DELICIOUS & GOOEY ROCKY ROAD BROWNIES

Delicious & Gooey Rocky Road Brownies image

My sister introduced me to these super yummy brownies. I could eat an entire pan by myself. Yes, I would be a bit sick after, but definitely worth it! She and I don't care for nuts, so if you want to add them, feel free. I guessed on the amount of marshmallows. You want them to completely cover the brownies. The cooking time does not include the cooling time for brownies.

Time 45m

Yield 20-24 Brownies, 18-20 serving(s)

Number Of Ingredients 14

1 cup butter or 1 cup margarine, melted
2 cups sugar
1/3 cup cocoa
4 eggs
1 1/2 cups flour
1 teaspoon salt
1 teaspoon vanilla
nuts (optional)
3 -4 cups mini marshmallows, more if needed to cover entire pan
1/4 cup butter or 1/4 cup margarine, softened
1/4 cup cocoa
1/4 cup evaporated milk
3 cups powdered sugar
1 teaspoon vanilla

Steps:

  • Mix butter, sugar and cocoa together. Add one egg at a time, beat well after each egg. Add flour, salt and vanilla. (Stir in nuts if you choose.).
  • Put in a greased and floured 9x13 pan.
  • Bake at 350 for 25 minutes. Remove from oven.
  • Place mini marshmallows on top of cooked brownies and return to oven until marshmallows are light brown. (WATCH CLOSELY!).
  • Cool completely and top with fudge frosting. Mix all ingredients together then frost cooled brownies. (If you don't cool all the way, the marshmallows will move all over the place when you try to frost).

DELICIOUS ROCKY ROAD BROWNIES

Delicious Rocky Road Brownies image

I first tasted these when my mom used to make them when I was a child, and although that was many moons ago, they still make me feel like a kid when I eat 'em! The melted chocolate drizzle at the end makes these brownies rich and very chocolaty!!

These are ridiculously fudgy and rich. It looks even better if you double or triple the amount of marshmallows, but it will be insanely sweet.

  • Preheat the oven to 350 ºF with a rack placed in the center. Spray a 9 inch square baking dish with oil. Cut a piece of parchment to fit the bottom with a couple extra inches to climb up the sides. Place parchment over greased dish with the overhang for easy brownie removal after baking.
  • In a large mixing bowl sift together the flour, dutch process cocoa powder, baking powder, and salt. Set aside.
  • In a small pot combine the milk, yogurt and sugar. Heat over low heat, stirring regularly, until hot but not bubbling (~120 ºF, you don't need to check the temperature with a thermometer, it should be hot but not simmering). Stir until the sugar is dissolved and the mixture is a bit glossy. Turn off the heat and add the chopped chocolate. Stir until the chocolate has melted and the mixture is smooth. Add the oil and the vanilla extract and stir to combine. If mixing in chocolate chips for rocky road brownies, set aside and allow the mixture to cool for 15-20 minutes so they won't melt, otherwise, skip ahead.
  • Once the melted chocolate mixture is has cooled to lukewarm, add the wet ingredients into the dry and mix with a wooden spoon until just combined and no dry spots are left. If making rocky road brownies, add most of the chopped walnuts, chocolate chips, and vegan marshmallows, reserving a little of each to sprinkle on top. Gently fold them into the batter.
