LEMON MELTAWAYS
These frosted lemon cookies are a delicious refrigerator cookie, and they are quick and easy to make.

Steps:
- In a medium bowl, cream together 3/4 cup butter and 1/3 cup confectioners' sugar until smooth. Stir in 1 tablespoon lemon juice and 1 teaspoon lemon zest. Combine the flour and corn starch, and blend into the lemon mixture to form a soft dough. Divide dough in half, roll each half into a log about 8 inches long and 1 inch in diameter. Wrap in plastic wrap and refrigerate for 2 hours, or until firm.
- Preheat oven to 350 degrees F (175 degrees C). Cut each roll into 1/4 inch slices and place onto the cookie sheet.
- Bake in the preheated oven for 8 to 12 minutes, or until set. Cool completely before frosting.
- In a small bowl, blend together 3/4 cup confectioners' sugar, 1/4 cup butter, 1 teaspoon lemon juice, and 1 teaspoon lemon zest with an electric mixer until smooth. Frost cookies and allow to dry before serving or storing.

These cookies really do melt in your mouth! I got the recipe from TV Guide many, many years ago. We couldn't have Christmas cookie trays without them!

- Cream butter, sugar,and flavorings until light and fluffy.
- Add flour.
- Mix on LOW until blended.
- Drop by teaspoons on UNGREASED cookie sheet, 2" apart.
- Bake at 400 for 8 minutes.
- Let cool 2 minutes.
- Roll in sugar.
- When cool, roll again.

- In a large bowl, cream butter and confectioners' sugar until light and fluffy, 5-7 minutes. Beat in vanilla. Combine flour and salt; gradually add to creamed mixture and mix well. Stir in pecans. Refrigerate until chilled., Preheat oven to 350°. Roll into 1-in. balls and place on ungreased baking sheets. Bake 10-12 minutes or until set. Roll warm cookies in additional confectioners' sugar; cool completely on wire racks. Roll cooled cookies again in confectioners' sugar.

Steps:
- Preheat oven to 350F (180C). Line a baking sheet with parchment.
- In a large bowl, mix butter, powdered sugar, lemon zest and cinnamon until creamy.
- Add in cornstarch and mix them well.
- Add in flour and mix with a spatula until everything is combined.
- Use a teaspoon to scoop dough and make tiny balls. Place them on the baking sheet.
- Bake for 12-15 minutes or until their bottom is slightly golden. Remove from the oven and let them cool in the baking sheet.
- Roll them into powdered sugar or sprinkles.

I was given this recipe by my friend Mary Stubblefield, years ago. Mary was a very sweet woman with a great sense of humor! She said this recipe was from Mrs. Woody Robinson.

Steps:
- Combine cheese and 1 cup of the softened butter in a large mixer bowl; mix thoroughly.
- Add flour gradually, beating until dough forms a ball (add extra flour if dough doesn't form a good ball).
- Divide dough into thirds; wrap in wax paper and chill several hours.
- Roll each piece into a 9-inch circle on a lightly floured board.
- Combine remaining butter, sugar, cinnamon, and pecans; spread each circle of the dough with 1/3 of the sugar mixture.
- Cut each circle into 16 pie shaped pieces and roll each up tightly, beginning at the wide end.
- Place the pointed end down on a greased cookie sheet.
- Beat egg yolks and water together and brush on cookies.
- Bake in a preheated oven at 400F about 20 minutes.
