • Cook the onions over medium heat until they start to brown, about 25 minutes. Add the brown sugar and cook until caramelized, about 20 more minutes. Remove to a bowl.
  • Cut the bacon into 1/2 inch pieces. In a medium fry pan, cook the bacon. Transfer to a paper towel to drain and remove the grease.
  • In the same pan, add olive oil. Cook the mushrooms, about 5-6 minutes. Add the thyme, salt and freshly ground pepper and cook for one more minute. Transfer to a bowl.
  • Remove the puff pastry from the box and lay flat on a clean surface.
  • Use a 3 inch cookie cutter and make rounds (about 9) per sheet. Place rounds on a baking sheet.
  • Using a fork, poke the center of each round, leaving a 1 inch border.
  • Cut small pieces of brie (about 1 inch) and place in the center of the puff pastry round.
  • Use a teaspoon measure and do one scoop of onions, one scoop of mushrooms and a piece of bacon piled on top.
  • Bake in the oven for 25 minutes, or until slightly browned on top.

1 large savory piecrust, more on this later
4 slice uncured thick cut bacon, diced
1/2 medium yellow onion, diced
2 clove garlic, minced
8 oz brown or white button mushrooms, stemmed and thickly sliced
8 oz chopped frozen spinach, defrosted
6 oz gruyère cheese, freshly grated
5 oz evaporated milk, 1 small can
4 large farm fresh eggs
1/2 tsp salt, kosher variety
1/2 tsp mustard powder
1/4 tsp white pepper, freshly ground
1 - 2 pinch nutmeg
OPTIONAL ITEMS
pecorino romano, freshly grated

  • 1. PREP/PREPARE
  • 2. Chef's Tip: One of the tricks to making a good quiche is the proper balance of liquids in the recipe. There are a lot of places that liquids can hide, and ruin the dish. So, we are essentially going to precook our veggies, and remove as much hidden moisture as possible.
  • 3. Gather your Ingredients (mise en place)
  • 4. Place your pie crust in a tart pan, and blind bake in a 350f (175c) oven until it begins to brown, about 10 - 12 minutes.
  • 5. Place the crust in the fridge, and move on to the filling.

  • 7. Add the bacon to a large skillet over medium heat.
  • 8. Cook until the bacon begins to brown, and renders its fat into the skillet, about 5 - 7 minutes.
  • 9. Remove the bacon with a slotted spoon, and drain on paper towels.
  • 10. Add the onions to the skillet, and cook them in the bacon grease, until they begin to soften, about 3 - 5 minutes.
  • 11. Add the garlic, and cook until fragrant, about 60 seconds.
  • 12. Add the mushrooms, and cook until they soften and release their moisture, about 5 - 7 minutes.
  • 13. Add the spinach, and continue to cook until most of the moisture has evaporated, about 3 - 5 minutes.
  • 14. Take the skillet off the heat.
  • 15. Place a rack in the middle position, and preheat the oven to 375f (190c).
  • 16. Grate the cheese.
  • 17. Chef's Note: You could use different cheeses; however, some cheese get very oily when cooked. I choose Gruyère because it is very stable when heated, and it is a perfect complement to the other ingredients in this recipe.
  • 18. Add the eggs, evaporated milk, salt, mustard powder, pepper, and nutmeg to a bowl, and whisk to combine.
  • 19. Add the cheese, milk/egg mixture to the skillet, and mix to combine.
  • 20. Remove the tart crust from the fridge, and add the filling.
  • 21. Add to the preheated oven, and bake until bubbly, and beginning to brown, about 35 - 40 minutes.
  • 22. Chef's Note: If you really want to give this recipe an added level of flavor, sprinkle a bit of freshly-grated Pecorino Romano on the top before placing it into the oven, and then sprinkle a bit more on when you take it out.
  • 23. PLATE/PRESENT

1 clove garlic, minced

1 sheet frozen puff pastry, thawed
2 tablespoons extra-virgin olive oil, divided
¼ pound thick-sliced bacon, chopped
2 cups thinly sliced red onions
1 (8 ounce) package sliced button mushrooms
1 tablespoon fresh thyme leaves
salt and ground black pepper to taste
½ cup ricotta cheese, drained
1 large egg yolk
1 cup grated Gruyere cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Unroll puff pastry onto a baking sheet. Score edges at 1/4-inch intervals using a paring knife or press edges using a fork. Return pastry to the freezer until you're ready to use it.
  • Heat a large skillet over high heat. Add 1 tablespoon oil and heat for 1 minute. Reduce heat to medium-high. Add bacon and cook until crisp around the edges but stiff soft in the center, 3 to 4 minutes. Reduce heat to low. Add onions, mushrooms, and thyme. Sprinkle with 1/4 teaspoon salt to help vegetables release water. Cook, stirring often, until vegetables begin to wilt and most of the water has evaporated, 5 to 7 minutes. This savory version from Dorie Greenspan's "Everyday Dorie: The Way I Cook" is filled with a mix of sauteed bacon, leeks, and mushrooms tossed with fresh herbs, grated Parmesan, and best of all, chopped walnuts -- both the flavor and crunch are unexpected.

1 1/2 cups unbleached all-purpose flour
2 tablespoons sugar
1/2 teaspoon fine sea salt
1 stick cold unsalted butter, cut into 16 pieces
1/4 cup ice water
4 slices bacon
1 tablespoon extra-virgin olive oil, plus more for drizzling
1/2 pound mushrooms, such as white, cremini, wild, or a mix, trimmed and coarsely chopped
2 leeks, white and light-green parts only, split, washed, and thinly sliced (or 1 large sweet onion, such as Vidalia, thinly sliced, rinsed, and patted dry)
1 clove garlic, finely chopped
Fine sea salt and freshly ground pepper
3 tablespoons dry white wine
2 tablespoons heavy cream
3 tablespoons chopped walnuts
1/4 cup finely grated Parmesan
Leaves from 2 thyme sprigs

Steps:

  • Crust:Pulse flour, sugar, and salt in a food processor until combined. Add butter and pulse until mixture resembles coarse meal and there are some small flake-size pieces and some larger pea-size pieces. Add a little of the ice water and pulse; add some more and pulse; continue until all the water is in. Now work in longer pulses, stopping to scrape sides and bottom of bowl if needed, until dough forms bumpy curds that hold together when pinched.
  • Turn dough out onto a clean work surface and gently knead to bring it together. Gather into a ball, flatten into a disk, and place between two large sheets of parchment. Roll out dough to a 12-inch circle. Slide dough, still between sheets of parchment, onto a baking sheet or cutting board and refrigerate at least 2 hours or, well wrapped, up to 3 days. (Dough can also be frozen, well wrapped, up to 2 months.)
  • When you're ready to use the dough, let stand on counter for a few minutes, until it's pliable enough to lift and fold without cracking.
  • Filling:Place bacon in a heavy skillet and cook over medium heat, turning occasionally, until crispy and golden brown on both sides. Transfer to a paper towel-lined plate, pat dry with more paper towels, and let cool completely. Finely chop bacon or cut into slender strips. Pour off all but 1 tablespoon fat from skillet; set skillet aside.
  • Preheat oven to 400 degrees with rack in center.
  • Pour oil into skillet with bacon fat and heat over medium. Add mushrooms, leeks or onion, and garlic; season lightly with salt. Cook, stirring, until vegetables are softened, about 5 minutes. (Mushrooms will release liquid, and then, as you continue to cook, take it up again.) Add wine and cook, stirring and scraping bottom of skillet, until it evaporates, 1 to 2 minutes. Pour in cream and cook, stirring, until mostly absorbed. Remove from heat; stir in bacon, pepper (to taste), walnuts, 2 tablespoons cheese, and thyme. (Filling can be made ahead and refrigerated, covered, up to 3 days.)
  • Peel top sheet of parchment off dough; leave dough on bottom sheet of parchment and keep on baking sheet. Scrape filling onto dough; using a spatula, spread into a 9-inch circle. Lift the bare border of dough and fold over filling. As you fold, dough will pleat on itself (don't worry about being neat or getting everything even). (Galette can be made up to this point and refrigerated for a few hours before baking; bake straight from refrigerator.)
  • Bake until crust is deeply golden and filling is hot, 30 to 35 minutes. Transfer sheet to a wire rack and sprinkle remaining 2 tablespoons cheese over the filling, and if desired, the crust. Drizzle with oil, if desired. Let cool about 10 minutes or let cool to room temperature, then cut with a pizza wheel and serve. Galette is best served within a few hours of baking.

Steps:

  • Preheat oven to 200C/fan 180C
  • Make the pastry by rubbing the butter into the flour to resemble breadcrumbs. Stir in about 8 tbsp of fridge cold water and bring together to a ball using your hands.
  • Chill in the fridge for 10 minutes.
  • While the pastry is chilling finely slice the onions and place in a pan with some butter or oil and gently soften and allow to caramalise, will take about 20 minutes. Set aside to cool.
  • Take the pastry from the fridge, roll out on a lightly floured surface and line a large greased tart case. Prick with a fork and lay over a sheet of greaseproof paper or foil and cover with baking beans or rice and cook in the centre of the oven for 20 minutes.
  • While this is cooking cut the bacon into smallish pieces and fry in a pan with a little oil until cooked and crisp, then add to the onions. In the same pan add the sliced mushrooms and fry slightly to crisp up then cook down until fully cooked with a little butter, worcetser sauce, a thyme sprig and seasoning. Once cooked add to the bacon and onions and sprinkle in half the chopped parsley.
  • In a jug mix together the eggs, creme fraiche, a little seasoning and the rest of the parsley.
  • After the 20 minutes is up, remove the pastry case form the oven and take out the greaseproof paper and baking beans or rice. Put back into the oven for a furthur 15 minutes or until the pastry browns slightly and is cooked.
  • Once browned remove from the oven and fill the pastry case with the onion, bacon and mushroom mixture and pour over the egg mixture. Place back in the centre of the oven for around 30 minutes or until the filling is nearly set as it will finish cooking as it cools slightly. Once out of the oven let it stand to set for 5 minutes and serve warm in slices with salad and home made chips or roasted potatoes.
