TENDER CRISP SUGAR COOKIES
These no-roll sugar cookies are great for the holidays. Children like to shape the cookies into balls and dip them into the sprinkles!

Steps:
- Cream butter, shortening and sugars until light and fluffy. Beat in eggs and vanilla. Sift dry ingredients, add to creamed mixture; mix to blend.
- Shape dough into 1 inch balls. Dip in regular or colored sugar or decorator sprinkles. Place on lightly greased cookie sheet. Flatten slightly with the bottom of a water glass.
- Bake at 375 degrees F (190 degrees C) for 10-12 minutes. *Larger cookies bake at 350 degrees F (175 degrees C) for 15 minutes.

THIN AND CRISP CHOCOLATE CHIP COOKIES
Adding more granulated sugar gives this classic thin and crispy cookie its crunch.

- Preheat oven to 350 degrees. In a small bowl, whisk together the flour and baking soda; set aside. In the bowl of an electric mixer fitted with the paddle attachment, combine the butter with both sugars; beat on medium speed until light and fluffy. Reduce speed to low; add the salt, 1/4 cup water, vanilla, and eggs. Beat until well mixed, about 1 minute. Add flour mixture; mix until just combined. Stir in the chocolate chips.
- Drop heaping tablespoon-size balls of dough about 2 inches apart on baking sheets lined with parchment paper.
- Bake until cookies are golden brown 12 to 15 minutes. Remove from oven, and let cool on baking sheet 1 to 2 minutes. Transfer to a wire rack, and let cool completely. Store cookies in an airtight container at room temperature up to 1 week.

- 1. Beat the shortening and sugar together until very light and fluffy. Beat the eggs in one at a time, then add the milk and vanilla.
- 2. Sift together the flour and baking powder. Turn your mixer on low and add the flour mixture a cup at a time to the shortening/sugar mixture, mixing only until just incorporated. Dough will be very stiff. Chill the dough several hours, or even overnight.
- 3. There are two ways to finish these cookies. You can roll out portions of the dough (keep remaining dough chilled), use cookie cutters to cut out desired shapes, place on parchment lined baking sheets and bake at 325 until they just start to brown at the edges. Cool slightly, then remove to a rack to finish cooling. You can also just make balls out of the dough, then flatten them with a glass dipped in sugar. You will need to flatten them a LOT, they need to be pretty thin, maybe 1/4 inch. Sprinkle the cookies with regular or colored sugar before baking, if desired.

Cover and refrigerate 15-30 minutes or until easy to handle. , Preheat oven to 350°. On a floured surface, roll out dough to 1/8-in. thickness. Cut into desired shapes using a 2-in. cookie cutter. Place 2 in. apart on greased baking sheets. , Bake 10 minutes or until edges are lightly browned. Remove from pans to wire racks to cool completely.

MUM'S TENDERCRIPS COOKIES
When my friends came over after school, the first place they headed was my Mum's cookie jar. This recipe comes out perfect every time :) I experiment by adding craisins or other small pieces of dried fruit, but I still like the original chocolate chip version the best!

- Pre-heat oven to 350F Sift flour, baking soda and salt together in a container.
- Using a WOODEN spoon, in a large bowl, cream lard and butter together. Add sugars gradually, mixing together.
- Mix in eggs, water and vanilla.
- Gradually blend in dry ingredients. Add oats and chocolate chips last. Mix together well, but DO NOT beat to a pulp.
- Drop spoonfuls of batter onto greased cookie sheet. Bake at 350°F for 10 - 12 minutes.
- Let cookies sit on pan for a minute then remove from pan and allow to cool before you put these in a container.
