MOTHER WOLFF SOUP

Mother Wolff Soup image

This comes from Sundays at The Moosewood Restaurant. It sounds like the ultimate comfort food! Times are a guess as I have no made this yet. I am waiting for cold weather! My estimate does not include time to soak beans. This soup takes time to cook so wait till a day when you will be home for several hours.

Provided by TXOLDHAM

Categories     Vegetable

Time 3h10m

Yield 8-10 serving(s)

Number Of Ingredients 17

4 quarts water
1/2 cup dried lima beans, soaked overnight in water to cover or 1/2 cup dried lima beans, brought to a boil and then soaked for 1 hour
1/2 cup uncooked rice or 1 cup cooked rice
1/2 cup barley
3 -4 garlic cloves, minced
1 tablespoon dill weed
1 bay leaf
1 cup celery, chopped
2 tablespoons vegetable oil
1 tablespoon sweet Hungarian paprika
1 cup potato, diced
1 cup sweet potatoes, diced sliced or 1 cup carrot, sliced
1/2 teaspoon salt
ground black pepper
1 cup green beans (fresh or frozen)
tomato sauce
1/4 cup parsley, chopped (optional)

Steps:

  • In a large pot, combine the first 8 ingredients and bring to a boil. Lower heat, cover and simmer for 1-1/2 hours, adding more water if needed as the barley, uncooked rice and beans absorb water.
  • In a large skillet, saute the onions and celery in the oil for a few minutes. Add the paprika. Add the potatoes, sweet potatoes or carrots, salt and pepper. Cover and cook for a few minutes, stirring often. Add the green beans and continue to simmer, covered, until vegetables are just tender. Set them aside.
  • Remove the bay leaf from the soup. Add the sauteed vegetables, the tomatoes, parsley (if using) and more salt and pepper to taste.
  • Simmer covered, on very low heat for 1-1/2 to 2 hours, stirring occasionally.
  • Ladle out generous servings and enjoy!

Categories     Cream of Mushroom Soup

Time 1h

Yield 6

Number Of Ingredients 14

5 tablespoons butter
1 pound fresh morel mushrooms, sliced into 1/2-inch pieces
6 cloves garlic, minced
1 medium onion, diced
2 teaspoons dried thyme
2 teaspoons dried parsley
½ cup moscato wine
½ cup all-purpose flour

MY MOTHER'S BETTER-THAN-TAKEOUT WONTON SOUP

My Mother's Better-Than-Takeout Wonton Soup image

This was a comfort food growing up. I can remember sitting around the table with my siblings hand-making the little dumplings. Now I make them with my kiddos. :) You can freeze the dumplings too by placing them in a single layer on a parchment lined baking sheet, then place that in the freezer over night. Bag them up depending on an individual portion size (6-8 dumplings per person...usually LOL). Then all you have to do is bring your stock to a boil, empty your pre portioned baggie in, boil for 6-8 minutes and you have yourself some fast, better-than-takeout, wonton soup! You can also pan-fry or steam these to make dumplings :)

Provided by MixnVixn

Categories     < 4 Hours

Time 1h20m

Yield 40-50 wontons

Number Of Ingredients 20

1 lb ground turkey
1 (12 ounce) package wonton wrappers, square
1 bunch green onion, whites included, chopped into rounds (reserve some for topping)
2 garlic cloves, finely minced
2 tablespoons ginger, grated (I don't bother removing the skin)
1 large carrot, finely minced
1 celery, finely minced
3 tablespoons low sodium soy sauce
3 tablespoons teriyaki sauce
sea salt
cracked black pepper
garlic salt
1 egg, beaten
1 tablespoon water
2 (23 ounce) cans chicken stock (or homemade)
2 tablespoons soy sauce
2 tablespoons teriyaki sauce
1/2 inch piece gingerroot, smashed
2 tablespoons green onions, whites included, chopped into rounds
sesame oil (for drizzling on individual serving of soup)

Steps:

  • Start by adding all the dumpling ingredients into a bowl. Be sure to reserve some of the green onions for the stock and topping for finished soup.
  • Making dumplings following the folding directions on wrap package. Use the beaten egg and tbsp of water to as an egg wash to seal the edges. Place dumplings on a plate or baking sheet lined with parchment paper and cover with damp paper towel until ready to cook.
  • Combine all stock ingredients in a large stock pot and bring to a boil.
  • Gently drop in desired amount of dumplings per person (usually 6-8 per person -- usually). Cook for 6 - 8 min or until they all are floating.
  • Ladle dumplings and some stock into a bowl. Top with a drizzle of sesame oil and finish with some reserved green onion.
  • Enjoy!

MOTHER HUBBARD'S SOUP

Mother Hubbard's Soup image

Obviously, her cupboard is NOT bare, but if you do find a bone, the dog can have it because you won't need it for this. It can be reminiscent of Italian or Mexican food, if you're in that mood, or not, if you're not. It will serve at least four, probably a lot more, depending on what you throw in. And most of the preparation is opening cans, while the pasta is cooking. As a bonus, if you find a really good combination, you can name it and share it.

Provided by Nancy Jo

Categories     < 30 Mins

Time 30m

Yield 4-6 serving(s)

Number Of Ingredients 11

2 (16 ounce) cans vegetables (At least two of the following - the more the merrier - beans - any kind; corn - whole kernel, NOT cr)
1/4 lb sausage (including hot dogs or canned sausages) or 1/4 lb bacon (or a combination of two or more, cut into bite-sized pieces)
1 (16 ounce) can tomato sauce (or tomato soup, tomato puree or juice, pizza sauce, pasta sauce)
1/4 lb pasta (more or less, any kind you have on hand, If spaghetti, break into one-inch pieces)
2 cans broth (beef, chicken, vegetable, or 1 can broth and 1 can water or 1 qt water)
garlic salt or minced garlic
italian seasoning (or chili powder and cumin, to taste)
salt and pepper
sliced zucchini or summer squash (optional)
chopped bell pepper (optional)
onion (optional)

Steps:

  • Amounts aren't critical.
  • Avoid broccoli and cauliflower; they're too strong-tasting.
  • Save them for a soup all their own.
  • Cook pasta in either water or broth.
  • If you are using only water, drain.
  • DO NOT drain if you use broth.
  • Any vegetables that aren't precooked should be thrown in with the pasta while it's cooking.
  • Add pre-cooked vegetables, meat and tomato sauce.
  • If not"soupy" enough, add more broth or water.
  • Add seasonings and salt and pepper to taste.
  • If you use pizza or pasta sauce or one of the newer flavored tomato sauces, be sure to taste before adding additional seasoning.
  • Simmer about 15 minutes.

MOTHER B'S POTATO SOUP

Mother B's Potato Soup image

This recipe was given to me by a very sweet lady who happened to be the mother of an old boyfriend. This is the best potato soup I have ever eaten and everyone I've served it to loves it. My kids beg me to make this for dinner.

Yield 10 serving(s)

Number Of Ingredients 13

3 stalks celery (chop leaves)
3 medium onions
2 medium carrots, grated fine

1 dash pepper
1 lb smoked sausage

  • Add potatoes.
  • Add enough water to cover potatoes.
  • Add the parsley, sweet basil, and salt.
  • Cook over med. heat until potatoes are done.
  • In a separate pot, melt the margarine.
