Taken from "The Anne of Green Gables Cookbook", written by Lucy Maud Montgomery's granddaughter Kate Macdonald. I am posting this as it appears in the original book, which was written as a tribute to her father Stuart Macdonald (Montgomery's son). The recipes were written with precise instructions, geared for young cooks. All recipes were apparently tested by a 12 year old cook, with perfect results. Quote from the book: "Of course I'll stay to tea. said Anne gaily. I was dying to be asked. My mouth has been watering for some more of your grandma's delicious shortbread ever since I had tea here before." 1 cup butter, softened
1/2 cup icing sugar
2 cups all-purpose flour
salt, pinch of
1/4 teaspoon baking powder
sugar, for sprinkling

Steps:

  • measuring spoons.
  • medium mixing bowl.
  • fork.
  • extra flour for dusting.
  • rolling pin.
  • cookie cutters.
  • metal spatula.
  • cookie sheet.
  • extra sugar for sprinkling.
  • oven mitts.
  • Preheat the oven to 350*.
  • In the large mixing bowl, cream the butter with the electric mixer until it is soft, smooth and fluffy.
  • Add the icing sugar, a little at a time, and beat until smooth.
  • Measure and add the flour, salt, and baking powder to the medium mixing bowl. Mix with the fork.
  • Add the flour mixture to the butter mixture and stir until well mixed.
  • Dust the rolling pin and a clean place on the counter with the extra flour. Turn the dough onto the floured surface and roll it out into a large circle - about 1/4 inch thick.
  • With the cookie cutters, cut the dough into any shapes you like.
  • With the metal spatula, lift the shortbreads onto a greased cookie sheet. Place them about 1/2 inch apart. Prick each shortbread twice with a fork and sprinkle with sugar.
  • Bake the shortbreads for 20 - 25 minutes until they turn light brown around the edges.
  • With oven mitts, remove the cookie sheet from the oven. With the metal spatula, immediately lift the shortbreads onto a plate.

Quote from the book: "Here's the cake Anne really meant to make. Be sure you use vanilla - not anodyne liniment!" 3 eggs, large
2 teaspoons pure vanilla extract

  • oven mitts.

  • Directions:.
  • Grease and flour the cake pans. Pre-heat the oven to 350*F.
  • Measure out the sifted four, baking powder, salt and sugar and mix together in the large bowl.
  • Add the melted butter and the milk to the flour mixture and stir with the wooden spoon.
  • Beat the mixture for 1 minute with the electric mixer.
  • Break the eggs into the small bowl. add them with the vanilla to the cake batter, then beat with the mixer for another 3 minutes, constantly scraping down the sides of the bowl with the rubber spatula.
  • Pour the cake batter evenly into the two cake pans. Bake for 25 - 30 minutes.
  • Test the cakes with a toothpick. When they are done, use oven mitts to take them from the oven. Let them cool in the pans for 10 minutes.
  • Slide the blade of the metal spatula around the edges of the cakes to loosen them from the pans.
  • Place one of the cakes on a cooling rack. Place a second cooling rack on top. Hold the two racks together and flip the whole thing over. The cake is now upside-down on the rack.
  • Gently lift off the pan and transfer your cake to a plate. Repeat with the other cake.
  • Let the two layers cool completely before frosting.

This comes from the Anne of Green Gables cookbook. These biscuits are wonderful, and one of the first things I learned how to make. Please note the recipe is designed for kids and writing as written.

Number Of Ingredients 7

2 cups all-purpose flour, sifted
4 teaspoons baking powder
2 tablespoons sugar
1/2 teaspoon salt
1/2 cup vegetable shortening
3/4 cup milk
1/2 cup jam or 1/2 cup jelly, red

Steps:

  • Preheat oven to 425 degrees F.
  • Measure the sifted flour, baking powder, sugar, and salt and mix with fork in large mixing bowl.
  • Cut in vegetable shortening until it looks like coarse bread crumbs.
  • Add the milk and mix it into the flour with fork-but only until the mixture will form a soft ball.
  • Place the ball of dough on a lightly floured surface and knead it 12 times.
  • Rub some flour on rolling pin and roll the dough until it's about 1/4 inch thick.
  • With a large biscuit cutter cut circles, very close together, in the dough. Use a straight downward motion and do not twist the cutter.
  • With a spatula lift HALF of the circles, one at a time onto a cookie sheet and arrange them about 1 inch apart.
  • With a small cutter cut a hole in the center of the rest of the circles to make rings and lift out the centers. Set the centers aside.
  • Place the rings on top of the circles on the cookie sheet.
  • Place a teaspoon of red jam or jelly in each ring.
  • Bake biscuits for 12-15 minutes until golden.
  • Immediately take bicsuits off cookie sheet with spatula.
  • With centers bake into little biscuits.

Another recipe from "The Anne of Green Gables Cookbook": "The little girls of Avonlea school always pooled their lunches, and to eat three raspberry tarts all alone or even to share them only with one's best chum would have forever and ever branded as "awful mean" the girl who did it. And yet, when the tarts were divided among ten girls you just got enough to tantalize you. " (from "Anne of Green Gables" by L.M. Montgomery). Times are estimated and do not include cooling time beyond the initial 15 minutes (included in cooking time). The original recipe did not specify the size of package of frozen berries, so I guessed a 10 oz package based on the fresh raspberry substitution.

1 cup all-purpose flour
1 tablespoon sugar
1/4 teaspoon salt
6 tablespoons unsalted butter, chilled
1 egg yolk
1 tablespoon water
1 tablespoon lemon juice
1 (10 ounce) package frozen unsweetened raspberries, thawed or 1 cup fresh raspberry
3 tablespoons cornstarch
1/4 cup cold water
3/4 cup sugar

Steps:

  • Preheat oven to 425°F.
  • Combine flour, sugar, and salt in a large mixing bowl. Cut butter into flour mixture until it resembles tiny peas.
  • Combine egg yolk, water, and lemon juice with a fork.
  • Sprinkle egg yolk mixture over flour mixture and stir together with a fork until it forms a ball.
  • Pull small pieces of pastry from the ball and press into bottom and sides of the tart pans to about 1/8 inch thickness. Refrigerate until ready to use.
  • Combine cornstarch and cold water in a small saucepan until smooth. Stir in sugar and raspberries. Cook and stir over medium-low heat until thickened, about 10-15 minutes. Allow mixture to cool.
  • Spoon filling evenly into tart shells, filling each no more than 2/3 full.
  • Bake at 425° F for 10 minutes. Reduce heat to 350° F and bake for an additional 15 minutes or until pastry is golden brown.
  • Remove from oven and cool, in pans, for 15 minutes. Remove from pans to cooling racks and cool completely.
