Taste and adjust the seasoning with salt, pepper and more hot sauce if needed.

MOTHER'S HOMINY BAKE
I have always been crazy about hominy and I have always been surprised by how many of my fellow Northerners have never heard of it. I grew up with it, even though none of my family is from the South. Any time I can prepare hominy in other ways besides just "out of the can," is a good time. Enjoy! Recipe:...

BAKED HOMINY AND CHEESE
My mother made this casserole when I was growing up, so I know the recipe is an old favorite with many folks. After I married, I made sure this dish was regular fare at our house. It's one of those versatile "go-with-anything" dishes my family loves!"

CHILI HOMINY BAKE
This is an old family favorite I got from an old Better Homes & Gardens Ground Meat Cookbook. It's super easy and was great after working all day and having to feed 3 hungry growing boys. Now grown, they still request this dish. We like to serve with a salad and a pan of cornbread is a must! If you have a cast iron skillet - use it! No need to dirty another dish. Brown the meat per directions, add everything in and slide it into the oven.

- Adjust the oven rack to the center position and preheat the oven to 425°F (220°C). Oil a 9-by-13-inch (23-by-33-cm) baking dish.
- Dump the butter and milk in the saucepan and bring to a boil over medium heat. Quickly whisk in the cold cornstarch mixture and whisk until the milk mixture thickens. Remove the pan from the heat, add 1 cup cheese, and stir until it melts, about 30 seconds. If you prefer a thicker sauce, add more cheese. Then stir in the nutmeg, salt, and pepper. Taste for seasonings and adjust as desired.
- Spoon just enough of the cheese sauce over the bottom of the baking dish to cover it. Then add the rinsed and drained hominy to the dish and pour the remaining cheese sauce over the top. Shake the dish a few times to help the sauce to settle. Sprinkle evenly with the remaining cheese and bake until bubbly and browned, 30 to 40 minutes.
