Mulled Wine, but Chilled image

Warming in all but touch, this drink is ideal for cusp season, when the days can feel like autumn in morning and summer by afternoon. Cognac anchors the drink, fresh lime brightens it, and a simple syrup steeped with ginger, cinnamon, clove and cardamom evokes a classic mulled wine. The simple syrup here makes extra and keeps for a month in the refrigerator. Add it to lemonade, drizzle it over oatmeal or substitute it for standard simple syrup in another cocktail to make it automatically cozy.

1 (5- to 6-inch) piece ginger
2 cinnamon sticks, lightly crushed
4 whole cloves
4 whole black peppercorns
3/4 cup granulated sugar
5 whole green cardamom pods, lightly crushed
Ice
1 1/2 ounces dry red wine, such as Pinot Noir, Gamay, or Grenache
1 ounce Cognac
1/2 ounce sweet vermouth
1/2 ounce fresh lime juice

Steps:

  • Place a coupe glass in the freezer to chill for at least 15 minutes and up to an hour. (Alternatively, fill the coupe with ice and water, stir for 30 seconds, pour out the ice and water, dry quickly, and pour in the drink into the now-chilled glass.)
  • Prepare the syrup: Gently run the ginger under water to remove any traces of dirt. If the ginger is thin-skinned, leave the skin on. Otherwise, peel. Use the larger holes on a box grater to grate the ginger, and add to a small saucepan. Place over medium-high heat.
  • Add 1 1/2 cups water, cinnamon sticks, cloves and peppercorns. Bring to a boil, then lower the heat and simmer on medium until the liquid reduces by about half and is very fragrant, about 20 minutes.
  • Add the sugar and cardamom, and stir until the sugar dissolves. Remove pan from the heat, and set aside to cool completely. Strain through a fine mesh sieve. This makes about 1 cup. Store in the refrigerator for up to 2 weeks. (You can use this in place of a standard syrup in another cocktail.)
  • Prepare the cocktail: In a cocktail shaker filled with ice, combine the wine, Cognac, vermouth, 1/2 ounce mulled simple syrup and lime juice. Shake and strain into the chilled glass.

750ml bottle red wine
1 large cinnamon stick, or 2 small ones
2 star anise
4 cloves
2 strips lemon zest, pared using a vegetable peeler
4 tbsp caster sugar

Steps:

  • Put the red wine, cinnamon, star anise, cloves, lemon zest and sugar in a large pan. Cook on a low heat for 10 mins.
  • Remove from the heat and cool, leaving to infuse for about 30 mins.
  • To serve, heat without boiling, stir in the sloe gin (if using, see tip below) and pour into mugs or heatproof glasses.

Choose a red wine that isn't bone-dry-a little fruitiness is just fine here. I like the inexpensive Zweigelt from Erdenlied for this, which conveniently comes in 1-liter bottles.

2 large oranges
4 1/4 cups/1 liter red wine
1 1/4 cups/10 ounces brandy
1/2 cup dark brown sugar
2 cinnamon sticks
6 whole cloves
3 cardamom pods, slightly crushed

Steps:

  • Using a peeler, remove the peel in strips from 1 orange then juice the orange. Slice the other orange into rounds and reserve for garnish.
  • In a nonreactive saucepan, combine orange peel, juice and the rest of the ingredients. Stir over medium heat until the sugar dissolves, about 2 minutes. Increase the heat to high, bring mixture to a boil, then immediately reduce the heat to low. Simmer gently until flavors meld, about 30 minutes. Strain the mixture, discarding the solids.
  • Ladle into cups or mugs. Garnish each with a reserved orange round.

This mulled wine recipe couldn't be easier to do. Don't bother with expensive wine - a cheap red will work beautifully and no one will ever know the difference! Start with a little sugar, then add more to taste. This recipe can be easily doubled or trebled.

4 cups dry red wine
2 (2 inch) pieces cinnamon sticks
1 teaspoon whole cloves
1 teaspoon whole allspice berries
1 large strip of lemon peel
1 large strip of orange peel
2 tablespoons sugar, or more to taste

Steps:

  • Combine red wine, cinnamon sticks, cloves, allspice, lemon peel, and orange peel in a heavy saucepan over medium heat. Heat gently, but don't boil. Stir in 2 tablespoons of sugar, and once dissolved, taste to see if you'd like to add more.
  • Keep hot on medium to low heat for 20 minutes to let the flavors infuse the wine. Serve your mulled wine hot in glasses or mugs.

1 cup water
1/2 cup honey, preferably orange-blossom
2 lemons, zest of, cut into long strips
1/4 cup fresh lemon juice (from 2 lemons)
4 whole star anise
4 cinnamon sticks
12 whole cloves
2 (3/4 liter) bottles dry white wine (dry wine, such as Sauvignon Blanc)
1 cup orange muscat wine, such as Essencia
1 golden delicious apple, cored, halved, and thinly sliced
1 bartlett pear, cored, halved, and thinly sliced
2 lemons, preferably Meyer, thinly sliced crosswise
12 kumquats, thinly sliced crosswise

Steps:

  • Bring water, honey, lemon zest and juice, star anise, cinnamon sticks, and cloves to a simmer in a large saucepan over medium heat. Reduce heat to low, and cook for 15 minutes.

½ cup water
¼ cup honey
2 cinnamon sticks
1 teaspoon ground allspice
1 teaspoon ground nutmeg
1 teaspoon ground coriander
16 whole cloves
1 orange, cut into 8 wedges
4 ¼ cups red wine

Steps:

  • Pour water into a large pot over medium heat. Add honey, cinnamon sticks, allspice, nutmeg, and coriander. Stir until honey is dissolved.
  • Push 2 cloves into the skin of each orange wedge. Add to the pot. Pour in red wine. Increase heat and simmer gently, about 45 minutes. Make sure mixture does not boil.
  • Discard orange wedges and cinnamon sticks. Divide mulled wine among coffee mugs and serve hot.
