Old Fashioned Chocolate Chess Pie is a chocolate lovers dream come true! The best chocolate chess pie recipe is a classic southern dessert with a fudgy, rich chocolate flavored custard in a flaky buttery crust.

1 pie crust, (homemade or store bought)
1 ¼ cups sugar
5 tablespoons cocoa powder
2 tablespoons cornmeal
1 tablespoon all purpose flour or gluten free all purpose flour
¼ teaspoon salt
⅓ cup butter, (softened)
3 eggs, (room temperature)
5 ounce can evaporated milk
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 425°F and adjust oven rack to lowest position. Roll pie crust and fit into a 9 inch pie plate. Refrigerate and chill for 15 minutes.
  • Line the bottom of the crust with foil or parchment paper. Place pie weights or dried beans on top of liner. Bake on the bottom rack for 5 minutes. Lower the temperature to 325°F and bake 4 minutes longer. Remove the liner and weights and bake 3-4 minutes longer. Remove from oven and set aside to cool.
  • In a large bowl whisk together sugar, cocoa powder, cornmeal, flour, and salt. Add softened butter, eggs, evaporated milk, and vanilla extract to the bowl. Use a mixer to beat until well combined.
  • Pour filling into prebaked pie crust and bake at 325°F on the lowest rack for 55-60 minutes. The top layer should be set and underneath will have a slight jiggle, but not a liquidy one. Insert a toothpick to make sure it isn't liquidy. Place on a wire rack to cool 1-2 hours before slicing and serving. Either serve at room temperature or chill.

This chocolate chess pie is thickened with fine cornmeal and eggs, and the chocolate is reinforced with the addition of just enough instant coffee and salt to make it sing.

1 9 " pie crust, , frozen using your favorite pie crust recipe or store-bought
2 oz (1/2 stick) unsalted butter
10.5 oz (1 1/2 cups, packed) dark brown sugar*
1 oz (1/3 cup) cocoa powder, sifted
3 eggs
2 Tablespoons finely milled cornmeal
2 teaspoons espresso powder, (or finely ground instant coffee)
1 teaspoon vanilla extract
3/4 teaspoon kosher salt, (use slightly less if using fine sea salt)

Steps:

  • Place a rack in the center of the oven and preheat to 350F.
  • Slowly melt the butter so that it remains creamy. It should stay emulsified and not separate into clear yellow, runny butter. I melted mine in the microwave in short bursts at medium power until it was mostly melted, then I whisked it until all the butter was melted. Pour the creamy melted butter into a medium-sized bowl.
  • Add the dark brown sugar,* making sure there are no lumps in it, the cocoa powder, eggs, cornmeal, epsresso powder, vanilla and salt.
  • Whisk very well to make a smooth batter. Scrape the bowl a couple of times to make sure all the ingredients are evenly incorporated in the batter.
  • Pour the batter into the frozen pie crust.
  • Bake for 35-45 minutes or until the entire pie is puffed up but is still a little jiggly in the center. You may have to cover the crust with foil after the first 20 minutes or so to prevent over-browning, so keep an eye on it.
  • Remove the pie from the oven and let cool to room temperature. Serve warm or cold, with or without ice cream or whipped cream.
  • Enjoy!

3 eggs, beaten
½ cup (1 stick) salted butter, melted
½ cup light corn syrup
1 teaspoon vanilla extract
1 unbaked 9-inch pie crust
Whipped cream, for serving

Steps:

  • Preheat oven to 350 degrees F. In a large bowl, whisk together sugar, cornmeal, cocoa and salt. Add eggs, melted butter, corn syrup and vanilla; mix well. Pour into unbaked pie crust.
  • Bake for 45-50 minutes, or until mostly set - there will still be a little bit of jiggle in the center when you shake the pie. Allow the pie to cool completely before slicing (it will continue to set as it cools). If the pie is still a bit too soft after cooling, chill it in the refrigerator for a few hours to firm it up.

confectioner's sugar (if desired, to dust the top with)

Steps:

  • Preheat oven to 350. Combine sugar, melted butter, cocoa powder, eggs, vanilla, and evaporated milk in a large mixing bowl. Beat this chocolate mixture with an electric mixer at medium speed until well combined, or about 1 to 2 minutes.
  • Pour chocolate mixture into the unbaked pie shell and bake until set in the center, or about 35 to 40 minutes. Allow to cool completely. Dust with confectioner's sugar, if desired.

This pie is a creamy favorite of every generation. Easy to make with eggs and sugar, you'll be surprised at how delicious it is!

1 refrigerated 9 inch pie crust (or use your own recipe)
2 Cups of granulated white sugar
2 Tbs all purpose flour
4 large eggs
½ tsp real vanilla extract
½ tsp real almond extract
1 stick (½ cup melted sweet cream unsalted butter)

Steps:

  • Preheat the oven to 400.
  • Line a 9 inch pie plate with crust and crimp the edges. (Or if using the frozen pie crust that is already in a pie pan - just thaw).
  • In a large bowl, combine the sugar, flour, eggs, vanilla and almond - mix well using a whisk.
  • Melt the butter in the microwave in a microwave safe bowl and allow to cool.
  • If adding the butter while still hot - then temper the egg mix by pouring a small amount of the butter into the egg mix while whisking. Whisk for a minute and then add more. Whisk again and keep repeating until fully incorporated.
  • Place the pie on the middle rack in the oven at 400 and bake for 10 minutes then lower the heat to 350 and bake for another 30 - 35 minutes.
  • The pie is done when golden brown on top and when the pie wiggles only a little when you bump it from the side of the pan.
  • Place the pie on a cooling rack and allow it to completely cool before serving.
