MOM'S CLASSIC REUBEN
My mom has always made this slightly different than the usual Reuben. I typically 'load' it, we don't like skimpy sandwiches. It is a huge hit; my kids, friends and especially my husband loves it!

Steps:
- Spread margarine onto one side of each slice of bread. Set a large skillet over low heat, and lay 6 bread slices in it with the butter side down. If you can't fit 6, just fry in batches of 3.
- Place slices of cheese onto the bread in the skillet and let cook until the cheese starts to melt. Place slices of corned beef and chicken over the cheese, and then sauerkraut. Spread the creamy dressing onto the dry sides of the remaining slices of bread. Place dressing side down onto the sandwiches.
- Increase the heat to medium, and cook until browned on the bottom. Turn sandwiches over, and cook until golden on the other side.

MONTREAL REUBEN SANDWICH
My favorite sandwich is a corned beef Reuben, but finding one in a restaurant that's done to perfection is challenging. The best one I ever had was in Montreal. This comes real close!

Steps:
- Preheat a large skillet or griddle over medium heat.
- Lightly butter one side of each bread slice. Place buttered-sides down on the preheated skillet. Place 1 1/2 pieces of Swiss cheese on top of each bread slice, then spread Thousand Island on top.
- While sandwich halves are toasting, place corned beef on one side of a microwave-safe plate and sauerkraut on the other side. Cover with a dampened paper towel and microwave on high for 90 seconds.
- Remove bread from the skillet. Add hot corned beef and sauerkraut and close to form a sandwich.
- Serve with dill pickle.

Steps:
- Make dipping sauce by combining Thousand Island dressing, German mustard, wine vinegar, 1 teaspoon minced onion, garlic, Worcestershire sauce and hot pepper sauce. Set aside.
- To make rolls:
- Combine corned beef, Swiss cheese, sauerkraut and 1/4 cup onion; mix well.
- Place about 2 tablespoons of the mixture in the center of an egg roll wrapper.
- Roll up as directed on package, sealing edges with a little water.
- Deep-fry rolls in 2 to 3 inches of vegetable oil, heated to 325 to 350 degrees Fahrenheit, until golden brown, about 3 to 4 minutes, turning to brown evenly.
- When done, remove from oil with slotted spoon; drain on paper towels. Serve with dipping sauce.

- Combine onion, celery, peppers and butter in 3-quart saucepan.
- cook over very low heat until softened.
- Add flour; cook a few minutes, stirring occasionally.
- Add bay leaf and stocks; bring to boil.
- Reduce to simmer.
- Cut corned beef into julienne strips; add to soup.
- Add cheese and stir slowly until melted.
- Add sauerkraut, then roux.
- Let simmer 30 minutes.
- Add half-and-half and heat through.
- Remove bay leaf.
- Ladle soup into bowls and top with croutons.

- Melt butter in small saucepan. Blend in flour. Cook until bubbly, then cook another 1 to 2 minutes, stirring.
