I loved tuna casserole as a kid and found myself craving it as an adult. However, the massive amounts of fat and salt in the traditional recipe were a turnoff healthwise, and it just didn't taste as good as I remembered. I reconfigured the recipe to include more vegetables and the result was delicious. -Rebecca Blanton, St. Helena, California

Number Of Ingredients 15

3 tablespoons butter, divided
4 medium carrots, chopped
1 medium onion, chopped
1 medium sweet red pepper, chopped
1 cup sliced baby portobello mushrooms
2 cans (5 ounces each) albacore white tuna in water, drained and flaked
2 cups fresh baby spinach
1 cup frozen peas
3 cups uncooked spiral pasta
1 tablespoon all-purpose flour
2/3 cup reduced-sodium chicken broth
1/3 cup half-and-half cream
1/2 cup shredded Parmesan cheese
3/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large skillet, heat 1 tablespoon butter over medium-high heat. Add carrots, onion, red pepper and mushrooms. Cook and stir until tender, 8-10 minutes. Add tuna, spinach and peas; cook until spinach is just wilted, 2-3 minutes. , Meanwhile, cook pasta according to package directions for al dente. Drain pasta, reserving 1 cup pasta water. In a large bowl, place pasta and tuna mixture; toss to combine. Wipe skillet clean., In the same skillet, melt remaining butter over medium heat. Stir in flour until smooth; gradually whisk in broth and cream. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes, adding reserved pasta water if needed. Stir in cheese, salt and pepper. Pour over pasta; toss to coat.

1 can water packed tuna 5-6 oz (drained)
3 cups egg noodles
1 tablespoon butter
1/2 onion diced
2 stalks celery diced
1/2 cup frozen peas and carrots
10.5 oz condensed mushroom soup
1/3 cup milk
1 cup cheddar cheese
Topping
1/2 cup panko bread crumbs
1 tablespoon butter melted
1 cup cheddar cheese
1 tablespoon fresh parsley (chopped (optional))

Steps:

  • Preheat oven to 425°. Combine topping ingredients and set aside.
  • Boil noodles al dente according to package directions. Drain and rinse under cold water.
  • In a large bowl combine noodles, onions celery, peas, soup, milk, cheese, and tuna. Mix well.
  • Spread into a 2qt casserole dish and top with the topping.
  • Bake 20-30 minutes uncovered.

1 can (10 3/4 ounces) Campbell's® Condensed Cream of Celery Soup (Regular or 98% Fat Free)
1/2 cup milk
1 cup Birds Eye® Sweet Garden Peas
2 tablespoons chopped pimientos
2 cans (about 6 ounces each) tuna, drained
2 cups medium egg noodles, cooked and drained
2 tablespoons dry bread crumbs
1 tablespoon butter, melted

Steps:

  • Heat the oven to 400 degrees F. Stir the soup, milk, peas, pimientos, if desired, tuna and noodles in a 1 1/2-quart baking dish. Stir the bread crumbs and butter in a small bowl. Bake for 20 minutes or until the tuna mixture is hot and bubbling. Stir the tuna mixture. Sprinkle with the bread crumb mixture. Bake for 5 minutes or until the bread crumb mixture is golden brown.

1 small onion, chopped
1-1/2 teaspoons vegetable oil
2/3 cup water
3 tablespoons Homemade Cream-Style Soup Mix
3/4 cup frozen chopped broccoli, thawed
1 can (6 ounces) tuna, drained and flaked
1/2 cup milk
1/4 teaspoon salt
1/8 teaspoon lemon-pepper seasoning
1-1/2 cups cooked rice
2 tablespoons slivered almonds, toasted

Steps:

  • In a small skillet, saute onion in oil until tender. In a microwave-safe dish, whisk together water and soup mix. Microwave, uncovered, on high for 1-1/2 to 2 minutes, whisking occasionally. Add soup to sauteed onions. Stir in the broccoli, tuna, milk, salt and lemon-pepper; bring to a boil. Reduce heat; simmer for 5 minutes or until broccoli is tender. Stir in rice. Cook and stir 2-3 minutes longer or until heated through. Sprinkle with almonds.

  • In a 9x13-inch baking dish, combine the macaroni, tuna, and soup. Mix well, and then top with cheese.

12 oz package of elbow macaroni
2 tablespoons of butter
1/2 cup diced onions
2 10.5 oz cans cream of mushroom soup
2 half cans of milk
12 oz velveeta cheese
12 oz can of tuna packed in water drained
1 teaspoon of salt
1/2 a teaspoon of black pepper
15 oz can of sweet peas drained
Lays potato chips

Steps:

  • Cook Macaroni according to the package
  • While the pasta is cooking in a separate pot cook the onions in the butter until they are translucnet
  • Once onions are cooked add soup then add a half a can of milk to each can , stir to get the thick soup off the side and pour it in the pot
  • Add the velveeta and stir while it melts
  • As it is cooking together add the drained tuna
  • Add salt and pepper
  • Once the cheese is completely melted add the peas
  • Add the drained cooked pasta while it is hot
  • Stir well until it is all mixed well
  • When serving add a handful of crushed lays potato chips ontop

2 (6 ounce) cans tuna (drained)
1 cup shredded cheddar cheese

1 cup mayonnaise
1 cup sour cream
4 ounces cream cheese, cubed small
1/2 teaspoon salt
1/2 teaspoon black pepper
2 ounces cheddar cheese, shredded
1/2 cup seasoned bread crumbs

Steps:

  • Preheat the oven to 350F Place pasta in a large pot of boiling water and cook according to package directions.
  • Meanwhile, In a large bowl, mix all tuna ingredients well. set aside.
  • When pasta is cooked, drain well, then add the hot pasta to the mayo mixture and stir well.
