GLUTEN, DAIRY, AND EGG-FREE BREAD RECIPE



Gluten, Dairy, and Egg-Free Bread Recipe image

Number Of Ingredients 10

1 cup millet flour or millet/sorghum flour combination
1/3 cup cornstarch
1/3 cup tapioca starch
1/3 cup potato starch
1 1/4 teaspoons guar or xanthan gum
3/4 teaspoon salt
1 heaping Tablespoon sugar
2 1/4 teaspoon dry yeast
2 teaspoons olive oil
1 cup warm water (110°)

Steps:

  • Mix dry ingredients together. Quickly add olive oil and water. Stir until all ingredients are incorporated. Beat vigorously for three minutes (preferably with a stand mixer ).
  • Scrape batter into a greased loaf or baguette pan. Try to Mound the top a bit.
  • Let rise in a warm place for 40-50 minutes or until a little more than double in size.
  • Preheat oven to 400° and bake bread for 40-50 minutes. DO NOT use a convection oven which will cause the crust to brown too quickly.
  • When the bread is done, it should sound hollow when tapped on the sides. Or if you want to get a little more technical, the internal temperature should reach between 205° and 215°.
  • When done, immediately remove from pan and let cool on rack at least 10 minutes before slicing.
  • After that, your only challenge is to refrain from eating the whole thing (with butter of course), because seriously, it's that good.

1 teaspoon butter, or as needed
¾ cup brown rice flour
¼ cup tapioca starch
¼ cup potato starch
2 teaspoons active dry yeast
2 teaspoons guar gum
1 teaspoon salt
1 teaspoon baking powder
¼ cup quinoa
¼ cup sunflower seeds
¼ cup toasted almonds, chopped
¼ cup flax seeds
¾ cup warm milk (115 degrees F or 46 degrees C)
2 eggs
2 egg whites
2 tablespoons molasses
2 tablespoons agave nectar
2 tablespoons olive oil
2 teaspoons apple cider vinegar
1 teaspoon sesame seeds

Steps:

  • Butter and flour a 9x5-inch loaf pan.
  • Sift rice flour, tapioca starch, potato starch, yeast, guar gum, salt, and baking powder together in a bowl.
  • Place quinoa, sunflower seeds, almonds, and flax seeds in a coffee grinder. Grind until very fine. Mix into the flour mixture.
  • Combine milk, eggs, egg whites, molasses, agave nectar, olive oil, and vinegar in the bowl of a stand mixer fitted with the paddle attachment; beat on low until well blended. Pour in dry mixture slowly, beating on medium-high and pushing dough down with a spatula as necessary.
  • Scoop dough into the prepared pan, spreading it evenly with a wet spatula. Sprinkle with sesame seeds. Fill a large bowl with boiling-hot water and place it in a microwave. Rest a cooling rack on top of the bowl. Place pan on top and cover the dough. Let dough rise until it reaches the top of the pan, about 1 hour 30 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven until the top is golden and an instant-read thermometer inserted in the center reads 200 degrees F (93 degrees C), about 45 minutes. Let bread cool thoroughly before slicing with a serrated knife.

This is my son's favourite bread. He likes to eat it as soon as it's cooked or as toast the next day. It also makes an awesome salad sandwich. Various mehods of baking are given, choose a method that suits you.

2 cups water (may vary, use less to start)
1/3 cup oil (olive, canola or a mix of both)
1 teaspoon cider vinegar
1/3 cup brown rice flour
1/3 cup besan (chickpea or garbanzo flour)
1 1/3 cups rice flour
2/3 cup arrowroot
1 1/2 teaspoons xanthan gum
1 1/2 teaspoons guar gum
2 2/3 tablespoons sugar
1 teaspoon salt
1 1/2 teaspoons gluten free baking powder
4 teaspoons vegan egg replacer powder (or 3 eggs and reduce water by 3/4 cup)
1/3 cup soymilk powder (or dari free or almond meal)
3 teaspoons poppy seeds
3 teaspoons sesame seeds
3 teaspoons flax seeds (linseeds)
4 teaspoons sunflower seeds
2 1/4 teaspoons dried yeast granules

Steps:

  • BREADMAKER METHOD.
  • Sift and combine the all the dry ingredients except egg replacer powder.
  • In a separate bowl, whisk the egg replacer (or eggs)with about 1/2 a cup of the water, until frothy. Add remaining wet ingredients, withholding about 1/4 - 1/2 cup water, and combine.
  • Add the wet ingredients to the dry and mix together. Add extra water slowly, around 1 tablespoon at a time, until batter is the correct consistency - thicker than a cake batter, but not as thick as cookie dough. Spoon into the pan.
  • Set the breadmaker to the setting recommended by the instructions specific to your model. If there are no such instructions try either the 'Basic' setting or the 'Rapid' setting. If your breadmaker is programmable, set it to skip the second kneading, as this is not necessary for GF breads. Another option, for breadmakers with a 'Bake Only' setting, is use the 'Dough' setting and then the 'Bake Only'.
  • If your your breadmaker does a reasonable job of mixing, it is possible to add the wet ingredients to the pan and than add the combined dry ingredients (or vice-versa, depending on the model). If using this method, about 5 minutes into mixing you will need to check that all the flour has been mixed in thoroughly and, if not, scrape the sides and base and stir with a rubber spatula. At this time check the consistency and add extra water, 1 tablespoon at a time, if necessary. If the mixture is too wet, try adding a little extra flour.
  • Remove the bread from the machine as soon as it is cooked and don't leave in the machine during the 'Keep Warm' cycle. Turn out from pan after a few minutes and cool on a wire rack.
  • *If your breadmaker has a removable blade, you can also try this : Mix the batter until smooth, remove the blade from the pan, place the dough in the pan and cook normally. This way you avoid the big hole in the bottom of the bread and also avoid the second kneading.
  • HAND METHOD 1.
  • Sift and combine the dry ingredients except egg replacer powder.
  • In a separate bowl, whisk the egg replacer (or eggs) with about 1/2 a cup of the water until frothy. Add remaining wet ingredients (withholding a little water as explained above).
  • Add wet ingredients to dry and mix slowly. When combined beat on high until batter is smooth, adding more water slowly if required.
  • Spoon into a loaf pan. Cover with plastic wrap and place in a warm, draught free position to rise for about 1 hour. (If you can't find a warm position, a very low oven can be used.).
  • Remove plastic wrap, and bake at 190°C (375°F) for 40-50 minutes. (A skewer placed into the centre of the bread should come out clean.) Remove from pan and cool on a wire rack.
  • *If you find the bread is becoming too dark, you can loosely cover it with foil part-way into cooking.
  • HAND METHOD 2.
  • Dissolve 1 tablespoon of the sugar in 1/2 a cup of the luke warm water. Add the yeast and set aside to proof for 10 minutes.( The mixture should become frothy.).
  • Sift and combine the dry ingredients except egg replacer powder.
  • In a separate bowl, whisk the egg replacer (or eggs) with about 1/2 a cup of the water until frothy. Add remaining wet ingredients (withholding a little water as explained above). Add proofed yeast.
  • Add wet ingredients to dry and mix slowly. When combined beat on high until batter is smooth, adding more water slowly if required.
  • Spoon into a loaf pan. Cover with plastic wrap and place in a warm, draught free position to rise for about 1 hour. (If you can't find a warm position, a very low oven can be used.).
  • Remove plastic wrap, and bake at 190°C (375°F) 40-50 minutes. (A skewer placed into the centre of the bread should come out clean.) Remove from pan and cool on a wire rack.

Fluffy Multi-Grain Bread image

The many ingredients of this hearty bread make it a nutritious, satisfyingly delicious European-style offering. The flavor is enhanced when toasted for your morning breakfast! I've adapted it from a recipe found in a cooking magazine. My family prefers the bread made this way. It freezes well, too! Walnuts or Pecans work equally well. I've tried this with other yeasts, but Fleischman's works best due to its ability to proof the heavier texture of the bread.

1 1/4 cups multi-grain hot cereal
1 1/2 cups boiling water
1 cup cold water
5 tablespoons honey
4 tablespoons butter
1 (1/4 ounce) package yeast
3 cups flour
1 1/2 cups whole wheat flour
1/3 cup flax seed
1/3 cup salted sunflower seeds
1/2 cup chopped pecans
1 tablespoon salt
2 tablespoons vegetable oil

Steps:

  • In a large bowl, combine 7-grain hot cereal mix, 1 1/2 cup boiling water, 5 T. honey-4 T. butter, salt.
  • Stir. Cover (I use a dinner plate).
  • Let stand 1 hour.
  • Remove cover.
  • Add 1 cup cool water; stir to combine all ingredients.
  • Add yeast; stir to dissolve yeast.
  • Continue stirring to combine ingredients well; or use large mixer to mix well.
  • Mix just until combined.
  • Mix flours together in separate bowl.
  • Attach dough hook to mixer. Start on low speed.
  • Add flours to cereal mixture, one cup at a time.
  • Add flax, sunflower seeds, and nuts.
  • Continue mixing till dough cleans the sides of the mixing bowl (you may have to add a bit more flour).
  • Remove from mixer and place on floured bread board.
  • Knead 5 minutes.
  • Clean mixer bowl.
  • Add 2 T. vegetable oil to clean bowl, tipping so that oil covers the bottom and part-way up the sides of the bowl.
  • Place dough in bowl, then flip it over so that oiled side is on top.
  • Turn on your oven light (this provides the warmth to proof your dough.
  • Place bowl in the oven. Close the door.
  • Let rise till double (about 1 hour).
  • Remove from oven (leave the light on and re-close the door).
  • Place on floured bread board.
  • Separate in two pieces.
  • Knead each piece 5 minutes.
  • Form each into a cylinder, to fit the loaf pan.
  • Oil 2 loaf pans.
  • Place dough in loaf pans.
  • Return to oven. Close door. Leave the light on.
  • Let rise 1 hour or till dough mounds above the top of the pans.
  • Bake 35-40 minutes at 375°F.

  • Bake bread on gluten-free bread machine setting, 1 1/2 lb loaf, medium crust.

  • In a small mixing bowl, combine the honey and the hot water. Sprinkle in the yeast and give it a quick stir to combine. Allow to proof for 7 minutes (set a timer!) – NO more, NO less time. Make sure you have the other wet and dry ingredients mixed and ready to go when the 7 minutes are up!
