I learned how to make this while I lived briefly in the great state it's named after. Quite an interesting dish. It's creamy, has good chicken flavor, and is topped off with a crispy crust.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a casserole dish.
- Cut the chicken into bite size pieces. Place the chicken and onion into a large nonstick skillet and sprinkle with seasoning salt. Cook over medium heat, stirring occasionally, until chicken juices run clear and onion is transparent, 5 to 10 minutes.
- Prepare the egg noodles according to package directions. Combine the chicken and onion mixture, soups, and noodles in the prepared casserole dish and toss to mix together evenly. Crush the crackers in a medium bowl. Stir in the butter and sour cream. Mix thoroughly and spread over the chicken mixture.
- Bake in preheated oven until the top is golden brown, about 30 minutes.

GRANDMA'S CHICKEN AND DRESSING CASSEROLE
This is a very good casserole! It makes a wonderful warming and filling meal.

Steps:
- Combine chicken, celery stalk and small onion with enough water to cover in a large Dutch oven or heavy pot. Add salt. Bring to a boil over medium-high heat; reduce heat, and simmer about 1 hour or until tender. Transfer chicken to a large bowl and cool briefly; Strain and reserve broth. Remove skin and bones from chicken and cut into bite-sized pieces. Saute chopped bell pepper, onion and celery in butter until translucent and tender. Crumble cornbread in a large bowl; add crackers, eggs and sauted vegetables. Add sage and season with salt and pepper to taste. To reserved broth, add canned chicken broth and diluted soup; mix well. Combine liquid, cornbread mix, and chopped chicken; mix well. Pour into a large, lightly greased, casserole or baking dish and bake in 400 degree oven until set and golden brown, about 35-45 minutes. Makes about six to eight servings.

Steps:
- Boil the chicken until done. Pull apart. Keep the broth.
- Mix soups, salsa, and chilies together. Set aside.
- In 13x9 pan, layer half of the doritos, half of the chicken, half of the sauce, and then half of the cheese. Pour about 1/4 cup of the broth on top.
- Repeat ending with cheese and broth.
- Add on sliced jalapenos or black olive slices for presentation, if you wish.
- Bake at 350 for 30 minutes.

CHICKEN CASSEROLE MISSISSIPPI
I don't know where I got this recipe but have been preparing it for years. The sour cream in the cracker topping is what really makes it different from other casseroles I have tried. I usually serve this with peas or green beans and some garlic bread for a comfort meal on a cold day.

- Preheat the oven to 325 degrees F (165 degrees C).
- Bring a large pot of lightly salted water to a boil; cook rotini at a boil until tender yet firm to the bite, about 8 minutes. Drain, reserving 1/2 cup cooking liquid for the sauce.
- Heat olive oil in a large frying pan or Dutch oven over medium heat. Gently saute celery, onion, and bell pepper until onion is translucent, 5 to 7 minutes. Add the mushrooms and toss. Sprinkle vegetable mixture with flour; stir until flour begins to congeal and cook. Stir in chicken broth until it begins to thicken. Reduce heat to low, cover, and cook for 10 minutes. Stir in mushroom soup, reserved pasta cooking liquid, chicken, and peas until blended.
- Mix pasta and sauce together in a 2-quart casserole dish. Top with Parmesan cheese. Cover.
- Bake in the preheated oven for 20 minutes. Uncover and continue to bake for another 5 minutes.

- Hot Milk Cake. Through my research of Depression Era recipes, I realized that dessert was a big deal to them during this time, and did they ever know how to make some delicious desserts out of very few ingredients.
- Granny’s Cocoa Cream Pie. My husband loves chocolate pies. His mother made a great version of this pie and just like the woman who created this recipe, she too was very resourceful.
- Dandelion Salad. I love this woman’s site. She is in her mid 90’s and has her own Youtube channel to share her Depression Era meals that she ate as a child.
- Depression Era Breakfast. This is another video of Ms. Clara’s that recounts her childhood during the Great Depression. She shares what they ate for breakfast.
- Great Depression Pizza. Ms. Clara shared a few videos, lots of knowledge, and many great stories with the internet before her passing in 2013. But one of her greatest videos (in my opinion) is this Depression Era pizza.
- Grape Pie. As we all know, the Great Depression was a time of necessary resourcefulness. You had to use what you had available in order to simply survive on a day to day basis.
- Potato Casserole. Potatoes were a staple ingredient during the Depression because they were cheap, and you could grow them yourself. So it should come as no surprise that someone figured out how to take a few basic ingredients (cream of chicken soup, onion, butter, etc.)
- 9 Depression Era Meals. This site is a great Depression Era recipe resource. They literally give you 9 recipes from the Depression that you can still enjoy today.
- Pan Bread. I’ve eaten this many a time with my mother-in-law. When we wanted a bread to go with supper but didn’t have enough time to make a fresh loaf, then we’d make this bread together.
- Shoo Fly Pie. This pie not only has a great name, but it looks delicious as well. You use pretzels to make a graham cracker like crust. Then you fill the pie crust with a brown sugar and molasses filling.
