SNOWY MOUNTAIN COOKIES
I was so excited to bake these with my mom after coming home from studying abroad in Germany. They remind me of the Swabian Alps I could see from my room there. Be careful not to overheat the white chocolate; it'll lose that attractive shine. -Stephanie Bouley, North Smithfield, Rhode Island

This recipe came from my MIL been making them for years. Two ways to make them with Marshmallows on top (for the kids) and frosting drizzled over. Or no marshmallows (for adults) and just choc. frosting with coconut sprinkled on top. Either way they are like little cakes.

- Line a cookie sheet with parchment paper or the Silicone Baking Mats to prevent the cookies from sticking.
- In a large heavy saucepan over low heat, add sugar, butter, milk or water, and cocoa powder; stir until melted. Increase heat to medium-high and bring just to a boil, stirring constantly so the mixture does not burn. Remove from heat.
- While mixture is still warm, drop dough by rounded tablespoonfuls onto the prepared baking pans. Let sit until cool and the chocolate is hardened.

- Cream together the butter and sugars for a couple minutes with an electric mixer (or stand mixer) until well combined.
- Now add the cocoa, flour, salt, and baking powder and mix until a dough ball begins to form. You may need to mix by hand a little as this dough is fairly dense. Then stir in the chocolate chips.
- On a baking sheet lined with a baking mat or parchment paper, divide the dough into six balls. Bake at 350°F for 16-18 minutes. If you are aiming for slightly gooey centers, remove right at the 16 minute mark, but if you want them a bit more cooked through, then add on a minute or two. Again, these are inspired by Levain Bakery, which boasts very gooey centers, so I’m not going to tell you the right answer here but… I think you know it in your heart.
