- Preheat oven to 375°F. Generously coat 12 (2.5-inch) muffin cups with cooking spray; set aside. Lightly brush one side of bread slices with melted butter. Press bread slices, buttered sides up, into the prepared muffin cups. In a small bowl combine tuna, mayonnaise, and honey mustard. Stir in cheese, shallot, and dried cranberries. Divide tuna mixture among bread-lined muffin cups. Bake about 15 minutes or until filling is hot and bubbly. Remove tuna cups from muffin cups; let stand for 5 minutes before serving. If desired, garnish with fresh dill.
TUNA MELTS ON ENGLISH MUFFINS
Steps:
- Preheat the oven to 450 degrees F (230 degrees C).
- Melt butter in a small frying pan over low heat. Add onion and garlic and saute over low heat until soft and translucent, 5 to 7 minutes. Stir in seafood seasoning, cilantro, onion powder, salt, and pepper. Remove from heat.
- Combine tuna and mayonnaise in a bowl. Add the sauteed mixture from the frying pan and blend well with a fork.
- Place all 6 halved English muffins on a cookie sheet. Spoon on tuna mixture, dividing it evenly between each muffin. Top each with a slice of tomato; add a slice of American cheese.
- Bake in the preheated oven until cheese is melted, about 5 minutes.

- Preheat oven to 400°F
- Bake: Bake the tuna melts for 12 to 15 minutes until muffins are browned around the edges and the cheese is melted.
ULTIMATE TUNA MELTS
Steps:
- In a medium bowl, flake the tuna finely with a fork. Add the celery, scallions, and dill, and continue mixing and fluffing with the fork until combined. Add the lemon juice, 1 1/2 teaspoons salt, and 3/4 teaspoon pepper. Combine the mayonnaise and anchovy paste, if using, and mix into the tuna.
- Preheat the broiler. Toast the bread in a toaster and place the slices in a single layer on a sheet pan. Spread a quarter of the tuna mixture thickly and evenly on each piece of bread, covering the entire slice. Sprinkle the cheese evenly on the 4 sandwiches, covering the tuna completely. Broil for 1 to 2 minutes, just until the cheese melts and starts to brown. (Watch it carefully!) Sprinkle with the microgreens and serve hot.
ENGLISH MUFFIN TUNA MELTS
These classic tuna melts feature tuna salad on a toasted english muffin with melty provolone cheese on top for an easy dinner with things you probably already have in your pantry.

- Line your baking sheet with parchment paper or foil, for easy clean-up (optional). Place the halved English muffins cut-side-up on top. Preheat oven to 425 degrees F. Put the English muffins in the oven while it preheats, to toast them up a bit.
- Meanwhile, mix the tuna salad. In a medium bowl, mix canned tuna (flake apart with a fork first), diced celery, green onion, sweet relish (1 tablespoon), mayonnaise (½ cup), and salt and pepper to taste.
- Take the English muffins out of the oven. Spoon the tuna salad on top of each English muffin half evenly, pressing down on the top with the back of your spoon to pack it on a bit. Place a slice of cheese on top of each. Put back in the oven at 425 degrees F for about 10 minutes, until cheese is melted on top and starting to brown in places.
- Garnish with the remaining dark green sliced onions and serve.
