BASIC IMPOSSIBLE PIES
Received this recently from a friend and this will be my new recipe for this type dish.I made it for breakfast this morning and it is a keeper. While I have always put a variety of meats and/or vegetables in my impossible pies, this has a lot of vatiations I would not have thought of.

Steps:
- Choose the base ingredients based on the size of the pie pan you are using.
- Preheat oven to 375 degrees Fahrenheit.
- Grease desired size pie pan.
- Sprinkle meat, cheese and vegetables, if using, into pan.
- Beat base ingredients until smooth, 14 to 30 seconds in a blender; or 1 minute on high with a hand beater; or 2 minutes by hand.
- Pour batter into pan, covering filling ingredients.
- Bake 30 to 35 minutes, or until a knife inserted in center comes out clean, and top is golden brown.
- Cool 5 minutes before serving.
- Variations:
- Chicken, broccoli, jack cheese, onion -- ham, mushrooms, Swiss cheese --.
- bacon (6 slices, cooked, drained, chopped), broccoli, cheddar --
- bacon, sliced roma tomatoes, cheddar (the BLT) --.
- crumbled cooked hamburger, cheddar cheese, onion (the cheeseburger) --
- turkey, peas, green onion, dried cranberries --
- sliced potato, onion, herb flavored cream cheese, pork or chicken, green chiles, cheddar --.
- corned beef, sauerkraut, Swiss (the Reuben)--.
- whole green chiles stuffed with cubes of cheese (rellenos casserole) --
- roast beef, onion, green or red peppers, any cheese (the Philly) --
- spinach, feta cheese, black olives, diced tomato (the Greek).
- NOTES:.
- Use any raw or leftover cooked vegetables, chopped into uniform sizes.
- Carrots and potatoes must be cooked.
- Slice or chop raw veggies smaller than cooked.
- Thawed frozen spinach (squeezed dry) and frozen broccoli work well.
- Add herbs/spices as desired.
- Try all veggie or all cheese pies.
- Add mustard, horseradish, hot sauce, BBQ sauce, etc. to base in small amounts (about 1 tablespoon) if it seems appropriate.

AMANDA'S SOURDOUGH IMPOSSIBLE PIE
I am always on the lookout for new sourdough recipes and was tickled when I found this 10Apr11 post by one of my favorite keep-it-basic bloggers, Amanda, at http://mandyskitchen.wordpress.com. Remember Bisquick or Krusteaz Impossible Pie? Well, this is just as simple but far tastier! The batter with cheese on top forms a crisp crust that reveals a delicious moist bread just beneath the surface. I mixed about 1/2 tsp crumbled rosemary into the batter. For the filling I used a single layer of Sweet Italian Sausage (sliced first into small rounds and fried until nearly fully cooked) topped with ratatouille (http://www.food.com/recipe/ratatouille-in-the-crock-pot-52757). The only adjustment I made was that I cut the grated cheese back to just a light sprinkling.

Steps:
- Beat together all ingredients except the cheese.
- Grease a deep pie dish or an 9×9 baking dish and put in around 3 cups of your desired filling, You can use whatever you like for filling. Amanda offers nice suggestions at http://mandyskitchen.wordpress.com/2011/04/10/sourdough-impossible-pie/.
- Top with the sourdough mixture.
- Sprinkle cheese over the top and bake in a preheated 400 degree oven for 40 minutes or until set. Let stand 5-10 minutes before serving.

IMPOSSIBLE CHERRY PIE
I saw many versions of impossible pie posted, but didn't find the cherry flavor listed. This is my favorite.

Steps:
- Preheat oven to 400 degrees Fahrenheit.
- Grease a 10-inch pie plate.
- Beat all ingredients, except pie filling and streusel, until smooth - 15 seconds in blender on high or 1 minute with hand beater.
- Pour into pie plate.
- Spoon pie filling evenly over top.
- Bake for 25 minutes.
- Meanwhile, make streusel: Cut 2 Tablespoons firm margarine or butter into 1/2 cup Bisquick baking mix, 1/2 cup packed brown sugar and 1/2 teaspoons ground cinnamon until crumbly.
- Top pie with streusel.
- Bake about 10 minutes longer until streusel is brown; cool.

IMPOSSIBLE FRUIT PIES
The combinations you can use are endless! Some of My Favorites: Rhubarb & Strawberry / Blueberry & Peach / Blackberry & Apple... Whatever you choose, this is delicious!

Steps:
- Heat oven to 375 degrees.
- Grease 10" pan, put fruit in pan.
- Blend all remaining ingredients (except Powdered Sugar) for 3 minutes.
- Pour over Fruit. Let set for a few minutes. Bake 40 to 45 minutes.
- After Pie is cooled, dust with Powdered Sugar.
