Try this recipe for Romanian chicken kebabs (kabobs) or frigarui, a popular street food, that can be made with any combination of meat and vegetables.

For the Chicken:
1 pound boneless, skinless chicken breasts (cut into 1 1/2-inch cubes)
For the Marinade:
1 ounce mixed chopped herbs (thyme, rosemary, parsley )
1/2 teaspoon pepper
Juice of 1/2 lemon
1 teaspoon sugar
1/2 teaspoon ginger
2 cloves crushed garlic
3 ounces plain yogurt
For the Garlic Sauce:
1 entire head of garlic (peeled and separated into cloves)
1 teaspoon salt
2 tablespoons sunflower oil or olive oil
1/2 cup sour cream
Black pepper to taste

Steps:

  • Gather the ingredients.
  • Cut the chicken into 1 1/2-inch cubes.
  • In a zip-top bag, combine the chopped herbs, pepper, lemon juice, sugar, ginger , garlic, and plain yogurt.
  • Add chicken cubes, completely coating all the chicken pieces with marinade , and refrigerate, overnight or at least three hours.
  • Gather the ingredients.
  • On a work surface, mince the garlic with the salt, crushing with the side of a knife until it is a paste consistency. Alternatively, use a mortar and pestle.
  • Put the garlic paste in a small bowl. Add the oil. Whisk until well combined and emulsified, about 3 minutes.
  • Add sour cream and plenty of black pepper . Mix well. Set aside.
  • Prepare a gas or charcoal grill to medium heat (350F to 375F). Thread the chicken pieces on wooden skewers that have been soaked in water for about an hour so they don't catch fire on the grill (or use metal skewers).
  • Grill chicken kebabs on greased grates about 10 to 15 minutes or until done, turning several times while cooking. These can also be prepared on an indoor grill, under a broiler or in the oven. Serve with the mujjdei de usturoi sauce.

This is a really easy one. In Romania this is most commonly eaten with fish or grilled pork or chicken. It is GREAT with many things though (french fries, pizza etc.) This is a slightly more complicated version that is more common in Transylvania. In the south the ingredients are usually just garlic, salt, and water. A mortar and pestle are most traditional but you can also use a garlic press or very finely mince the garlic as well.

1 head garlic (peeled and separated into cloves)
1 teaspoon salt
2 tablespoons vegetable oil
1/2 cup sour cream (reduced fat is fine!)
black pepper

Steps:

  • Put the cloves of garlic in a mortar with the salt and crush into they are a paste. (You can also crush them in a press or mince very finely and then add the salt later).
  • Put the garlic in a small bowl and add the oil. Beat with a fork until it is very well mixed and somewhat fluffy. This should take about 3 minutes.
  • Add the sour cream and plenty of black pepper. Mix well.
  • Serve with grilled meat or fish, french fries or baked potatoes, pizza -- .

  • Break the green beans into two or three parts, depending on how long they are. Place them into a large pot, cover with water, bring to a boil and cook for about 15-20 minutes or until done to your liking.
  • Drain well and rinse immediately in very cold running water. Drain very well again and pat dry with kitchen towel if still too wet.
  • Heat the oil in a large skillet. Fry the green beans until they start getting some darker spots here and there. Stir often.
  • In the meantime, prepare the garlic sauce. Pour the water into a small bowl. Grate or crush the garlic cloves into the water. Mix well and add salt and pepper to taste.
