Steps:
- In a medium-sized bowl, add the flour, baking powder, sugar, salt and ¼ teaspoon cinnamon. Set aside.
- In a small bowl, combine the egg and buttermilk and mix well.
- In a third dish, mix the remaining ⅓ cup sugar and 2 teaspoons of cinnamon and reserve for topping.
- Slice apples into ¼-inch slices. Using a biscuit cutter, remove the cores along with the seeds, leaving ¼-inch-wide rings. Pat the apple rings dry with a paper towel to remove excess moisture.
- Over medium-high heat, heat the vegetable oil in a frying pan to 350 degrees Fahrenheit.
- As the oil heats, combine the flour mixture and the buttermilk mixture together into the batter, mixing well to remove any lumps.
- Dip the apple rings, one at a time, into the batter. Tap apple rings against the side of the bowl to remove any excess batter.
- Gently place the rings in the hot oil and fry in small batches, turning so that they brown on both sides.
- Once the apple rings are golden and crispy, transfer to a paper towel-lined plate to remove excess oil.
- Dip each apple ring into the cinnamon sugar and coat evenly. Place on a wire cooling rack - setting the fried-and-coated rings on a plate will result in soggy apple rings! - and serve warm.
- Cinnamon Sugar Topping.
- - ⅓ cup sugar.
- - 2 teaspoons cinnamon.

GLAZED APPLE CINNAMON RING
A favorite quick and easy breakfast dish. The intoxicating smell of baking cinnamon rolls and roasting apples will have you standing around the oven drooling as you peek through the oven window. This recipe originally started from the Pampered Chef recipe "Apple Nut Ring", but over the years was evolved into a wonderfully amazing breakfast oozing with sweet frosting, plump raisins, pecans, and roasted apples. These are phenomenal served warm with a large glass of milk. Adapted from Sweet Peas Kitchen and she barely adapted it from Pampered Chef. Enjoy!

RED CINNAMON APPLE RINGS
Grammy used to bring these over every Christmas morning. We were supposed to eat them with the goose, ham, or whatever meat we were having, but they hardly ever made it that long.

CINNAMON APPLE RINGS RECIPE – EVERYDAY DISHES
From everydaydishes.com
- Fill a medium-sized bowl half-full of cold water and squeeze the juice of ½ of a lemon into the water. Slice the apples horizontally into ¼" to ⅜" rounds. (The thicker the slice, the more firm the apple will be after it is cooked.) You may choose to peel the apples before slicing if you want to remove the skin, but it is not necessary. Use a small round cookie cutter or paring knife to remove the core out of each slice and immediately submerge the apples in the lemon water. Repeat until all of the apples have been sliced.
- In a separate medium-sized bowl, whisk together the flour, baking powder and salt. Pour in the beaten egg and apple cider and stir just until combined. It is okay if a few lumps remain. Set the batter aside and stir together the sugar and cinnamon in a separate small bowl.
- Place a large pot over medium heat and add 1½"–2" of oil. Place a cooking thermometer into the oil and heat to 350 degrees. At this point, you will also want to line a tray or baking sheet with paper towels to drain the slices after they are removed from the oil.
- Once the oil has reached the correct temperature, remove several slices of apple from the water and blot completely dry with paper towels. Dip each slice into the batter and tap lightly on the side of the bowl to remove any excess. Carefully slide the apple slice into the oil and repeat with as many slices as will fit in a single layer. (Do not overcrowd the oil or the temperature will drop, leaving you with greasy apple slices.)
