Yield Makes about 1 cup

Number Of Ingredients 4

1/2 small shallot, finely chopped
1 jalapeño, with seeds, finely chopped
2/3 cup doenjang or red miso (fermented soybean paste)
1/3 cup gochujang (Korean hot pepper paste)

Steps:

  • Mix shallot, jalapeño, doenjang, and gochujang in a small bowl, adding water as needed to thin sauce (aim for the consistency of blue cheese dressing). Do ahead: Sauce can be made 5 days ahead. Cover and chill.

  • The Protein: Bulgogi. For this basic bulgogi recipe, cutting the meat into very thin strips allows it to absorb the hot-sweet-salty marinade in minutes, not hours.
  • The Protein: Gochujang Pork Shoulder Steaks. Korean barbecue doesn't have to be steak; Seattle chef Rachel Yang recommends grilling pork shoulder. Keep an eye on the edge of the meat where it touches the grill: When it’s browned, turn the pork over.
