SPINACH ALFREDO PASTA BAKE

Spinach Alfredo Pasta Bake image

Provided by Ree Drummond : Food Network

Categories     main-dish

Time 1h20m

Yield 8 servings

Number Of Ingredients 15

1 pound short pasta, such as penne or gemelli
1 cup ricotta cheese
2 tablespoons chopped fresh parsley
Zest of 1 lemon
7 tablespoons butter
One 10-ounce container mushrooms, sliced
Kosher salt and freshly ground black pepper
One 8-ounce bag fresh spinach
2 cloves garlic, minced
1 cup dry white wine or low-sodium vegetable broth
1 cup half-and-half
1/2 cup heavy cream
Low-sodium vegetable broth, as needed, for thinning
1 cup grated Parmesan
3/4 cup panko breadcrumbs

Steps:

  • Bring a large pot of water to a boil. Cook the pasta in the boiling water, draining it about 2 minutes before the time on the package. It should still be a bit firm. Rinse it in cold water to stop the cooking process and set aside.
  • Mix the ricotta with the parsley and lemon zest in a small bowl and set aside.
  • Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with 1 tablespoon of the butter.
  • In a large deep skillet over medium-high heat, melt 2 tablespoons of butter. Add the mushrooms and season with salt and pepper. Cook until the mushrooms have given up their liquid, 5 to 6 minutes. Add the spinach and garlic and cook, stirring frequently, until the spinach has wilted. Remove the vegetables and set aside, leaving any liquid in the skillet.
  • Add 2 tablespoons of butter to the skillet. Pour in the wine and let it bubble up and reduce for 1 1/2 to 2 minutes. Add the half-and-half and cream, season with salt and pepper and cook, whisking, until it's all combined. If it gets too thick as it cooks, you can thin it with a little vegetable broth. When the sauce looks good, remove it from the heat and stir in 3/4 cup of the Parmesan.
  • Melt the remaining 2 tablespoons butter in a small pan. Remove from the heat and stir in the breadcrumbs and remaining 1/4 cup Parmesan.
  • In the buttered baking dish, stir together the pasta, vegetables and sauce. (Add a splash of broth if needed). Add spoonfuls of the ricotta mixture, pushing them a bit into the pasta. Sprinkle the breadcrumb mixture over the top of the pasta. Cover and bake for 20 minutes. Uncover and cook until the top is brown and the mixture is bubbling, about 20 minutes more.

Creamy Mushroom Alfredo Pasta Bake image

Creamy and oh-so-cheesy, this mushroom Alfredo pasta bake is the stuff vegetarian dreams are made of. A meatless Alfredo that the entire family can enjoy, this mushroom pasta bake can be on the table in less than an hour.

Provided by Alice | Skinny Spatula

Categories     Vegetarian

Time 55m

Number Of Ingredients 15

400 g (14 oz) penne or another type of short pasta
2 tablespoon olive oil
1 large onion, finely chopped
30 g (1 ounce) dried porcini mushrooms, rehydrated in hot water for at least 30 minutes
300 g (10 oz) chestnut mushrooms (can replace with Forestiere or Portobello)
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
4 cloves of garlic, minced
100 ml (1/2 cup) white wine
120 ml (1/2 cup) vegetarian stock (or mushroom stock)
250 ml (1 cup) double (heavy) cream
75 g (2.5 oz) grated Parmesan
60 g (2 oz) mozzarella cheese, grated
60 g (2 oz) mature cheddar, grated
1/2 bunch parsley, optional

Steps:

  • To make this vegetarian pasta bake, preheat the oven to 190C/375F. Boil the pasta in a large pot of salted water, two minutes less than recommended on the pack. Drain the pasta, reserving 1/2 cup of water.
  • Meanwhile, heat the olive oil in large pan on medium heat and add the chopped onion. Cook for 3-4 minutes, stirring occasionally, until it softens.
  • Add the garlic and cook for 1 minute until fragrant.
  • Next, add the porcini mushrooms and 2 tablespoons of the water they rehydrated in. Allow to bubble and add the other mushrooms. Cook for 3-4 minutes until the mushrooms are soft and tender.
  • Turn up a heat, add the white wine, and allow it to bubble for 2 minutes, then turn the heat back to medium.
  • Add the stock, cream, and half of the parmesan to the pan. Stir well until everything's combined.
  • Transfer the drained pasta to the pan and stir together until covered in the creamy sauce. If the sauce is too thick, use some of the reserved pasta water.
  • Transfer everything to a baking dish, sprinkle the remaining parmesan, mozzarella and cheddar on top, and bake for 25-30 minutes until the cheese melts and becomes golden.
  • Sprinkle with parsley (optional) and serve immediately.

MUSHROOM ALFREDO PASTA

Mushroom Alfredo Pasta image

Provided by Shiran

Number Of Ingredients 10

250 g/8 oz pasta ((fettuccine or penne are recommended))
1/4 cup (56 g/2 oz) unsalted butter
1 small onion (, finely diced)
3 cloves garlic (, minced)
300-400 g mushrooms ((portabella, cremini, champignon), thinly sliced)
salt and ground black pepper (, to taste)
1 1/2 cups (360 ml) heavy cream or half and half
pinch of nutmeg (, ground or freshly grated)
1/4 - 1/2 cup grated parmesan
2 tablespoons chopped fresh parsley leaves or chives (, for garnish, optional)

Steps:

  • In a large pot, bring 2-2.5 quarts/liters of water to a boil. Add 1/2 tablespoon salt, followed by the pasta. Cook until al dente (i.e., slightly firm to the bite, not crunchy nor soft). Drain well.
  • As the pasta boils, make the sauce: In a large skillet (large enough to accommodate the pasta), melt 2 tablespoons butter over medium or medium-high heat. Add onion and sauté until tender, stirring occasionally. Add garlic and mushrooms, and cook until mushrooms are tender, about 4-5 minutes. Season with salt and pepper to taste.
  • Add the rest of the butter and heavy cream, and bring just to a boil. Reduce heat and let simmer for several minutes, until sauce has thickened slightly. Stir in nutmeg. Add 1/4 cup parmesan, then more if desired. Adjust seasoning to taste. Stir in pasta and cook on very low heat, tossing to combine for 1 minute until warm.
  • Serve immediately. Garnish with parsley or chives if desired.

MUSHROOM ALFREDO PENNE BAKE

Mushroom Alfredo Penne Bake image

Healthy Mushroom Alfredo Pasta Bake with pan-roasted mushrooms, whole wheat penne pasta, creamy cauliflower sauce, and Gruyere cheese.

Provided by Pinch of Yum

Categories     Dinner

Time 45m

Yield 10

Number Of Ingredients 12

1 lb. whole wheat penne pasta
1 head cauliflower (about 6-7 cups of florets)
3 cups reduced sodium chicken broth, divided
3/4 cups milk
1/4 cup olive oil
1 teaspoon salt
2 cloves garlic
24 ounces fresh sliced mushrooms
4 tablespoons butter, divided
1 cup shredded Gruyere cheese
fresh sage, sliced into thin ribbons
extras: caramelized onions, bacon, sausage

Steps:

  • Bring a large pot of water to boil. Cook the pasta for 5 minutes - it should still be a little firm. Drain, toss with a drizzle of oil, and set aside.
  • Bring a large pot of water to a boil, add the cauliflower, and cook for 5 minutes until tender-crisp. Meanwhile saute the minced garlic with a tablespoon of butter. Using a slotted spoon, transfer the cooked cauliflower to a blender with 2 cups broth, milk, oil, salt, and sauteed garlic. Puree until very smooth. You might need to do this in batches.
  • Preheat the oven to 400 degrees. Heat the 3 tablespoons butter in a very large skillet. Add the mushrooms and saute until golden brown.
  • Toss the cooked pasta, cauliflower sauce, and mushrooms together. Add the remaining cup of broth to help the consistency stay saucy.
  • Transfer to a deep 9×13 baking dish. Sprinkle with cheese and bake uncovered at 400 for 10-15 minutes. Some of the moisture from the mushrooms will seep out - give it a quick stir to reincorporate it and make it creamy. Top with fresh sage ribbons.

  • Stir in cooked pasta. It may seem like there is a lot of sauce, but pasta will absorb a lot of it, making it perfectly creamy.

PASTA WITH CHICKEN AND MUSHROOM ALFREDO SAUCE

Pasta with Chicken and Mushroom Alfredo Sauce image

We like this pasta with chicken and mushroom Alfredo sauce as-is but you can tweak it any way you like by adding or taking away anything. I sometimes add peas. Serve with garlic or any good crusty bread. Good stuff!

Provided by Tess DeFevers Ehling

Time 40m

Yield 8

Number Of Ingredients 11

cooking spray
2 (6 ounce) skinless, boneless chicken breast halves
1 (16 ounce) package spaghetti
½ cup salted butter
2 cups sliced mushrooms
1 medium onion, chopped
2 cloves garlic, minced
1 (8 ounce) package cream cheese, softened
2 cups heavy cream
salt and ground white pepper to taste
¾ cup grated Parmigiano-Reggiano cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a baking pan with cooking spray, place chicken breasts in the pan, and cover with a lid or foil.
  • Bake in the oven until no longer pink in the center and the juices run clear, about 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove from the oven and shred with 2 forks.
  • While the chicken is roasting, bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
  • Melt butter in a frying pan over medium heat. Add mushrooms and onion; saute until tender, 5 to 7 minutes. Add garlic and saute until fragrant, about 1 minute. Reduce heat to medium-low and add cream cheese; stir until melted. Whisk in heavy cream and season with salt and pepper.
  • Add Parmigiano-Reggiano cheese, reduce heat to low, and simmer until all combined and creamy, about 3 minutes. Don't simmer for to long or over high heat; the sauce can break down and become curdled instead of creamy.
  • Drain pasta and add to sauce with shredded chicken.
