The BEST Stuffed French Toast image

Delicious Stuffed French Toast is just what weekends were made for! Classic French Toast fried to golden perfection and stuffed with fresh strawberries and cream cheese takes this easy breakfast to the next level. A sweetly satisfying breakfast dish that is perfect for brunch!

Provided by Trish - Mom On Timeout

Categories     Breakfast

Number Of Ingredients 14

3 eggs
1/2 cup half and half (you can also use whole milk)
1 tsp vanilla extract
2 tsp ground cinnamon
1/4 tsp ground nutmeg
2 tbsp brown sugar
10 slices Brioche or any thick cut artisan type bread (the thicker the better (about 8-10 slices))
8 oz cream cheese (softened)
3/4 cup powdered sugar
1/2 tsp fresh lemon zest
1 cup fresh strawberries (sliced thin)
2 tbsp granulated sugar
1 tbsp fresh lemon juice (about half of one lemon)
8 tbsp butter (for frying (bacon fat is also good here))

Steps:

  • Combine eggs, half & half, vanilla, cinnamon, nutmeg and brown sugar in a shallow bowl.
  • Whisk well until all of the ingredients are fully incorporated. Set aside.
  • In a separate bowl, stir together strawberries, sugar, and lemon juice until just combined. Set aside.
  • In a small bowl beat together cream cheese, powdered sugar, and fresh lemon zest until smooth and well combined, about 1 minute.
  • Take two slices of bread and spread about 1 1/2 tablespoons of the cream cheese mixture onto each piece of bread keeping clear of the edges.
  • Pat strawberries dry with a paper towel to soak up any excess juices. Layer strawberries in a single layer on one piece of bread and place the other piece of bread on top..
  • Melt 2 tablespoons of butter in a large skillet over medium heat.
  • Dip each "sandwich" in egg mixture until fully coated. Quickly transfer French toast to the hot, greased skillet.
  • Cook each side for about 2 to 3 minutes, or until each golden brown.
  • Serve warm with powdered sugar, maple syrup fresh strawberries, or whipped cream (or top with everything!).

Time 9h

Yield 8

Number Of Ingredients 15

8 (2 inch thick) slices French bread
¾ cup shredded mozzarella cheese
4 ounces cream cheese, softened
1 tablespoon ricotta cheese
3 tablespoons apricot jam
2 eggs, lightly beaten
½ cup milk
1 cup cornflakes cereal crumbs
2 tablespoons butter
¼ cup butter
2 tablespoons white sugar
2 teaspoons ground ginger
2 cups sliced fresh peaches
¼ cup confectioners' sugar for dusting
4 tablespoons apricot-flavored syrup, or to taste

Steps:

  • The night before: Split each bread slice four fifths of the way through. Spread the two sides apart so that they look like butterfly wings. Use a fork hollow out a shallow pocket on the inside of each slice. Discard the crumbs; set bread aside.
  • In a medium bowl, mix together the mozzarella, cream cheese and ricotta cheese. Stir in the apricot jam. Spoon 2 tablespoons of cheese mixture into each bread slice. Place slices in a 9x13-inch baking dish. Cover and chill, 8 hours or overnight.
  • The next morning: Preheat oven to 400 degrees F (200 degrees C).
  • Beat together eggs and milk. Dip bread slices into egg mixture and dredge in cornflakes crumbs. Melt 2 tablespoons butter in a large skillet over medium heat; cook bread 2 minutes on each side or until golden. Place in a lightly greased 9x13-inch baking dish.
  • Bake in the preheated oven for 15 minutes.
  • In a medium frying pan or skillet, heat 1/4 cup butter, 2 tablespoons sugar, and ginger over medium heat. Add peaches and cook for 3 minutes.
  • Arrange French toast slices on individual plates. Top each serving evenly with peach slices, sprinkle with powdered sugar. Serve with apricot syrup.

  • Start by making the filling. In the bowl of a mixer fitted with a paddle attachment, stir the cream cheese and granulated sugar until light and fluffy (about 5 minutes). When the cream cheese is nice and fluffy, slice one and a half of your bananas and mix into the cream cheese mixture. Reserve the last banana half for later. Stir in 1/4 teaspoon cinnamon.
  • Next, prep the egg mixture. Beat together the eggs, half-and-half, milk, and another 1/4 teaspoon cinnamon in a shallow dish. Slice your challah from the center into four 1 1/2-inch thick slices. Save the ends for whatever your heart desires! (Or you can eat it by the fistful until it's gone as I usually do...)
  • Divide the cream cheese mixture in half and spread evenly on two slices of challah. Top with the remaining slices of challah so you have two challah cream cheese sandwiches. They will be big, and this is the point when dieters will make horrified faces and close this tab--but for the rest of you, carry on!
  • Quickly roll your first challah sandwich in the egg mixture, being sure to coat the entire thing evenly. Don't let it sit for too long though! We don't want the challah to be soaked through.
