1/4 cup butter or 1/4 cup margarine
1/2 cup brown sugar
3 tablespoons milk
1 cup flour
1/8 teaspoon salt
2 eggs
3/4 cup brown sugar
1 teaspoon vanilla
1/4 teaspoon salt
1 cup flaked coconut
1 cup walnuts, chopped
1 (6 ounce) package semi-sweet chocolate chips

Steps:

  • Prepare base: In a bowl, blend butter and brown sugar. Beat in milk, flour, and salt. Mix well.
  • Spread mixture over bottom of a greased 13 X 9 pan. Bake at 350° for 10 minutes.
  • Meanwhile, in a bowl, beat eggs. Stir in remaining topping ingredients.
  • When baked layer is done, spread topping mixture over it. Return to oven to continue baking for 20 minutes longer.
  • Mark into squares or bars while still warm. When thoroughly cooled, remove from pan.

Maine Multi-Spice Cookies(Maine Chewies) image

Adapted from Yankee magazine. Supposedly a version of this recipe is served on board the "Mary Day," a schooner from Maine. Any cookie with cardamom in it is a cookie for me. These are by far the best tasting spice cookies I have ever tried. Please use a wooden spoon to mix the dough - an electric mixer might make the dough too tough.

1 cup sweet unsalted butter, melted and cooled to room temperature
2 1/2 cups granulated sugar
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1 teaspoon ginger
1/2 teaspoon ground cardamom
1/2 teaspoon nutmeg
1 large egg, lightly beaten
1/2 teaspoon salt
1 tablespoon baking soda (really that much)
1/4 cup lukewarm water
1/4 cup molasses
4 cups all-purpose flour

Steps:

  • Combine butter, sugar, all 5 spices, and salt in a large mixing bowl, mixing well with a wooden spoon.
  • Dissolve baking soda in the warm water and then stir into the butter mixture.
  • Stir in the molasses and the lightly beaten egg, mixing well.
  • Add flour,1 cup at a time, stirring to mix- the dough will be quite stiff (be sure to scrape all the way down to the bottom of the bowl to mix evenly).
  • Scoop the dough into walnut sized lumps (about 1 Tbsp or so) and drop onto greased or parchment-lined baking sheets, about 2" apart.
  • Bake in a preheated 350°F oven for 8-12 minutes, or until crackled and browned. They will look very, very soft in the middles but as long as you can lift them with a spatula they are ready.
  • Let cool 1 minute on pans before carefully lifting with a spatula to cooling racks.
  • Finished cookies should be somewhat chewy.

3/4 cup firmly packed brown sugar
3/4 cup butter, softened
1 large egg
1 1/2 cups all-purpose flour
1 cup rolled oats
1 (14 ounce) bag caramels, unwrapped
1/3 cup half-and-half
1 cup large cashew pieces
1 cup semi-sweet chocolate chips or 1 cup semisweet chocolate chunk

Steps:

  • Preheat oven to 350 degrees.
  • Grease a 9 x 13 inch pan.
  • In a large bowl, beat brown sugar and butter until light and fluffy and then beat in egg.
  • Stir in flour and oats and blend well.
  • Press into prepared pan.
  • Bake for 15- 18 minutes until light brown.
  • In a medium saucepan combine caramels and half and half and cook over low heat until caramels are melted and mixture is smooth, stirring occasionally.
  • Pour caramel mixture over baked crust.
  • Sprinkle with cashews and chocolate.
  • Bake an additional 8- 10 minutes or until chocolate is softened and caramel begins to bubble around edges of pan.
  • Cool completely and refrigerate to set chocolate.
  • Cut into bars.

1 1/2 cups ripe mulberries (to make 2/3 c Mulberry juice)
2 cups sugar
2 tablespoons butter

Steps:

  • You can use this recipe for any low pectin fruit eg.
  • Saskatoons, blueberry, elderberry, raspberry, blackberry or May-apple.
  • Cook 1 1/2 cups of RIPE mulberries[unripe fruit is toxic- see about Red mulberry], mash and drain through a fine sieve or jelly bag to obtain the juice: about 2/3 cup yield.
  • Mix juice with sugar and butter and cook over low heat until sugar dissolves.
  • bring to a boil on medium and boil WITHOUT stirring until soft-ball candy stage- 240 Deg F.
  • Remove from heat; cool until lukewarm and beat with a wooden spoon until mixture looses its gloss.
  • Press into a buttered pan and cut into squares before the candy hardens.
  • Keep in a tightly covered dish or freeze because this candy hardens when exposed to the air.
