CLASSIC MEATLOAF
Keep this meatloaf recipe handy: It's the only one you'll need.

Steps:
- Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
- Combine the meatloaf mix, breadcrumbs, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
- Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
- Stir the brown sugar together with the remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl for the glaze. Brush the top and sides of the meatloaf all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.
MRS COBB'S MEATLOAF
This is from The Cat Who cookbook which is based upon the mystery series by Lilian Jackson Braun. This is Jim Qwilleran's favorite landlady's meatloaf recipe that he always talks about.

Steps:
- Preheat oven to 350 degrees.
- Stir brown sugar and cranberry sauce together until smooth.
- Place in bottom of 9" x 5" loaf pan.
- In a bowl, combine eggs, onion, milk, thyme, sage, nutmeg, salt and pepper.
- Stir in bread crumbs.
- Add ground beef and mix thoroughly.
- Shape into a loaf and place on top of cranberry mixture.
- Flatten top so loaf will sit level when inverted.
- Bake 1 hour and 15 minutes.
- Let stand 10 minutes and invert on plate to serve.
TATER TOT MEATLOAF DISH

- Preheat oven to 350 degrees.
- Combine egg whites, oatmeal, tomato juice, seasonings, onion, green pepper and ground beef.
- Mix well.
- Spread evenly in a greased 9x13 inch dish.
- Top with a single layer of tater tots.
- Combine the cream of mushroom soup, milk and cheese. Stir well.
- Spoon soup mixture over the tater tots. Spread to cover.
- Cover with foil, and bake for one hour.

MEATLOAF TWIST
This adds a upbeat taste to a traditional dinner. Goes great with mashed potatoes and green beans. Nice for a weekend dinner! Great tip: Freeze or refrigerate leftovers to make meat loaf sandwiches for lunch or a snack. They are great!

Steps:
- Start out with a large mixing bowl.
- Preheat oven to 350°F.
- Chop 1/2 onion and place in mixing bowl.
- Chop 1/2 green pepper and place in mixing bowl.
- Add ground round, bread crumbs, salt, pepper, French Onion Soup mix, egg into the mixing bowl.
- Mix well.
- Add 1/2 bottle of barbecue sauce to the mixture and mix well.
- Form the mixture into a square or loaf. (I usually form it to the pan I am using).
- Slice the remaining onion and green peppers and arrange on top of loaf.
- Pour 1/4 of the remaining barbecue sauce on the top of the loaf. (I usually make a letter "M" with the sauce--it makes it look pretty).
- Place in oven.
- Take it out of oven in 1/2 hour and pour the remainder of the barbecue sauce on top.
- Let cook for another 1/2 hour.
- Check for doneness.
- I like mine well done.
- Adjust cooking time to your liking.
- Serve immediately.
- Great with mashed potatoes and green beans.
MEATLOAF 101

Steps:
- Heat oven to 375 degrees.
- Place bread in the bowl of a food processor fitted with the steel blade; pulse until fine crumbs form.
- Transfer to a medium bowl, and add ground beef.
- Place onion, garlic, celery, carrots, and parsley in the bowl of a food processor fitted with the steel blade; pulse until fine.
- Add to meat mixture, using hands to mix well.
- Add egg, 1/2 cup ketchup, 2 teaspoons dry mustard, salt, and pepper; use hands to combine thoroughly.
- Place in an 8 1/2-by-4 1/2-by-2 1/2-inch loaf pan.
- Combine remaining 1/2 cup ketchup, remaining teaspoon dry mustard, and brown sugar in a bowl; stir until smooth.
- Brush mixture over meatloaf; place in the oven with a baking pan set on the rack below to catch drippings.
- Cook until a meat thermometer inserted in the center reads 160 degrees, about 90 minutes.
- If top gets too dark, cover with foil, and continue baking.
PLAZA III STEAK SOUP - COPYCAT
There is a very nice restaurant in Kansas City, MO called the Plaza III - they are famous for their steak soup. This is a copycat version of it. It freezes very well too.

- Melt butter in stock pot.
- Blend in flour to make a smooth paste.
- Gradually add hot water a little at a time.
- Whisking it smooth as you go.
- Simmer until smooth.

This recipe will make meatloaf lovers out of meatloaf haters! It is an Emeril recipe off the foodnetwork website. I have modified it here and there...just types of meat and the topping.

Steps:
- Saute butter, onion, celery, and bell pepper until carmelized.
- Add garlic, thyme, rosemary, and parsley. Cook 2 minutes. Cool in a mixing bowl.
- Preheat the oven to 350°F.
- To mixing bowl with vegetables, add eggs, mustard, 1/4 cup ketchup, Worcestershire, and cream. Mix.
- Add breadcrumbs, meat, salt, and mix with hand just until combined. Do not overmix.
- Form into 9 x 5 x 3-inch loaf pan. Set aside.
- Combine 1/2 cup ketchup and 1/4 cup of brown sugar (or to taste).
- Poke holes into the meatloaf and drizzle the topping over it, allowing it to seep into the meat.
- Cut bacon slices in half, lengthwise, and place in strips over the top of the meatloaf.
- Bake for 45 minutes and until the sauce is slightly caramelized on the top.
- Remove from the oven and tent with foil. Let it stand about 10 minutes before serving.
- I serve it with scalloped potatoes.

- Chop bacon into small pieces and fry until crispy. Remove from pan to drain and reserve 1 tablespoon bacon fat in pan.
- Sauté celery, onions and mushrooms with salt and pepper in bacon fat until soft. Cool slightly.
- Add bacon and vegetables to meat, along with Worcestershire, egg, breadcrumbs, 1 cup cheese and 1/2 cup ketchup.
- Mix well to combine. Shape into loaf in large pan.
- Pour remaining ketchup on top and spread out over whole loaf. Sprinkle with remaining cheese.
- Bake at 350°F for 1 hour or until cooked completely through.
