¼ cup applesauce
1 cup brown sugar
⅓ cup white sugar
2 eggs
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
3 cups rolled oats
½ cup raisins
½ cup chopped walnuts
½ cup semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, cream together the butter, applesauce, brown sugar, and white sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla. Combine the flour, salt, and baking soda, then gradually stir into the creamed mixture. Finally, stir in the oats, raisins, nuts and chocolate chips.
  • Drop by rounded spoonfuls onto the prepared cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Don't use instant oats (you'll lose the nice, chewy quality of the oats) or blackstrap molasses (which is too strong) in this recipe.
Ingredients
COOKIES
1 3/4 cups (8 3/4 ounces) all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon salt
1/2 teaspoon ground ginger
8 tablespoons vegetable shortening
1 1/4 cups (8 3/4 ounces) granulated sugar
2 large eggs
1/3 cup molasses
1 teaspoon vanilla extract
2 cups (6 ounces) old-fashioned rolled oats
1 cup raisins
2/3 cup walnuts or pecans, chopped
GLAZE
1/2 cup (2 ounces) confectioners' sugar
2 teaspoons milk
1/2 teaspoon vanilla extract

Steps:

  • 1. FOR THE COOKIES: Adjust oven racks to upper-middle and lower-middle positions and heat oven to 350 degrees. Line 2 baking sheets with parchment paper. Combine flour, baking soda, salt, cinnamon, and ginger in bowl; set aside. Using stand mixer fitted with paddle, beat shortening and sugar on medium-high speed until pale and fluffy, about 3 minutes. Add eggs, one at a time, and beat until combined. Add molasses and vanilla and beat until incorporated. Reduce speed to low, add flour mixture in 3 additions, and mix until just combined, scraping down bowl as needed. Add oats, raisins, and walnuts, and oats and mix until incorporated. 2. Form dough into four 9 by 2-inch logs and place 3 inches apart on prepared baking sheets. Bake until lightly browned and just set, 16 to 19 minutes, switching and rotating sheets halfway through baking. Let cool on sheets for 5 minutes. Slide parchment onto cutting board and, using sharp knife, cut logs crosswise into 1½-inch-thick bars. Let cool completely, about 30 minutes. 3. FOR THE GLAZE: Whisk sugar, milk, and vanilla all ingredients together in bowl until smooth. Drizzle glaze over cookies and let sit for 15 minutes to firm. Serve. Steps:

  • Whisk the flour, apple pie spice, baking powder, baking soda and salt in a medium bowl; set aside. Beat the butter, brown sugar and granulated sugar in a large bowl with a mixer on medium speed until light and fluffy, about 3 minutes. Reduce the mixer speed to low; beat in the eggs one at a time, then beat in the vanilla. Add the flour mixture and beat until just incorporated. Stir in the oats and cranberries with a wooden spoon. Cover with plastic wrap and refrigerate until firm, at least 1 hour or overnight.
  • Position racks in the upper and lower thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Form the dough into 2-inch balls and arrange 2 inches apart on the prepared baking sheets; press with a spatula to flatten. 1/2 tsp. baking soda
1/4 tsp. salt
1 cup quick oats
1 cup packed brown sugar
1/2 cup sugar
1 cup butter (softened)
2 Tbsp. honey
2 tsp. vanilla extract
2 large eggs
1 1/2 cups diced Sunsweet Dates
1/2 cup pecans (chopped)

Steps:

  • Preheat oven to 300ºF.
  • In a medium bowl, combine flour, soda, salt and oats. Mix with a wire whisk and set aside.
  • In an electric mixer bowl, combine sugars and mix to combine. Add in butter and blend until a creamy, grainy paste.
  • Scrape down sides of bowl then add honey, vanilla and eggs. Mix at medium speed until light and fluffy.
  • Add the flour mixture, dates and pecans and blend at low speed until just combined. Don't overmix!
  • Drop by rounded tablespoons onto ungreased cookie sheets. Bake for 18-22 minutes or until cookies are light golden brown. Immediately transfer cookies with a spatula to a cooling rack. Eat and enjoy!

  • 2. In a small bowl, whisk together the eggs, milk and vanilla.
  • 3. In the bowl of a mixer, using a paddle attachment, combine the room temperature butter with the sugars. Beat on medium speed until mixture is light and fluffy.
  • 4. Set the mixer to low speed, and gradually add egg mixture to the sugar mixture- beat well.
  • 5. Add flour mixture- beat just until combined.
  • 6. Remove bowl. Stir in the oats and cranberries.

  • 9. Shape pieces of dough into 2-tablespoon balls and place 3 inches apart on sheets.
  • 10. Press with the bottom of a glass to flatten dough into 2-inch-diameter.
  • 11. Bake until golden but still soft in center, 16 to 18 minutes, turning sheets halfway through for even baking.
  • 12. Remove from oven; transfer with parchment to a wire rack to cool. Store in airtight container at room temperature for up to 1 week.
