BEEF AND BEAN BURRITOS

- Preheat the oven to 170 to 180 degrees F.
- In a large skillet over medium heat, cook the onions until softened. Then add the ground beef and cook until the beef is cooked through. Add the cumin, chili powder, oregano and salt and stir to combine. Pour 2 cans of the Mexican tomato sauce into the meat and simmer over low heat for 5 minutes. Add a little water if the mixture gets too dry.
- Meanwhile, heat the refried beans in a saucepan over medium-low heat. Add the cheese, and stir it in till its melted. Remove from the heat.
- Heat the tortillas in the microwave for 1 minute, and then spread a small amount of beans on each tortilla. Add a small amount of the meat. Fold over the ends of the tortilla, and then roll them up. Repeat with the rest of the tortillas. Then place them in a large baking dish, cover with foil and keep warm in the oven.
- When ready to serve, drizzle the remaining can of tomato sauce over all of the burritos and sprinkle with more grated Cheddar. Return to the oven for a couple of minutes just to melt the cheese.
- Sprinkle the tops with the cilantro leaves and serve immediately to the fork-bangers in your life. They'll kiss you and hug you. Repeatedly.
MUCHO GOOD BURRITOS
I got this recipe years ago from a friend and these are a favorite of family and friends alike. They are on the rich side but OH SO GOOD!!!! They make alot but they do freeze well.

- (You can shorten the time of preparing these burritos by just browning your ground beef, draining off grease and adding a pkg. of chili seasoning mix. It doesn't alter the flavor of these burritos that much).
- To prepare chili: Brown ground beef in large skillet; drain.
- Return to skillet and add seasonings, then add 2-3 cups water and simmer for 1 1/2 to 2 hours or until chili is thickened.
- Make your Ro-tel dip.
- Lightly spray 2-13x9 baking dishes with vegetable spray and set aside.
- When chili and dip is ready take each tortilla and spoon 1-2 tbsps.
- chili down the center then cover with 1-2 tbsps.
- of the ro-tel dip and roll up.
- Place seam-side down in prepared pans.
- When pans are full cover top of burritos with the canned chili (I use 1 can for each baking dish) spreading to cover.
- Pour some of the remaining Ro-tel dip on top of each dish of burritos.
- Bake in a preheated 350 degree oven for 30-45 mins or until hot and bubbly.

- Heat up the cooked beef if using leftovers. We used 3 cups of slow cooker barbacoa, heating it up in a skillet over medium heat in a dollop of oil.
- For the Pico de Gallo, give the tomatoes, jalapeno and cilantro a good rinse. Peel the onion. Finely chop the 2 tomatoes, 1/2 onion, and single jalapeno into 1/4" sized chunks. Finely dice the cilantro. Combine the tomato, onion, jalapeno and cilantro in a mixing bowl. Add 1/2 teaspoon salt and the juice of a lime. Mix together well and taste for seasoning. Add additional salt and lime if necessary.
- For the Guacamole, finely chop 2-3 tablespoons of onion. Use the back of a fork to smoosh the onion until it turns translucent. Add onion to a bowl along with the avocado flesh, 1/8 teaspoon of salt, and the juice of a half lime. Mush together and mix well. Taste for salt level. Keep adding tiny dashes of salt (and lime) until you like it.
