A cute little confection that looks just like little potatoes. This kind does not contain potatoes; they are made using cream cheese and coconut.

¼ cup butter, softened
½ (8 ounce) package cream cheese
1 teaspoon vanilla extract
4 cups confectioners' sugar
2 ½ cups flaked coconut
1 tablespoon ground cinnamon

Steps:

  • In a medium bowl, beat the butter and cream cheese together until smooth. Add the vanilla and confectioners' sugar; beat until smooth. Using your hands if necessary, mix in the coconut. Roll into balls or potato shapes, and roll in the cinnamon. Place onto a cookie sheet and chill to set. If desired, roll potatoes in cinnamon again for darker color.

I was frantically searching for a non-coconut recipe for Irish Potatoes for St. Patrick's day. I recently became allergic to coconut, so I made this recipe up after not being able to find an alternative online or in any cookbooks I have at home. I think the almonds are a nice twist and help maintain the consistency of the ball instead of just omitting coconut from other recipes I've seen. This is a good no-bake recipe. It is simple to make and easy to eat.

Number Of Ingredients 6

2 cups whole almonds
½ cup ground cinnamon, or more to taste
½ (8 ounce) package cream cheese, softened
¼ cup unsalted butter, softened
1 teaspoon vanilla extract
1 (16 ounce) package confectioners' sugar

Steps:

  • Place almonds in the bowl of a food processor; process until finely ground. Pour cinnamon into a rimmed plate.
  • Mix cream cheese, butter, and vanilla extract in a large bowl until evenly blended. Place the bowl into a large pan filled with ice to help mixture stiffen; make sure butter mixture does not spill out of the bowl.
  • Sift confectioners' sugar into the butter mixture. Add ground almonds and stir until combined. Let mixture rest on ice for 5 minutes.
  • Roll mixture into 1/2-inch balls and roll in cinnamon until coated. Refrigerate until set, about 20 minutes.

I used to get these in the bakery on St. Patrick's Day when I was a kid. These old fashioned candies can also be dipped in chocolate for Easter. Everybody who has ever tried these has raved over them.

8 ounces cream cheese (softened)
2 (8 ounce) boxes confectioners' sugar
1 teaspoon vanilla extract
1 tablespoon evaporated milk
7 ounces flaked coconut
cinnamon

Steps:

  • combine the 1st 5 ingredients until well mixed. (use your hands. I have broken too many spoons on this).
  • Shape into 1 inch balls
  • Roll in Cinnamon.
  • refrigerate.
  • Options I have tried.
  • omit cinnamon and dip in melted dark chocolate.
  • omit cinnamon add 1/2 C chopped dried apricots and dip in melted white chocolate.
